BRATWURST AND ONION PIZZA TOTAL: 30 MIN - 6 SERVINGS
1 thin pizza crust (store-bought or homemade)
3 tbsp. olive oil
2 Schnucks bratwursts, cooked and finely chopped and crumbled
½ red onion, finely sliced
2 tbsp. butter
Fresh arugula
Green olives
Shredded mozzarella or crumbles of feta cheese
Crushed red pepper to taste
Salt and pepper to taste
1. Preheat oven to 400°F. Drizzle olive
oil over the crust, and then distribute the
toppings, cheese on top.
2. Add crushed red pepper, salt and
pepper to taste.
3. Place pizza on a baking sheet, and bake
for 12 to 15 minutes or until the cheese is
melted and starts to brown on the edges.
CARAMELIZED ONIONSTo caramelize the onions for your pizza, melt butter in a
pan and add the onion slices. Cook on medium heat,
stirring every few minutes until the onions are
translucent and brown.

fixin’s. Luckily the goodness doesn’t have to stop there. Bring your brats inside for an outdoorsy
spin on pizzas, pastas and salads.
BRATWURST VEGGIE GRILL TOTAL: 40 MIN - 6 SERVINGS
1 12x14-inch sheet of foil
2 tbsp. olive oil, divided
1 lb. baby red potatoes, chopped
2 Schnucks bratwursts, precooked and sliced or chopped
1 lb. brussels sprouts, halved or quartered
1 yellow pepper, sliced
1 cup chopped carrots
½ cup walnuts, coarsely chopped
2 tbsp. fresh thyme
2 tsp. balsamic vinegar
Coarse salt and freshly ground pepper to taste
1. Spread foil on your kitchen surface.
2. Drizzle 1 tbsp. olive oil on the foil.
3. Spread potato chunks, Schnucks
bratwursts, brussels sprouts, yellow pepper,
carrots and walnuts on the foil.
4. Drizzle with remaining olive oil, thyme
and balsamic vinegar. Season with salt and
pepper to taste.
5. Wrap foil around the mixture and place on
a hot grill. Roast for 25-30 minutes.
MAC BRAT SALAD TOTAL: 45 MIN - 6 SERVINGS
DRESSING
2 tsp. Dijon mustard
½ cup mayonnaise
½ cup plain yogurt
2 tsp. honey
1 tsp. white wine vinegar
Minced garlic to taste
SALAD
3 cups cooked macaroni
2 Schnucks bratwursts, sliced
¾ cup celery
1 cup carrots, chopped
1 tbsp. fresh parsley
1 cup chopped red pepper
¼ cup chopped red onion
½ cup chopped radish
2 hard-boiled eggs, sliced
Salt and pepper to taste
1. Stir dressing ingredients together.
2. Mix all salad ingredients in a serving bowl.
3. Pour dressing over macaroni mixture.
Sprinkle with salt and pepper to taste.

and cucumber slices. Pour
over ice, and garnish with
additional cucumber.

1 part dry red wine
Fresh berries for garnish
Place ice and citrus in a pitcher, and
pour lime juice and orange soda over
them. Top with red wine. For a sunset
effect, do not stir prior to serving.
Garnish with a mix of citrus slices
and berries.
STRAWBERRY GIN SMASH1 part gin
1/4 part lime juice
1 pound strawberries, hulled and sliced (set some aside for garnish)
Sugar to taste
2 parts club soda
Fresh mint sprigs for garnish
Mix gin, lime juice, strawberries and sugar.
Add club soda, then pour into glasses over
ice. Garnish with mint and strawberries.
MARGARITA CLÁSICO1 part orange liqueur
1 part tequila
1/2 part freshly squeezed lime juice
Sugar to taste
Kosher salt
Lime wedges for garnish
Combine orange liqueur, tequila, lime
juice and sugar in a pitcher. Stir until
sugar is dissolved. Chill mixture until
ready to serve. Salt rims, fill glasses with
ice, pour, garnish and serve.
SPIKED SWEET TEA2 parts strong brewed black tea, chilled
1 part rum
1/2 part cane syrup
1/4 part lemon juice
Lemon wedges
Basil sprigs
Combine tea, ice, rum, cane syrup
and lemon juice in a pitcher. Stir well
and pour over ice. Garnish with lemon
wedges and basil sprigs.

Sugar to taste

1 part white rum
2 parts sparkling lemon water
Muddle mint, berries and sugar in pitcher.

A locally grown cantaloupe sourced at the height of its season is the perfect shade of summer orange. Add a salty cured meat and aromatic cheese to enhance the natural sweetness of the fruit.

PEACHY MELON WITH TOMATOES
Half of a small local watermelon, cut into thin triangles
2 tomatoes, sliced
1 local peach, cut into wedges
1 tsp. balsamic glaze
Salt and black pepper to taste
Basil leaves (for garnish)
Arrange fruits on plate, and
drizzle balsamic glaze on top.
Season to taste with salt and
pepper, and garnish with basil
leaves. Serve immediately.

1 cup yogurt, vanilla or plain
4 tbsp. powdered sugar
½ cup fresh raspberries
½ cup fresh blueberries
5 strawberries, sliced
1. Whisk together milk, yogurt and
powdered sugar. Set aside.
2. Place fruit in bottom of ice-pop mold.
Carefully pour milk mixture over fruit.
Freeze for 6-8 hours.

1 lb. strawberries
6 tbsp. powdered sugar, divided
1 15-oz. can coconut milk, shaken
1 tsp. vanilla
½ cup sweetened shredded coconut
1. Blend strawberries in blender or food
processor with 3 tbsp. powdered sugar.
2. In a small bowl, stir together coconut
milk, 3 tbsp. powdered sugar and vanilla.
Stir the coconut into the milk mixture.
3. Layer the strawberry mixture and the
coconut milk mixture into ice-pop molds.
Freeze for at least 6 hours before serving.
BLACKBERRY-LEMON ICE POPS
1 cup fresh blackberries
Fresh mint leaves
2 cups lemonade
1. Layer blackberries and mint leaves in
ice-pop molds.
2. Pour lemonade over the top. Freeze at
least 6 hours.

¼ cup sugar
¼ cup honey
5 cups fresh or frozen blueberries, rinsed, stems removed and discarded
1 tbsp. lemon juice
1 tsp. lemon zest
Pinch salt
Fresh blueberries
1. In a blender, purée sugar,
honey, blueberries, lemon juice,
lemon zest and salt.
2. Strain seeds and skin.
3. Cover and chill sorbet
mixture at least 30 minutes
and up to overnight.
4. Freeze in an ice cream
maker according to
manufacturer’s instructions.
Transfer to a freezer-safe dish,
cover and freeze until hard.
