EXPLANATION OF TERMS You will find the following terms noted with a * throughout this booklet.

Certifications Certified Organic: “Organic” is a labeling term for food or agricultural products (“food, feed or fiber”) that have been produced according to USDA organic regulations, which define standards that “integrate cultural, biological, and mechanical practices that foster cycling of resources, promote ecological balance, and conserve biodiversity.” For a farmer to legally use the word “organic” in reference to their farm or its products they must obtain organic certification through a USDA-accredited certifying body like Pennsylvania Certified Organic (PCO), Ohio Ecological Food and Farm Association (OEFFA), or Primus. Certified Naturally Grown (CNG): A private non-profit organization that offers peer-review certification for farmers and beekeepers producing food for their local communities without the use of synthetic chemicals or GMOs. CNG was founded by farmers in New York’s Hudson Valley in 2002. Today more than 800 producers in 47 states are CNG certified. Food Alliance: A certification program for farmers using both sustainable and socially responsible agricultural practices. Good Agricultural Practices Certified: Good Agricultural Practices (GAP) and Good Handling Practices (GHP) are voluntary audits that verify that fruits and vegetables are produced, packed, handled, and stored as safely as possible to minimize risks of microbial food safety hazards. Animal Welfare Approved: A food label for meat and dairy products that come from farm animals raised to the highest animal welfare and environmental standards. The program was founded in 2006 as a market-based solution to the growing consumer demand for meat, eggs and dairy products from animals treated with high welfare and managed with the environment in mind. PA Preferred: A state-supported agricultural marketing program to identify and promote food and agricultural products grown, produced, or processed in PA.

Food Assistance Programs

Women, Infants and Children (WIC): A federal program offering supplemental food assistance, health care referrals, and nutrition education for low-income pregnant, breastfeeding and non-breastfeeding postpartum women, infants and children up to age five who are found to be at nutritional risk. Farmers Market Nutrition Program (FMNP): A federal program that aims to increase access to fresh, unprepared, and locally grown fruits and vegetables to WIC participants, and to expand the awareness, use of, and sales at farmers’ markets. Senior Farmers Market Nutrition Program (SFMNP): A federal program that aims to provide low-income seniors with coupons that can be exchanged for eligible foods (fruits, vegetables, honey, and fresh-cut herbs) at farmers’ markets, roadside stands, and community-supported agriculture programs. Supplemental Nutrition Assistance Program (SNAP): Formerly named Food Stamps, a federal program that offers nutrition assistance to millions of eligible, low-income individuals and families and provides economic benefits to communities.

Community Supported Agriculture (CSA):

Community Supported Agriculture (CSA) is a connection between a local farmer and the people who eat the food that the farm produces. The essence of the relationship is one of mutual commitment: the farm feeds the people; the people support the farm and both share in the inherent risks of farming and in the potential bounty. Robyn Van En, who first introduced the concept to the United States in 1985, summed it up as “food producers + food consumers + annual commitment to one another = CSA and untold possibilities.”

HOW DOES A CSA MEMBERSHIP WORK?

Generally, CSA members pay for their seasonal harvest up-front. This helps finance the farmer’s costs at the beginning of the season. Then CSA members pick up their shares weekly or biweekly during the growing season. Members usually have an opportunity to meet their farmer, visit the farm to see how their food is grown, participate in special events or potlucks and, if they like, volunteer.

GOT KALE?

For a tasty snack, try crispy kale: remove tough stems and tear large leaves in half. Wash, dry, and toss with olive oil, a little salt (maybe some pepper too). Spread kale leaves on a baking sheet and place in a preheated 350°F oven; roast for 12-15 minutes, or until crisp, stirring once.

Ruth’s Harvest Gettysburg Ruth’s Harvest Gettysburg sends backpacks filled with meals for the weekend home with students who qualify for free and reduced lunches in the Gettysburg Area School District. With the support of the Gettysburg Ministerium, Gettysburg Area School District, community partners, and an enthusiastic and committed volunteer base, we are working towards our ultimate goal of enabling community youth to have access to consistent and healthy meals and snacks.

An accredited nonprofit land trust dedicated to preserving the rural lands and character of Adams County, Pennsylvania. Lands are preserved for agricultural, open space, historical, scenic, recrea onal, wildlife habitat, hydrologic, and ecological purposes.
