Bristol to KrakowTaking our music abroad has long been a passion of the Cathedral Choir. We are thrilled to be singing tonight in the ancient cultural capital of Poland! But our Polish adventure began in Bristol, at the city’s own Polish Church.

Founded by Poles who fought for the Allies in WWII, the church of Our Lady of Ostrobrama now welcomes 350 worshippers each week.

In June the Cathedral Choir sang for them, while they cooked for us. Our young choristers enjoyed all the traditional Polish delights, including kabanos, bigos, and smalec.

NINE CENTURIES OF SONGA choir has been singing on the site of the Cathedral since the Augustinian monastery was founded in 1140. When the church formally became Bristol Cathedral in 1542 its statutes made provision for the development and maintenance of the choir, whose role was to sing the praises of God.

Mark Lee Master of the Choristers

Educated at Cambridge University, where he was Organ Scholar at Corpus Christi College, Mark has been Assistant Organist of Gloucester Cathedral and Assistant Director of Music at the King’s School. In a period of eight years he was privileged to work with both Dr John Sanders and David Briggs.

This was followed by his appointment as Director of Music at Bristol Cathedral. In this time he has enjoyed responsibility for directing six tours, and eight live broadcasts of Choral Evensong on BBC Radio 3. He has also introduced girl choristers to the Cathedral, and helped transform Bristol Cathedral Choir School into a state school, the only publicly funded choir academy in the UK.

He has performed at venues such as Westminster Abbey, St Paul’s Cathedral, and King’s College, Cambridge. A huge enthusiast for young people singing, he relishes LMW�HEMP]�GSRXEGX�[MXL�XLI�'LSVMWXIVW�ERH�½RHW�XLIMV� skill and enjoyment of choral music a huge inspiration.

Paul WaltonAssistant Organist

Paul Walton began his musical career as a chorister at Shake-speare’s church, Holy Trinity, Stratford-upon-Avon. He studied at the Royal Northern College of Music, and was Organ Scholar at St. Ann’s Church, Manchester, and then Sydney Nicholson Organ Scholar at Manchester Cathedral, where his numerous recitals included seven all-Bach programmes.

Since September 2001, Paul has been Assistant Organist of Bristol Cathedral. As well as accompanying and assisting in the training of the Cathedral Choir, he directs the Cathedral Consort and the Cathedral Chamber Choir. Paul gives organ recitals at Bristol Cathedral, and at other churches through-out Bristol. He has also performed at St. Paul’s Cathedral, Blackburn and Ripon, Westminster Abbey, Tewkesbury Abbey, Rochdale Town Hall, and the Marktkirche, Hannover.

Cheddar to KrakowJust south of Bristol is the ancient town of Cheddar. For centuries, people here have made the famous cheese named after the town.

John Alvis and his family have been farming dairy cows for generations, and are now the UK’s largest producer of organic Cheddar Cheese.

They have recently begun selling their Cheddar in Warsaw, as well as South Korea and China!

Cheddar is a hard, mature cheese which goes fantastically well with Kabanos. In fact, when the Cathedral Choir sang in Bristol’s Polish Church, the audience enjoyed Kabanos and Cheddar as a tasty snack while listening to the music!

Carols for Sick Children

Just before Christmas, the Choristers had an unforgettable day at Bristol Airport. A WTIGMEP�¾MKLX�[EW�XEOMRK�WMGO�GLMPHVIR��RSV-QEPP]�YREFPI�XS�¾]��JSV�E�YRMUYI�'LVMWXQEW�party in the skies. While they checked in, the Cathedral Choir sang them carols. It was magical for everyone, especially when the choir processed through Duty Free singing Ding Dong Merrily on High!

&VMWXSP�%MVTSVX�[IVI�SYV�½VWX�WYTTSVXIV���With nine destinations in Poland, and four HMVIGX�¾MKLXW�XS�/VEOS[�IZIV]�[IIO��XLI]�couldn’t wait to get involved. Yoghurt Gets Funky A few miles south of Bristol there’s a valley, called the Yeo. The grass is lush, and for decades the Mead family have raised dairy cows there. They still do, and today “Yeo Valley” is Britain’s largest organic yoghurt maker.

But they’ve come a long way since Mary and Roger started making yoghurt in their farmhouse in 1972, using skimmed milk left over from clotted cream. You see their yoghurt in all the supermarkets now, and ice cream too. But there’s more.

To celebrate 50 years in the valley, XLI]�GVIEXIH�E�XSXEPP]�YRMUYI�FS]�FERH��‘The Churned’. They’re the guys with the tractor. “Be a little funky,” they sing, “choose the west country.” No, they can’t really farm - but they do look great. Can they sing? Search “ The Churned” on YouTube and decide.

Baptism in a Barrel?It’s true. Back in the Middle Ages, Somerset children were baptised in a barrel of cider. Crafting bitter apples into, dare we say it, heavenly nectar is an ancient art in the countryside around Bristol. And at Myrtle Farm, the Thatcher family has been at it for 110 years.

It’s now ultra cool, and sold globally. Thatchers have just signed a ten year deal with Australia, and this year they began trading with Germany.
