2009 Château Margaux - Margaux, Bordeaux, France £980 Truffle, blackberry liqueur, liquorice, black cherry, flowers, molten earth, tobacco smoke and 5 spice. There is richness and purity of fruit that is hauntingly beautiful. Refined, powerful and intense, this opulent wine is pure silk and velvet. The supple finish tastes like perfectly ripe fruit just picked from the vine at the exact moment to obtain maximum ripeness. From a blend of 87% Cabernet Sauvignon, 9% Merlot and equal parts Petit Verdot and Cabernet Franc, there is not a single hard edge to be found. Flawless and sensuous. 13.5% vol

2010 Penfolds Grange - Southern Australia £760 This is a powerhouse, structurally superior to both the 2009 and 2008 vintages and breathtakingly dense, long and precise. The nose has cola, blackberry, and vanilla, brown spices of all kinds, coal smoke, meaty charcuterie elements and a strong tarry, savoury note that speaks of the 85% Barossa Valley componentry. The palate has super deep tannins that fan out through flavoursome black fruits. These are purposeful tannins; they bristle on the palate, tantalizing and assertive yet playful, strong not aggressive. The power here is the thing; this has mouth-coating density and terrific drive, so tightly coiled, it gives enough away to suggest a very, very long cellaring wine is here. This is a classic Grange that will please the serious collectors. A wine of genuine pedigree. 14% vol

2005 Opus One, Robert Mondavi - California, USA £620 The nose begins a little mute with a suggestion of freshly crushed blackberries and blackcurrants, forest floor, cinnamon and a touch of loam. The palate is wonderfully concentrated with layers of macerated blackberry, cloves, vanilla and dark chocolate. A medium+ level of acidity and medium to firm fine and ripe tannins give excellent structure to the richness of flavours. 14% vol

1983 Cuvée Frédéric Emile Riesling, Trimbach - Alsace, France £335 Earning a listing for one of your wines at a Michelin-starred restaurant is a proud moment – so what must it be like to be featured by every single three Michelin-starred restaurant in France (that’s 27 in total)? It’s an accolade that reflects the historic excellence and purist vision of F. E. Trimbach, unquestionably one of the great names of Alsace and a family business that can trace its origins all the way back to 1626. A complex nose of white bread crust, toasted bread, dried apricots and spices. There's also pepper on the nose and palate that makes the wine more concentrated and hot. A nice, mature, concentrated dry white wine. There's a side of lively, sweet fruity notes to this wine as well. 13% vol

1996 Dom Perignon - Champagne, France £480 It is pale yellow in colour with shades of straw and on the nose has initial aromas of acacia honey and fresh almonds giving away to notes of dried apricots and toasted brioche. On the palate the wine is full, round and complete with balancing acidity, and a long, silky elegant finish. 12.5% vol

2010 Batard Montrachet Grand Cru, Morey-Coffinet Côtes de Beaune - Burgundy, Frace £280 Deep lemon yellow in appearance with Intense aromas of apple, pear and zesty citrus fruit combine with creaminess and a notion of minerality. Remarkably concentrated and powerful for a Puligny with intense fruit framed by oak and a pervasive, underlying minerality. 12.5% vol
