Background : 1. This is a topic that we are
interested in. 2. Food and culture cannot be apart 3. Confucius once said in The Book of Rites, “Appetite for food and sex is nature.”
Problem:
There are differences in attitude and point of view toward food-culture between Taiwan and the western countries.
Purpose of the Study:
We attempted to understand how people from the western countries
feel about Taiwanese food and the food in their countries.
Research Questions:
1. What are the differences in diet habits
between Taiwan and the western countries?
2. What are the differences in food- culture between Taiwan and the western countries?
The Concept of the Diet: 1. Jiang (2007) mentioned that the concept of the diet in the western countries is rational. 2. In Taiwan, food usually contains significant levels of biologically active components which boosts a person’s physical and physiological well-being (Dang, 1999).
The Choices of the Foodstuffs:
1. According to Jiang (2007),the foodstuffs westerners choose are animals and saltwater fish. 2. In Taiwan, the foodstuffs are vegetation, freshwater fish, and sometimes animals (Wan, 2007).
The Dietary Method:
1. Jiang (2007) illustrated that in the west,
the host or guests order the meal for themselves. 2. Yi (2006) investigated that in Taiwan, the dishes are placed on the table and everybody shares.
The Table Manner: 1. In the western countries, when having a conversation in a meal, people only talk to the person besides them (Wan, 2007). 2. In Taiwan, people do not stick the chopsticks upright in the rice bowl. Instead, lay them on the dish or plate (Jiang, 2007).
The Effect of the Diet Habit:
1. Hofstede (1991) said that Taiwan and China are collective subjects, with the characteristics of “group orientation.” 2. According to Hofstede (1994), in individualist societies, a child learns very early to think of itself.

changes of the time, some traditions may no longer exist or might be influenced by other cultures.
By analyzing the diet habits between
Taiwan and the western countries, researchers hope to assist people in understanding the food-culture difference and in adapting others’ cultures deliberately in this global society.
