ATMT’s Chicken Wraps Ingredients Chicken-Thigh or breast fillets cut into strips. I reckon 1 breast fillet sliced is enough for 2 or even 3 serves. Fresh Tomatoes cut in wedges or slices or chunks. Whatever you like. I like wedges to make for easier wrapping. Lettuce-Whatever available, slices, torn or shredded. Your choice! Garlic Olive Oil Tzatziki. I prefer to make my own. Simply put some greek yoghurt (a generous cup or more) in a bowl, grate a Lebanese cucumber (don’t bother peeling, squeeze out excess moisture) add to yoghurt. Add 2 cloves crushed garlic, pinch of salt, juice of ½ a lemon and I like to add some dried mint flakes. Mix together and voila! Pitta bread or any type of bread suitable to use as a wrap. Put the chicken into a bowl, drizzle with olive oil and add 2 cloves crushed garlic. Mix and let sit until needed (covered and in the fridge). Add seasonings as you like. I like to put a little middle eastern slant to this dish so I add a spice blend I make to the chicken. Spice blend for this is below. When ready, barbecue or grill the chicken until it starts to caramelize on edges, warm the wraps or pitta bread, arrange the chicken, tomatoes, lettuce and Tzatziki to make for easy access for wrapping. Wrap, envelope style and eat. Napkins are a good idea too so you can catch the yummy juices that will run inevitably down your arm!

My Middle Eastern Spice BlendMix together the following:
