    This mild French Blue is perfectly boxed for retail sales, It's tempered flavour

    and it's melting paste will please everyone.

    Blue veins are a cultured mould originating from Rye bread (Penicillium glaucum) and it was Roussel that

    developed the now common method of needling the curd. These days the needling process is carried out

    mechanically. Bleu d' Auvergne is controlled by an "Appellation d' Origine Controlee" issued in 1975 which

    assures it's authenticity to the original cheese produced only in the region. The flavour is full, strong and pungent

    but with less salt than that of Roqueforte. The pate is buttery and moist.

    Cheeses

    NEW! Blue Brie by Coeur de Lion. A Double Cream cheese as good, if not better than

    any European Blue Brie you may have eaten before. You'll need to try it if you don't

    believe us. This will quickly become the new favourite with you and your clients. This

    cheese ships fresh. A soft, bloomy, white rind with a pleasant, soft and mild centre which

    will benefit from age.

    Cashel Blue is the creation of Louis and Jane Grubb, in County Tipperary Ireland. A glut of milk in the 1970's led many

    dairy farmers in Ireland to re-think their future in the industry. For the Grubbs, their decisions was to make the first blue

    cheese in Ireland. After two years of experimenting, the first commercial production of Cashel Blue was made. Louis and

    Jane produced their own milk for Cashel blue from a milking heard of Holstein Friesian dairy cows, and Louis is meticulous

    in his selection of pedigree cows to obtain the highest quality milk possible. In the first 3-4 months of ageing it is quiet mild,

    but very likeable because it is creamy and not overly salty. With age the complexity of flavour develops and becomes

    sharper and infact this cheese will eat well up to six months of age.

    Crozier Blue is a delicious, creamy sheep milk blue with a good balance of earthy sheep

    milk flavour, and savory blue cheese bite. It has a good salt balance and as with all good

    cheese, matures well with age to develop long palate flavours.

    The original Blue Brie - first produced near Bresse in France in 1951. Blue de Bresse is a small mild cheese made

    with Cows milk. The rind should be white and the centre will have patches of blue and a soft pate.

    Bougon cheeses are produced according to authentic and typical methods resulting

    from their rural origins. Bougon Sainte-Maure is a typical goat's milk cheese which

    reveals characteristic country aromas under its thin white rind. It will be particularly

    appreciated by people new to Goats milk chvre

    If you're wondering why we have two Coulommiers, the answer is simple. They

    are both very good, and they are both a bit different. Whilst the Le Rustique

    Coulommiers is excellent, the Coeur de Lion Coulommiers has a milder

    flavour and slightly less pungent bouquet. This to is an excellent product.

    Coulommiers (pron: KOO-lom-YAY) has a close association with Brie. The

    cheese is around 350 gm and because of its size, possesses a sweeter,

    nuttier flavour than Brie. Because of the convenient size, Coulommiers is

    traditionally sold in the box. Le Rustique Coulommiers is superbly presented in

    a traditional wooden box and their signature gingham cloth.

    Chavroux is a French cheese made near Cognac in France from pure goat's milk. Known

    for its digestive and nutritional qualities, goat's milk gives Chavroux all its mildness and

    its fresh taste. A light and delicate cheese enjoyed by all the family. Its small format is

    ideal for catering and delicious snacks. Serve on a slice of bread with Mediterranean

    flavours: garlic bread, sliced tomato, basil and olive oil

    St Andre is the classic French triple cream. Made from Cows milk, the fat content is

    around 75%. Traditionally, St Andre is manufactured in Coutances near Normandy in

    France. The texture can be buttery to soft and the rind should be bloomey with a tang.

    The shape and size of the St Andre make it unique and the cheese compliments beer

    well. St Andre has a short shelf life and should be consumed with much enthusiasm

    quickly & regularly.

    In 1953, Henri Boursault released this superb, soft ripened, Triple Cream (70 75%)

    Cheese. Boursault (pron: Boor-soh) is produced in the Loire Valley of France and is

    one of the most popular Triple Creams in France today. The flavour is rich and lush

    while the texture is creamy. The light rind (penicillium camemberti) can take on a

    slightly pinkish hue with age

    This cheese, born in Coutances in the region of the Mont St Michel, in Normandy,

    reflecting the lush sea side pastures. Le Coutances is a rustic soft-ripened cheese with

    Marzano Tomatoes known as the "Agro Nocerino". However, La Bella San Marzano Tomatoes don't

    carry the D.O.P certification. Adhering the globally recognised BRC standard which some believe to

    be a higher standard than D.O.P., the Rapheal Viscardi company processes and packs tomatoes

    without the Certified D.O.P. price tag. For sauces and pizza, tomatoes from the San Marzano region

    are regarded as the best. As Italian Tomatoes go, the quality and value of this San Marzano Tomato

    is fantastic

    This is the 'plum tomato par excellence" and one of the main originators of the success of the

    Mediterranean diet. It is talked about all over the world; it is more and more sought after by the

    United States and Japanese markets and even North European countries have already welcomed it

    with open arms. It is the San Marzano tomato, one of the jewels in Campania's crown and of the

    whole tomato section in general. The story goes that the first seed of the San Marzano tomato came

    to Campania in 1770, as a gift from the Kingdom of Peru to the Kingdom of Naples, and that it was

    planted in the area that corresponds to the present commune of San Marzano.
