What are mustikkapiirakka? Mustikkapiirakka (prounounced “moo-stee-kah-PEA-racka”) is a traditional Finnish blueberry pie. In the months of June and July, the entire country of Finland is cloaked in blueberries that grow wild. It's almost alarming, if you’ve never seen it before! This traditional custard pie celebrates the seasonal bounty of blueberries. It is also quite common in Finland to eat blueberries soaked in milk, especially when they're in season. Mustikkapiirakka is made by creating a sugar cookie like crust and filing it with a simple custard that is packed with blueberries and then baked until set.

The surprise ingredient: Blueberries! ★ Blueberries are one of the only natural foods that are truly blue in color. As such, blueberries

were used by Native Americans to make dye for textiles and baskets. Early colonists made gray paint out of blueberries by boiling them in milk.

★ Native Americans once called blueberries “star berries” because the five points of blueberry blossoms make a star shape.

★ Blueberries contain more antioxidants than most other fruits or vegetables and may help prevent damage caused by cancer, heart disease, and Alzheimer’s. The anthocyanin present in blueberries is good for eyesight.

★ The pale, powder-like protective coating on the skin of blueberries is called “bloom”.

★ The blueberry industry of North America ships over 500 metric tons of fresh blueberries to Japan each year and over 100 metric tons to Iceland. The annual harvest of North American blueberries would cover a four lane highway from Chicago to New York if spread out in a single layer.

★ Minnesota claims the blueberry muffin as its official state muffin and New Jersey claims the berry as its official state fruit.
