A Pomegranate in a Pink Apple Tree If you’re looking for a mocktail that is fizzy, fruity and festive, then look no further as this layered drink tastes as good as it looks.

Ingredients (serves 2)500ml innocent apple juice 150ml cloudy lemonade a dash of grenadine

Pour enough innocent apple juice to fill a tall glass about three-quarters of the way, and then top up with cloudy lemonade and a dash of grenadine.

If you fancy decorating your mocktail a bit, cut an apple (we like pink ones) into thin slices and pop two on top, add a couple of glace cherries and sprinkle with a touch of pink decorating sugar.

A Mulled Turtle Dove SparklerTurtle doves are hard to find down the corner shop so we decided to do away with them altogether and concentrate on blending delicious wintery flavours and spices to create this festive mocktail.

Ingredients (serves 6)

750ml innocent apple juice 4 cans of ginger beer 1 small punnet of blackberries 2 thick slices of fresh ginger root 1 cinnamon stick (broken) a few whole cloves 2 sweet red apples 1 pot of popping candy

Pour the apple juice into a large saucepan with the broken cinnamon stick and the cloves. Mash the blackberries and the ginger root with a muddler and add them to the saucepan. Bring the mixture to the boil, and then let it simmer for about 5 minutes. Strain into a clean pot and add the apple slices and ginger beer. Heat through (without letting it boil) before ladling into heated mugs.

Cut the apples into festive shapes (perhaps a star or a snowflake) and top each drink with a slice. If you want extra decoration, try spooning a bit of popping candy on top, lightly dusting with gold glitter, or use extra cinnamon sticks as swizzle sticks.

On the Third Day of Christmas, my true love gave to me…

Ingredients (serves 2)

For spiced honey syrup 90ml water 60ml light runny honey 2 inch piece of cinnamon small pinch cinnamon powder 2 star anise 2 cloves

For mocktail 4 strawberries 6 raspberries 6 blackberries ½ teaspoon orange zest

½ teaspoon lime zest 10ml lime juice 25ml spiced honey syrup 60ml innocent apple juice 150ml innocent apple and raspberry juice 60 ml soda water crushed ice

For serving 2 orange slices 4 raspberries 4 blackberries

First, make the spiced honey syrup by getting a pan and adding the water, cinnamon stick, cinnamon powder, star anise, cloves and honey. Bring the mixture to the boil and turn down the heat and let it simmer for 2-3 minutes (or until the honey has melted). Then remove from the heat completely, and once it’s cooled, strain the syrup into a clean jar. Measure out 25ml for the mocktail and refrigerate the rest for another time.

To make the mocktail, hull and roughly chop 2 strawberries and add them to a cocktail shaker with 6 raspberries, 6 blackberries, the zest of an orange and the zest of a lime. Crush the berries with a muddler and add the innocent apple juice and innocent apple & raspberry juice, along with the spiced honey syrup, a bit of lime juice and some ice. Shake the mocktail and double strain it to remove any seeds.

Get two serving glasses and coat their rims with the honey syrup. Dice 2 strawberries and add them to the glasses before topping with 2 raspberries, 2 blackberries, and a slice of orange. Then pour the mocktail into the glass and top up with soda water.

Four Thai birdsWhile we’re layering on our woolly jumpers, these birds are sunning themselves on a white sandy beach over the other side of the world. Instead of getting all bah humbug about it, let this fiery Asian inspired mocktail warm you up and be thankful you’re not getting sand in your mince pie.

Ingredients (serves 2)1 250ml bottle of innocent mangoes & passion fruits smoothie 330ml carton of coconut water the juice of 1 lime 2 coriander stalks the very tip of a red chilli (just to taste)

Pour the innocent mangoes & passion fruits smoothie, coconut water, lime, juice, red chilli and coriander stalks into a blender to mix them all up.

Pour the drink straight into a cocktail glass and sprinkle with the remains of the chilli (if you’re brave enough).

Five Gold Things The best thing about the whole 12 Days of Christmas song is where everybody belts out the ‘Five Gold Rings’ bit. But who wants to drink 5 gold rings? Far better to mix up all the tasty things in this recipe instead.

Ingredients (serves 1)

1 orange a teaspoon of British runny honey 1 cup of innocent apple & mango juice a couple of cinnamon sticks golden syrup

Slice an orange into thin slices and lay them on a baking sheet before drizzling a little bit of golden syrup on top. Bake these in the oven for at 100°C for 40 mins, or until the orange slices are bubbling and golden. Turn off the heat but leave them in the oven so they harden as they cool.

Then get a cup of innocent apple & mango juice and heat it gently in a pan, adding the stick of cinnamon and a teaspoon of honey. Bring it to simmering point and then take it off the heat.

If you want to decorate the glasses, set out two small bowls, one with innocent orange juice and one with caster sugar and a little edible golden glitter. Take a martini or champagne glass and dip the rim into the orange juice before dipping it directly into the caster sugar, creating a golden ring around the glass.

Pour a little honey into the glass, topping it with the warmed innocent apple & mango juice before popping a cooled orange ring on the glass to decorate. Finally add a stick of cinnamon to stir and a gentle dusting of cinnamon to taste.

For Serving 1 cup of innocent orange juice (with bits or smooth) a spoonful of caster sugar edible golden glitter powdered cinnamon

Six Spices Muddling Winter is the coldest season and so even if the ground is covered in slush (rather than the crisp white snow you see in every Christmas film), a festive drink should be warm and spicy. This fruity mocktail is just the thing to make you feel toasty inside when it’s chilly out.

Ingredients (serves 2)

For the apple chips an apple cinnamon powder, to taste For the mocktail 100ml innocent apple juice sparkling water a squeeze of lemon ice

Begin by making the spiced apple crisps. Preheat the oven to 160°C and line a baking sheet with parchment paper. Core an apple then slice it into the thinnest slices you can (aim for about 1mm thick). Sprinkle the slices with cinnamon and place on the baking sheet before popping in the oven. Bake these for about an hour, turning occasionally, until the crisps are light golden and dried out.

Next to make is the chai simple syrup: in a dry frying pan, toast all the spices (except the ginger and vanilla extract) until they start to release their aromas. Combine these in a small pan with the ginger and vanilla extract, honey and water and bring to the boil. Simmer for 5-10 minutes, stirring often (the longer you simmer, the stronger the spice flavours will be) then remove from the heat and strain. Transfer your syrup into a clean jar with a tight fitting lid.

Now fill two short glasses with ice. Pour in the chai simple syrup and innocent apple juice before squeezing a lemon on top and muddling it all together. Top with sparkling water and decorate with the spiced apple crisps.

Seven Sips a SparklingYou’re knee deep in wrapping paper, you’ve stood on three presents already and you’ve lost the end of the sellotape again. Why not take a moment out to enjoy this mocktail and don’t go back to the present pile without the double sided.

Ingredients (serves 4-6)a pineapple 15g piece fresh ginger 250ml innocent apple juice 1 heaped teaspoon ground mixed spice 330ml ginger beer

Remove the skin from the pineapple and chop it into chunks. Then peel and finely grate the fresh ginger. Pop both of these in a blender with the innocent apple juice and mixed spice, and blend until smooth. Then pour the mixture into a cocktail glass and top up with ginger beer.

A Milka ColadaSometimes it all gets a bit much and it can be tempting to run away to a fancy desert island and have Christmas under a palm tree. This sweet, tropical mocktail is a far cheaper and tastier option. So slip on your sunglasses, lie back on your sofa and taste Paradise without having to apply any sun cream.

Ingredients (serves 2)250ml innocent tropical juice 250ml coconut milk 3 tablespoons condensed milk 2 pineapple wedges to decorate 2 maraschino cherries to decorate

Blend the innocent tropical juice, coconut milk, condensed milk and a handful of ice together until the mixture is smooth. Pour into 2 cocktail glasses and serve with a pineapple wedge and a maraschino cherry on the rim of each glass.

An Apple-Rosemary RefresherRosemary. Ancient healer, aider of memory and a good name for a dear old aunt, it’s even tastier in this recipe. For a refreshing winter pick me up which might help you win at Trivial Pursuit, this mocktail is the one for you.

Ingredients (serves 1-2)For the rosemary syrup 125ml water 60ml sugar 3 sprigs rosemary

First make the rosemary syrup. Put all the ingredients into a small pot and set over a medium heat. Stir it all until the sugar dissolves and then bring the mixture to a boil. Turn off the heat completely and leave it to cool.

Once cooled, get a cocktail shaker and pour in the innocent apple juice, sparkling water and lime juice and mix it all together with 30ml of the rosemary syrup. Then pour the drink over ice in a glass and serve.

Ten Croaky Frog Lords Leaping in their Swamp Swamps and frogs don’t play a major part in the Christmas story but they deserve a decent festive tipple as much as any donkey or grumpy innkeeper. So hop along to make this recipe and toast all things green this festive season.

Ingredients (serves 1)juice of a lime 1 teaspoon of honey 3 sprigs of mint 75ml innocent kiwis, apples & limes smoothie 50ml innocent apple juice soda water ice edible glitter 1/2 a teaspoon of popping candy

Pop the lime juice, honey and mint into a cocktail shaker and use a muddler to mash the leaves up. Add the innocent kiwis, apples & limes smoothie and innocent apple juice before shaking it all together. Fill a long glass with ice and pour in the mocktail before topping with soda water and, if you fancy, add a sprinkle of glitter. Finally add the popping candy and stir with a straw so it sinks to the bottom.

Eleven Pink Peppercorns (and Passion Fruits) piping Fact. Good King Wenceslas’ favourite drink was ginger beer. Just the thing after a cruel frost. Good King Wenceslas has nothing to with the 12 Days of Christmas but we thought this was an interesting fact and something to ponder over while you sip this deliciously spicy drink.

Ingredients (serves 1)100ml innocent mangoes & passion fruits smoothie 150ml ginger beer 8 ice cubes 1/2 a passion fruit a squeeze of lime 11 pink peppercorns 3 mint leaves very finely sliced

Chill a tall glass that holds about 330ml.

Very lightly crush the peppercorns in a pestle and mortar or back of a chef’s knife - literally just touch them so that they start to break and the shells crack open. Don’t pound them or they become wet and mushy, bitter and sharp.

Place four ice cubes into the glass. Add half the passion fruit, half the peppercorns and half the mint. Add the remaining ice, then the lime juice, innocent mangoes & passion fruits smoothie and the ginger beer. Stir well with a chopstick or long spoon. Top with the remaining passion fruit, peppercorns and mint. Then give it one more quick stir before drinking.

Twelve Cinnamon Drummers DrummingThis cinnamon infused mocktail is best enjoyed on Christmas Eve, listening to Bing Crosby and David Bowie sing Little Drummer Boy. Feel free to use any left over cinnamon sticks to drum along.

Ingredients (serves 1)2-3 tablespoons of boiling water 5cm piece cinnamon stick 1 clove 1/4 tsp cinnamon powder 3 heaped teaspoons of honey some ice cubes 100ml innocent orange juice (smooth or with bits) 130ml blood orange juice

Add the boiling hot water to a pot with the clove and cinnamon stick to infuse together for about 10 minutes. Whilst the water is still hot add the cinnamon powder and stir it all together before adding the honey and stirring again.

Put some ice cubes into a blender. Pour in the innocent orange juice, blood orange juice and the cinnamon and honey mixture and blend together until smooth. Pour into a serving glass through a sieve and decorate the glass with a cinnamon stick and a slice of orange.
