his issue marks the first birthday of 76092. Nature, art and culture, fine dining and the latest ideas

for outdoor living are just a few themes explored this time around. The Bob Jones Nature Center, which celebrates its five-year anniversary in April, is a historic gem savored by hikers, birders, photographers and those who want to learn more about the Center’s illustrious past. Early Spring Arts

Conservatory, just behind Dragon Stadium, helps young aspiring dancers learn the art of movement through classic ballet, contemporary and theatrical dance styles. The company gives back to the community, too, taking certain performances to area hospitals and other nearby venues. Warmer weather also signals the onset of more outdoor living and dining, and we visit the home of a German family that relishes gardening and entertaining. The couple, with their young son, set down roots in Southlake six years ago, bringing a sense of European

elegance and simplicity to their backyard pool area. The homeowner also happens to be vice president of community outreach for the Southlake Women’s Club, which organizes Art in the Square. On the last weekend in April, Town Square will transform into a bustling street fair for the event, which offers a varied cultural experience and has been ranked among the top 10 Fine Arts Festivals in the nation by The Art Fair Sourcebook. This year more than 150 artists will set up booths. We also offer a glimpse inside newly opened Bonefish Grill. Other restaurants and talented chefs continue to make their way to Southlake. We explore a few openings, with more to come. Please join us as we embark on our second year.

on the townThis spring brings a fresh blend of restaurants (and shops) to the table.

Snappy SaladsFounder Chris Dahlander brings his Dallas-based concept to Southlake with the opening of its fifth location. Snappy Salads, founded in 2006, emphasizes sustainability in its decor, and this local restaurant features wood salvaged from a Lexington, Ky., tobacco warehouse for its tables, paneling and light boxes. “The Southlake location will continue to support our fundamental belief that we need to be good stewards of our planet,” says Dahlander. “Our counter tops will be made from recycled porcelain, beer and wine bottles; the lights in the dining area will run on less than 300 watts of electricity; and we’ll use low-VOC paint on the walls. All of our cups, takeout containers and utensils are biodegradable and made from annually renewable resources. There is more to this story, but quite honestly, it is more important for me that each and every guest have such a great dining experience that they want to come back again tomorrow. Being environmentally friendly is just who we are.” The menu in Southlake will be expanded to include a few more hot protein options such as crab cakes, sautéed scallops and flatbreads while continuing to focus on entree salads, in keeping with Dahlander’s quest to “change the way men think about salads.” He notes, “Every menu decision I make is filtered on the question, ‘Will it appeal to men?’” Beer and wine will be offered — best consumed in glasses made from recycled beer and wine bottles.2175 E. Mama’s PizzaAccording to Mark Stoecker, owner of the new Southlake location, the restaurant’s appeal is all about the crust. “That’s our biggest draw,” he says of the thick crust with garlic butter, made fresh daily. The menu has been fine-tuned to include thin-crust and gluten-free options, and a BBQ Chicken pizza joins the list of pizzas that are available in five sizes. Jordan Scott, owner/ceo/president of Mama’s Pizza/FCF Restaurants, adds, “Our crust is something different from any other pizza places. We do use top-of-the line ingredients. Our sauce is made with fresh tomatoes, and our cheese is 100 percent real cheese. We’ve got a really good spot here. April 2013 marks the five-year anniversary of the Bob Jones Nature Center and Preserve. Classes and ongoing programs are designed for children of all ages, home-schooling families and scouting groups. Camp Summer Oaks (a Southlake institution started 27 years ago by longtime resident Rosemary Hutchins) offers programs for children ages 3 to 10. Registration begins May 7 and fills up fast.

Offerings for adults include composting workshops, photography classes and birding hikes led by area naturalist Ray Chancellor, president of the Southlake Ornithological Society. Members of the Tarrant County Master Gardener Association created and continue to maintain the native landscaping and heirloom plants around the visitor center, and plans are under way for a gardening speaker series.

of 180 acres adjacent to the soccer and softball fields in Bob Jones Park at the north end of North White Chapel Boulevard.

At one time, Bob Jones (and later his descendants) owned all this land, plus many more acres that today sit under Grapevine Lake. In the 1960s, Marilyn and Gene Tucker bought 60 acres from a Jones descendant: “Just briars and woods,” as Marilyn Tucker describes it. “You couldn’t walk through it.”

The couple pulled fencerows, cleared trees and built a home. When it came time to sell their land some 30 years later, Marilyn swore it would never be to a developer. “I knew I could get more money for it,” she says, “but that place had so much of us in it. I didn’t want it to be developed. We wanted the land to be loved.”

With the stipulation that it be kept intact, the city of Southlake purchased the Tucker property in 1999. But it would take a decade of hard work by many passionate volunteers, most

notably the center’s first director, Emily Galpin, before the doors to the nature center opened in 2008.

The entrance off East Bob Jones Road is an easy one to miss — the sandstone sign sits low in front of a simple gate. A winding driveway takes the visitor past open prairie grassland that blooms full color with Texas wildflowers in the spring. At the top of a rise, under old oak canopies, is the visitor center. It’s the remodeled Tucker house.

The new director, Teresa Moss, commutes from her home in northeast Fort Worth to Southlake. “Every drive to and from work is a journey through time, back to the cultural roots of this community,” Moss says. “It is incredible to be transported in your mind’s eye to a previous time and to gain understanding and appreciation of a sense of place.”

Preserving a sense of place is the mission of the nature center. And thanks to the individuals who loved the land, it’s a place that even Pearl Foster O’Donnell’s kin would recognize.

arly Spring Arts Conservatory has begun to blossom. Founded a year ago by Sky-Marie McDonald and her husband, Chris Schell, the studio ranks as the only modern dance theater on

this side of the Metroplex. But Early Spring Arts won’t be pigeonholed quite so easily. In addition to providing all manner of dance classes (from classical ballet to hip-hop), this small nonprofit also offers music, acting and art lessons to its 45 students.

“We started with blood, sweat, tears and prayers,” says McDonald, 34, who earned a dance scholarship to the University of Oklahoma and has also studied at the Martha Graham School of Dance in New York and other prestigious programs around the country. “We had no loans and no grants, which is definitely not the norm.”

Word of mouth brought the girls — and a handful of boys — into the fold, and now Early Spring Arts offers classes five days a week. It [the dance company] takes its shows on the road, too, performing at Cook Children’s and other community venues.

“Through corporate and private donations, we’d love one day to offer a tuition-free model where the desire and drive of our students would be the only things that mattered,” says the 40-year-old Schell, who teaches guitar and manages the studio.

Adds McDonald, “We would like to cap our numbers at some point so we don’t lose the ability to have the personal connections with our students. If you come here, you will see our pointe teacher down on her knees, placing her students’ feet and making sure they balance perfectly. That level of attention is really rare.”

People, too, mean far more than the place, says McDonald. “We’re in a warehouse that smells like sweat and bloody feet! We are definitely not the studio for the girl who wants to do the cool thing or wants rhinestones on her jacket.”

Instead, McDonald and four other instructors prize their relationships with the students, the majority of whom range in age from 8 to 17. “If you’ve ever seen the TV show “Bunheads,” it’s like that around here,” says McDonald, herself a mother of a young daughter and son. “We have a core group of girls who dance their hearts out, then we’ll sit down and talk about boys, then we will dance some more.”

Schell is quick to point out, “We know the name of every one of our parents.”

“And their dogs and their crushes, too,” says McDonald. “I also know how to motivate and inspire each of these girls.”

That tight-knit spirit bolsters the overarching mission of Early Spring Arts: to fuel all manner of creativity in these kids.

“We’re not a competitive or flashy studio, but we’re about good technique and skills that may prepare them for collegiate dance or for a life through dance,” says Schell. “We bring the visual and performing arts together, with our students making their costumes and sets. They learn how beautiful the world is if you look at it from an artist’s perspective.”

hen Bonefish Grill opened its Southlake location in December, managing partner John Morst wasn’t sure how well it would be received. Though the restaurant has a dedicated following in 39 states, its new residence in the Shops of Southlake was the first in the DFW metroplex. “Being first in the area, we expected little to no knowledge about Bonefish,” he recalls.

As it turns out, he had no reason to worry.A multitude of customers, already familiar with

Bonefish Grill’s reputation, have converged on the restaurant to sample fish procured from around the world: Chilean sea bass, Atlantic salmon and mahi from the Pacific. Rotating specials of exotic species like Icelandic wolf fish offer patrons a chance to discover new favorites.

The decor of the Southlake location bears the stamp of its Florida origins. Three-dimensional artwork resembles swamp life, while mangroves line the dining area. The relaxed luxury of the indoor dining area comfortably accommodates any type of gathering, though the spacious patio, with its towering built-in fireplace, is likely to be the star of the show during warm spring weather.

The Bonefish menu offers several nonseafood choices, like filet mignon and a fontina cheese-covered pork chop with homemade marsala sauce, but the highlight here is grilled fish. Flown in fresh six days a week, the fish is hand-cut and seasoned before being cooked on a wood-burning grill and served with a choice of four fresh signature sauces made daily in-house.

and a self-proclaimed connoisseur, says that before coming to Bonefish, he wasn’t a fan of seafood. Now he considers himself a convert. “It’s amazing when it’s fresh. As soon as you start eating here, you understand. You can taste the difference.”

In addition to the grilled fish, best-selling entrees include a broiled, stuffed longfin tilapia and Lily’s Chicken, a grilled chicken breast smothered with goat cheese, spinach, artichoke hearts and a lemon-basil sauce. The Hand Helds section of the menu features quick, casual options, such as Kobe beef burgers and Baja fish tacos.

Appetizers are a big draw. The seared ahi tuna sashimi reels in sushi lovers, while the sweet and spicy Bang Bang Shrimp has become so popular that Bang Bang Wednesday was created just to celebrate it. Desserts such as key lime pie and a flourless chocolate macadamia-nut brownie are large enough to share.

Bonefish Grill opens at 4 p.m. for dinner service Monday through Saturday and at 11 a.m. for Sunday brunch. The full kids menu, which includes choices like popcorn shrimp and homemade macaroni and cheese, makes it a family-friendly choice, while the gluten-free menu offers options to those with dietary restrictions.

Daily Happy Hour drink specials and Happier Hour appetizer specials have already earned this spot its share of regulars. Customers gather on couches in the heated outdoor lounge area or belly up to one of the many full-service community tables in the bar. “It’s amazing to see,” Morst says. “Bonefish just has a culture about it that’s very inviting and open. Once people stumble upon us, they’re pleasantly surprised.”

hen a German couple and their son set down roots in Southlake six years ago, they immediately sought to bring European simplicity and elegance to their outdoor living, dining and pool area.

“What was there before looked like every pool and patio in Southlake, with an old-world style,” says Ute Busse, who found the 6,400-square-foot residence back in 2007 on a whirlwind house-hunting expedition. “I wanted something clean and quiet instead.”

After a false start with one contractor who couldn’t seem to translate her vision, Ute became friends with designer Julie Walsh of Sterling Renovations (previously StoneHouse & Associates). The pair met at Art in the Square, the annual event organized by the Southlake Women’s Club, which has raised more than $1 million for local nonprofits that assist women and children. Currently, Ute serves as the charity’s vice president of community outreach. She also devotes considerable time to ferrying her and her husband Olaf’s 12-year-old son, Janis, to various activities.

Because both her family and Olaf’s live back in Germany, Ute knew she wanted a large home to accommodate extended visits from guests. “When our family and friends come to visit, they have an entire area upstairs to themselves, which is so nice,” she says. The large, light kitchen comes in handy for frequent entertaining.

“That was the real reason I bought the house — its white kitchen,” she says, adding that she intends to redo the

space sometime this year. The kitchen opens onto the large exterior dining room and pool area, initially washed aggregate and red stone.

“There were three waterfalls, but none of them were working because there wasn’t enough water pressure,” Walsh recalls. “Ute showed me a lot of pictures of things she liked, including limestone that doesn’t weather well here.”

Instead, Walsh steered her client toward white porcelain tile for the decking, along with Diamond Brite plaster for the pool, which has a bluish luster. The original water features became one large, sheer waterfall “with more of a unique, modern look,” says the designer.

Ute herself searched out the comfortable, all-weather wicker furniture. “I had seen something similar in Germany but couldn’t find the German brand here,” Ute recalls. “I went online and found this company called Blue Concept.” The UV and eco-friendly woven pieces boast the clean lines that Ute favors. In spite of the durable nature of the indoor-outdoor fabric cushions, Walsh recommends

bringing them inside before a storm. “They don’t fade, but you still have to baby them,” Walsh says.

The family spends as much time outside as possible, often with Olaf at the grill and neighbors or friends joining them in a meal. In the evening, a network of fire pots adds a bit of drama to the setting. Ute loves a bouquet of fresh flowers on her outdoor table.

“When I first moved here, I took flower-arranging workshops from a German woman at Central Market,” says Ute, who favors roses and lilies — as long as their aromas don’t overwhelm.

While Janis inherited his mother’s passion for flowers, he prefers them in the ground.

“He’s the one who gets me to garden,” Ute says with a laugh. The 1997 home already had an abundance of azaleas when the couple purchased it; the flowers blaze pink throughout the spring.

“We don’t mind if it gets to be 100 degrees,” says Ute. “We’ll all be out here, by the pool.”

Durable indoor/outdoor furniture adds a practical element to outdoor entertaining; Ute and her son share a love of gardening.

a must-have addition. Fire pits are becoming upscale and have morphed into “fire furniture” – fire tables, fire bars and fire banquettes. palm, depending on your space and budget. Bougainvillea needs direct sun. If you have a lot of shade in your yard, other plants that will thrive and provide yearlong beauty are camellias, rhododendrons, azaleas and hostas. They will bloom year after year, and as evergreens they will keep color in your space year-round as well.

erformance Bicycle has put a new spin on eco-friendliness. The shop, which has been in Southlake for about a year and a half,

employs a dedicated team of cyclists who advise and service the city’s biking population. To avoid wasting scraps from their many tune-ups and tire repairs, staff members have rallied in an effort to save used bicycle parts for area artist Rachel Spire, who collects the discarded parts and turns them into art in her ReGeared studio.

The shop’s lead mechanic, Todd Littleton, who logs lots of miles biking in from Arlington, says Spire approached them about a year ago when the shop opened its Southlake location, and she comes in about once a month to collect the leftovers. “We started saving all the chains, wheels and pretty much any old or broken parts, and we set them aside. It varies depending on what we’re working on that week, but mainly wheels. We’re not throwing away nearly as much as we would. We also recycle tubes and tires; anything rubber. We encourage our customers to do the same. They throw them in the bin and we’ll recycle them for them.”

“It’s amazing how many good things are discarded because their original purpose has expired, and it’s easy to just throw it out,” says Spire, also an avid cyclist.

Performance sells a mix of bicycles and has a little something for everyone, according to Littleton. “Being in this area, we sell more mountain bikes and path-and-pavement bikes. Not high-mileage bikes, but just to cruise around on and get some light exercise. We do cater to high-performance cyclists, but more so to entry- to mid-level enthusiasts. We get a lot of families in here who buy for kids so they can all ride on the trails. Pretty much everyone in the store rides.”

Southlake Town Square will transform from a sprawling urban development to a bustling street fair as the 14th annual Art in the Square event comes to town. The festival, sponsored by the Southlake Women’s Club, will see a collection of more than 150 artists set up booths showcasing their works. Terri Messing, chairman of the artist committee and a member of the Southlake Women’s Club, views the event as an opportunity to expand culture into the suburban community. “We hope that people are not just coming to buy, but also coming for a bit of eye candy,” she says. “We want them to expand their mind and open it up to new and interesting things.”

Work is exhibited in numerous mediums — including painting, photography, sculpture, ceramics, jewelry and carpentry — and each year the Women’s Club chooses one artist to spotlight. Greg Barnes, an artist from North Carolina who specializes in pastels, has been awarded the distinction for 2013.

The artist selection process is an arduous task. Messing says that each year the jury reviews more than 700 applications from candidates and from there must make the difficult decision of narrowing the pool to 150. “We, of course, look for excellence and key fundamentals of art such as line and space,” she says. “But then we really examine the piece to see if it moves us.” Messing says that the festival prides itself in developing long-lasting relationships with its showcased artists.

Children are welcome at the event, and there are many areas designated for them, such as a kids corner with crafts and activities, and a kids zone with rock-climbing walls and a bounce house. There’s a niche for budding artists, too. Youth Art in the Square,

a juried showcase of aspiring local high school artists, is one of Art in the Square’s most popular facets.
