Changing dining habits are impacting traditional breakfast, lunch,

and dinner dayparts. Consumers want their meals and snacks

when and where it's convenient. They want options that meet

their dining and social needs as well, such as late-night options

Sharing Plates & SnackingSnacks mean different things to different segments, but full-service snacks—light, not fi lling, served in modest, easy-to-pass and share portions—are a relatively new category. They can help create market differentiation and the opportunity for guests to sample more fl avours throughout their dining experience. These snacks are not meant to fi ll diners up, so keep the portions—and the price point—modest.

Here are some top opportunities:

::���Popcorn,�fried�nuts,�freshly�made potato chips

:: Deviled eggs, especially with unique and/or upscale fi llings

:: Olives, served cold or warm, with bumped-up fl avour from citrus zest, roasted garlic, chopped herbs, honey, or bits of grilled sausage or salami

Afternoon snackingOutside of breakfast, the afternoon snack has been the top-growing daypart in Canadian foodservice. Quick service restaurants are behind this growth by providing “snackable” options that consumers can eat on the run. The “grab-’n’-go” options aren’t relegated to just food. Beverages, such as iced or slushed coffees and smoothies, are among the top growing items in foodservice, which refl ects another occasion where operators have been able to succeed in providing premium-styled offerings.

The fastest-growing snacks are smoothies, which meet the key criteria for snacking: they taste indulgent, are quick and portable to consume, and can hit that $3-$4 sweet spot as an affordable indulgence. The good-for-you aura of smoothies is a guilt-free bonus.

Menu items for a snacking strategy can easily borrow from the core menu. Sandwiches, fries, and burgers all rank among the top snack items. Mini sandwiches and wraps have evolved as smaller versions of signature full-sized offerings, often with a simple twist like a different condiment to add appeal.

Redefining AppetizersRestaurants are now, more than ever, places to socialize. That’s one reason appetizers and shared plates are so popular. They’re fun, they’re inexpensive, they go great with a beer, glass of wine, or cocktail.

By now, the word appetizer may seem redundant, but there is still room for traditional appetizers. Ask yourself: What sets your operation apart from the competition? Little surprises within a familiar package are what appeal to diners; offer items that are familiar but not found elsewhere.

Increase the Life of Your ShorteningWithout careful attention to heat, air, moisture, and seasonings, you could reduce the frying life of your shortening. Here�are�some�tips�for�extending�the�life�of your shortening:

Constantly• Skim floating particles – To prevent oil

deterioration.• Observe fryer oil quality – Filter or

replace as required.• Turn down fryers when slow – To

extend fry life.• Turn on 15 minutes prior to initial use

– To prevent oil deterioration.

Daily• Check fryer oil temperature with

thermometer – Don’t trust the accuracy of the fryer’s thermostat.

• Ensure fryer is filled up to fill line – For optimal frying.

• Filter oil and flush fryer – Filter oil via filter once or twice per day.

• Cover fryer overnight and when not in use – Light/oxygen deteriorate oil.

Weekly• Thoroughly clean and boil out fryer

with cleaning agent – For optimal fryer and oil performance.

• Inspect fryer hood/vent for grease drips – Thoroughly clean if necessary.

Preparation InstructionsIn a mixing bowl, combine the lime zest, lime juice, chipotle powder and olive�oil.�Add�the�shrimp�to�the�mixture�and�coat�evenly.�Preheat�grill�on high or, if using oven, 230ºC (450ºF). Preparation InstructionsGently�blanch�the�coleslaw�to�soften,�then�refresh�in�ice�water.�Dry�very�well. Mix together with beaten eggs, pancake and Masala Tandoori powder. Preparation InstructionsRehydrate the gelatine leaves with cold water. Combine the cream and milk in a saucepan and bring to a boil. Add the goat cheese in small batches. Once the goat cheese melts, strain and pour back into the saucepan. Add the gelatine and reheat for about one minute. Remove from heat and pour mixture into serving dish and refrigerate. When ready to serve, garnish with tomato and mango tartare. Season with salt and pepper.
