In honor of Heart Health month, consider consuming more beets to keep your heart beating healthy. Beets are 100% edible from, their leafy greens all the way down to their roots. Beetroot juice has become increasingly popular especially among those interested in the juices potential to increase physical endurance during exercise. Many of us are familiar with the red beet however, beets also come in golden yellow and candy cane color varieties. Beets, beet greens and beetroot juice are packed with essential vitamins, minerals and plant compounds, some of which have medicinal properties. What's more, they are delicious and easy to add to your diet!

Beets boast an impressive nutritional profile. They are low in calories, yet high in valuable vitamins and minerals. In fact, they contain a bit of almost all the vitamins and minerals that you need. A 3.5 ounce serving of cooked beets contain only 44 calories as well as the following notable vitamin and minerals: Vitamins C, B6, Folate, Magnesium, Potassium, Phosphorus, Manganese, and iron. Beets also contain inorganic nitrates and pigments, both of which are plant compounds that have a number of health benefits.

Beetroots’ unique benefits are mainly due to their high concentration of nitrates; which the body converts to nitric oxide a molecule that helps relax blood vessels, increase blood flow and promote oxygen uptake by muscles. Heart disease, including heart attacks, heart failure and stroke in one of the leading causes of death worldwide. High blood pressure is one of the leading risk factors for the development of these conditions. Studies have shown that beets and beetroot juice can significantly lower blood pressure in both normotensive and hypertensive adults over a period of only a few hours.

Beets also contain betalains (which give beets their red color) phenolic and flavonoids compounds which act as anti-inflammatory and antioxidant agents. Chronic inflammation is associated with a number of diseases, such as obesity, heart disease, liver disease and cancer.

Beets are a good source of dietary fiber with one cup providing 3.4 grams. Dietary fiber is an important component of a healthy diet. With regards to heart health fiber helps lower blood lipid levels and increases satiety (or fullness at meals) which can help with weight management. Obesity is another noted risk factor for heart disease.

Nutrition research has suggested that what is good for heart is also good for the brain. Studies have shown that beets increase blood flow to the brain (due to their nitrates) improving mental and cognitive function.

Beets are delicious and very easy to add to your diet. Beets can be juiced, roasted, steamed or pickled. Also, they can be bought precooked found bagged in the produce isle or canned. Beets can also be enjoyed raw, shredded and enjoyed in a salad, coleslaw or spiralized and used as a substitute for pasta. The leafy greens of beets can also be eaten raw in a salad and they are delicious sautéed. Beets blended with Greek yogurt make a delicious and healthy dip. Choose beets that are heavy for their size with fresh un-wilted green leafy tops still attached. Dietary nitrates are water soluble so it is best to avoid boiling beets to maximize their nitrate content. As beetroot juice can interact with some medications, it is important to check with your health care provider before making any changes to your diet.

Volunteer of the Month January

Marianne & Harry Oettingers Marianne & Harry moved to Saratoga County after Harry retired from the police force in Long Island. Harry is also a volunteer for the Red Cross and has participated in efforts in helping with hurricane victims . Marianne retired from Ballston Spa School district and volunteers for a crisis center. They have been volunteers the for Home Delivered Meals program for over 5 years. Marianne and Harry are always willing to help out with the meals program when needed. This program wouldn’t be possible without the help from great volunteers.
