The 11th Australian Wine Industry Technical Conference will be held at the Stamford Plaza Hotel from October 7-11. A workshop at the conference run by Adelaide University's Centre for International Economic Studies (CIES) has several recommendations for the industry, based on the centre’s expertise and research on global market prospects. Professor Kym Anderson, Executive Director of the CIES and Professor of Economics at Adelaide University, will open the workshop with an overview paper with David Norman and Glyn Wittwer on “Globalization and the world’s wine markets”. He will also present a paper on developments in Australia’s wine industry, while other participants from a dozen major wine countries will present comparable papers on their regions. Professor Anderson said Australian wine prices are likely to decline within the next four years unless a major expansion in marketing is forthcoming. “Our global model of wine markets divides the world into 47 different countries or country groups, thereby being able to take account of the different wine styles and qualities produced in different countries. We based our data on 1999 markets and projected that to 2005, given recent trends in vine plantings, incomes, changes in taste towards premium wine, and macroeconomic factors such as the strengthened US dollar,” he said. “Our preliminary model results show that real premium winegrape prices in Australia would be 7-10% lower in 2005 than in 1999. This suggests the need for substantial promotion of Australia's wines, both generic and brand promotion, if prices are to be maintained over the next few years.” Australia currently ranks third on the list of world suppliers in terms of the price of our wine exports, behind New Zealand and France. Professor Anderson said a number of strategies were open to Australian winemakers to improve their share of the premium wine market. “The most crucial thing is knowledge: about new technologies, evolving tastes, marketing and distribution systems, and how to use and influence them,” Professor Anderson said. “Competitiveness in global wine markets can be improved by greater collaboration among firms and at an industry-wide level. Sharing important knowledge can have benefits for all. “By working together, companies can get more return from their investment in research, education and training, better promotion at national and regional levels, stronger lobbying for tax reform at home, and be more effective in negotiating lower barriers to market access abroad. “Firms can benefit from a wide range of alliances. More collaboration between grape growers and wine makers, and alliances between wine makers and marketers/ distributors, including across national borders, could greatly benefit the Australian industry,” he said. Professor Anderson, who is a Director on the Board of Australia’s Grape and Wine R&D Corporation, believes a rise in the research and development levy paid by producers and matched by the Federal Government will yield high dividends and help to keep Australia at the technological frontier. “Australia already supplies a disproportionately large volume of the world’s wine research papers, and yet less is invested in this field than in many other Australian rural industries per dollar of gross output.” There was also scope to diversify Australia's wine export markets, he said. Currently close to 80% of Australian wine exports go to just four English-speaking markets: the UK, US, Canada and New Zealand. European nations, such as Germany, and over the longer term East Asia, were potentially strong markets for Australian wine. Professor Anderson will point out that the Australian Government could cushion the wine industry from a fall in prices by phasing down the Wine Equalization Tax (“Australia’s consumer tax on wine is higher than in most other wine-exporting countries”) and by seeking more market access abroad by lobbying for lower import barriers in overseas countries. “Australia has always had the natural resource endowments to produce plenty of excellent wine, and its reputation overseas is very strong. But Australian wine producers need to capitalise on their chances now to reap the rewards in the medium and long term. This is not the time for producers to be sitting back with their feet in a bucket of sparkling wine.” The workshop and the conference are being held during this month's major food and wine event, Tasting Australia. All authors at the workshop will be drawing on the CIES’s massive new database on global wine markets, the publication of which (in print and CD- ROM formats) will be launched at the start of the workshop. Called Global Wine Production, Consumption and Trade, 1961 to 1999, the statistical compendium was compiled by Professor Anderson and economics student David Norman. It provides a comprehensive source of information about the global wine market. As a marketing student at Adelaide University, Elly Wright knows the value of promoting good food and wine. From seagrass to shiraz: new professorNEW Professor of Viticulture SteveTyerman is the first to admit that winescience has never been his area ofexpertise. But Professor Tyerman is anexcellent example of how scientificexpertise can lead from one place (andfield of study) to the next, and be appliedin different areas.As a Botany PhD student at SydneyUniversity, he started by studying thephysiology of seagrass to determine how someplants can cope with very high salinity levels.Some years later he moved to West Germanywhere he used a world-first instrument tomeasure the hydrostatic pressures in individualcells, and developed this to measure movementof substances into and out of plant cells.

Returning to Australia, he took up a positionat Flinders University and adapted evenfurther techniques (some based on animalphysiology) to allow researchers to view theactivity of single protein molecules in themembranes of living plant cells.

Much of his work has focused on how plantstake up beneficial nutrients, such aspotassium, and exclude toxic salts, such assodium and chloride. His work has includednot only plant physiology, but also areas suchas bio-physics.

With papers published in Nature and Science,and himself the editor of two internationaljournals on plant physiology. ProfessorTyerman brings a wealth of expertise to hisnew role.

The Chair of Viticulture which he nowoccupies at Adelaide University (in theDepartment of Horticulture, Viticulture &Oenology), has strong industry sponsorship,with support from the Australian WineResearch Institute, BRL Hardy, MildaraBlass, St Hallet Wines, Southcorp, Yalumba,Orlando Wyndham, Petaluma and WirraWirra.

The Adelaidean spoke with ProfessorTyerman about his work.

Why come to Adelaide University?

“The chance of getting into viticulture andthe wine industry was a chance too good to

miss. You’re basically talking about anindustry that's progressive, expanding, one ofthe most important export industries in SouthAustralia, and it’s one where I perceive thatthe industry people have a fairly broad andopen mind about research, and the benefitsthat research could bring to the industry.

“So the attractiveness was first and foremostthe fact that it was in viticulture, and that itwas industry sponsored.

“The other issue was that AdelaideUniversity, and particularly the WaiteCampus, has a large number of scientistsworking in the plant biology area all in theone place— you’ve got the AWRI, CRCViticulture, CSIRO Plant Industry, andCSIRO Land and Water. I’ve alreadycollaborated with scientists in CSIRO over afairly long time, and I’ve also had links withpeople in Plant Science and a little bit inHVO. So the chance of getting into acampus where so many people are working on

plant biology was very attractive too.“As far as these plant sciences are concerned,Adelaide University is the premier institutionin South Australia. It’s the place to be.”

How important is the support from industry?

“In terms of monetary support it’s verysignificant. More than 50% of my position isfunded by industry. It’s also very important interms of providing mentors in the industrythat I can contact and talk with about researchissues, and research and development. It’simportant in the education we provide,because the oenology and viticulture studentsare looking at going into the wine industry towork, so it’s important to establish a goodrelationship with industry. We also get plentyof feedback from the industry on what theythink we should be teaching. So for theeducation and the research, it's vital to havethose industry links.“Professor Peter Høj alerted me to a basic

calculation that one can make which showsthe impact of research and development onthe profitability of the wine industry. Theyget a huge value return out of what we investin research. The amount of R&D that's goneinto viticulture, winemaking, I don’t thinkanybody would dispute the fact that it'sprobably added around five to 10 cents perbottle of wine. If you work that out in termsof the number of bottles of wine that are sold,that's a huge amount of money; it's severaltimes the amount of money that's beinginvested into R&D. So I'm sure the industryhas done its sums too, and it knows what kindof a return they get for that.

“I must admit that I was surprised that they would be interested in me to begin withbecause I didn’t have a specific viticulturebackground, but I think they could see that having a strong plant physiologybackground and a good research track record,that if I could bring that to bear in viticulture,then it will boost the whole research area.That's what I’m trying to do, and it’s excitingfor me because this is a new part of mycareer.”

What kinds of research problems will you belooking at in viticulture?

“I’m involved in a sub-program of the CRCViticulture on grape berry development andberry shrinkage. Shiraz berries, at a certainstage in development, sometimes shrink andshrivel, and this is not seen to be a good thingby the growers because they are paid by thetonnage. Some winemakers select for itbecause it gives specific flavours to the wine,and others don't like it at all. So the industrywould like to know why it's happening andwhether there are ways of growing vines orconditions that would prevent it fromhappening. Or perhaps there are varieties ofshiraz to which it won't happen.

“There are other researchers who have donequite a lot of work into this area, and I’mlooking to collaborate with those people.There are techniques that I can bring to bearon the problem which will hopefully shedsome more light on it.

It was good to see once againthe proud reporting (Adelaidean,Sept. 2001) of some of the manyinvolvements and achievements

of students and staff of CASM [the Centrefor Aboriginal Studies in Music].

The cause of Aboriginal music education hascome a long way and so has the widerUniversity’s acceptance and appreciation of itsplace in the scheme of things.

The first modest local bands of the mid ’70s as(e.g. ‘No Fixed Address’ and ‘Us Mob’) havespawned an unending array of newcombinations, including a choir nowperforming with the cream of Australian artistsand on a national scale. However, it may be

useful to remember that success has by nomeans come easy.Established in 1974 at the initiative of thethen Vice-Chancellor, Professor Badger, itsearly years were very problematic from manyperspectives.Controversial but dedicatedethnomusicologist Cath Ellis, gracious andcourageous urban Aboriginal poet andcommunity leader ‘Auntie’ Lilah Rankine andcross-cultural administrator Ben Yengi werestressed on all fronts as few in academiaseemed to care.There was a time, in the late ’70s and early ’80s when I was in the Chair of theUniversity’s CASM Committee, that attitudesamongst many academics were very dismissiveand negative to say the least.

In fact it was proposed that the Centre would be abolished due to financial hardship.Although there was financial backing fromthe Arts Department of the StateGovernment, I recall having to arguerationally as well as passionately in the then extremely powerful EducationCommittee for the relatively small sum of$12,500.In the end a small minority in favourprevented the closing down. And since thenCASM has never looked back.I trust that CASM’s place in the Universitywill go from strength to strength, and it is ajoy to follow their successes.

Dial turns to FM forcommunity stationTHE newest FM radio station in Adelaideis also Australia's oldest and mostrespected community station.From October 1, 5UV Radio Adelaide beginsbroadcasting on 101.5 FM. The changemeans that the city of Adelaide will finally beable to hear Adelaide University’s station inglorious stereo, and with a much strongersignal.5UV was the very first community radiostation in Australia, beginning broadcasting in1972. Since then the station has built areputation as a provider of qualitybroadcasting, winning national awards yearafter year.The station has waited more than 12 years toconvert from the AM to the FM band, but it'sbeen worth the wait.The quest to go FM dates back to September1988. After several setbacks, the AustralianBroadcasting Authority (ABA) notified thecommunity broadcaster in November last yearthat it had recommended a permanent FMlicence. The station finally got the green lightlast month.“The FM licence is a major step forward for5UV Radio Adelaide,” said Station ManagerMs Deborah Welch.

“The most obvious benefit will be the clarityand power of our signal, putting us on equalterms with the ‘big’ commercial stations.From the listeners’ point of view, the quality ofour broadcast will be strengthened, whichmeans they will get to enjoy our programseven more. The increased power of our signalalso means that we have access to a muchlarger audience in Adelaide which,unfortunately, often couldn’t tune into us onthe AM band.”The frequency of 101.5, in the centre of theFM dial, means that more listeners inAdelaide will be able to "discover" the station,

Ms Welch said.“It certainly gives us more ‘visibility’ andprovides radio listeners with a chance to makethe discovery that many couldn't make before.As people tune through their radios they willbegin to hear this new station at 101.5, andour aim is to catch their interest with the sortof innovative and independent programmingnot heard elsewhere.“Some recent examples include the station’sspecial coverage of the Festival of Ideas, whichgenerated great interest, and unique livebroadcasts from local music festivals, such asWomadelaide in Feburary, and coming up, theGlenelg Jazz Festival.”Ms Welch said staff and the hundreds ofvolunteers at Radio Adelaide were thrilledabout the change to FM.“There are so many people who put their hardwork into our programs, and now we feel thatwe are finally getting the chance to be heardthe way we should be heard.“Our obscure position on the AM dial hastended to make us one of Adelaide’s best keptsecrets, but we have an excellent and uniquerange of programming, and now it will soundbetter than ever.”The move to FM does not mean that theprograms on the station will change, at leastnot radically.“With our wide mix of music, arts, lifelonglearning and current affairs, and the diversityof our broadcasting team, 5UV RadioAdelaide will stand out from the crowd ofmusic-only stations on the FM dial,” MsWelch said.“Our aim is to reflect Adelaide in all of itsdiversity, and our new name, Radio Adelaide,is part of this evolving identity.”One person who has waited longer than mostfor 5UV's FM conversion is long-servingbroadcaster and producer Ewart Shaw.

“Going FM is important for me because Iknow the listeners will able to hear the musicI play as I hear it. We have been playing themusic in stereo for so long, but now it will beheard in stereo,” he said.“I’m also hoping the station will start toreceive more fan mail from local listeners, and

THE DEATH of former Chancellor MrBill Scammell CBE, aged 81, has causedwidespread sadness among the AdelaideUniversity community.Adelaide-born Mr Scammell, a formerManaging Director and Chairman of F.H.Faulding, was appointed UniversityChancellor in 1991 and re-appointed for asecond term in 1995. He retired from theposition in 1998.Paying tribute, Vice-Chancellor ProfessorCliff Blake AM said Mr Scammell had beenone of the most popular Chancellors in theUniversity’s history.“His gift for communication and his genuineinterest in people endeared him to studentsand staff alike,” Professor Blake said.“Coming from the world of business as hedid, Bill Scammell helped to establish muchcloser links between Adelaide University andthe business community. He recognised theimportance to South Australia of bringing‘town and gown’ together and, during his twoterms as Chancellor he played a major part inensuring that this happened.“His consultative approach to decision-making and his natural empathy with peoplewon him the support and admiration of theUniversity community. After he retired asChancellor, he maintained a close interest inthe University’s affairs. He was a regularvisitor to the North Terrace Campus and,until a few weeks before his death, had beenattending lectures in history and politics.“On behalf of the entire Universitycommunity, I extend sympathy to his wifePat and family on their sad loss.”Mr Scammell was educated at Queen’sCollege and St Peter’s College in Adelaide.He went on to study industrial chemistry at

the School of Mines but his studies wereinterrupted by war service.In 1948 he joined F.H. Faulding, following inthe footsteps of his uncle, Alfred Scammell,who had been company chairman for 31years. Bill Scammell went on to turnFaulding into a player of internationalsignificance in the global pharmaceuticalsindustry. In recognition of his achievement,he was made a Commander of the BritishEmpire in 1983.During his distinguished career MrScammell also served as a board member ofAdvertiser Newspapers Ltd, the AMPSociety and Santos. He was a keen sports fanand in 1993 became the No.1 ticket holderfor the South Australian football club, thePort Adelaide Magpies.

BRIEF HISTORY OF 5UV1972 – 5UV begins broadcasting as VL5UV, the first public station in Australia. The station wasmade possible by a bequest from Kenneth Stirling, a graduate of Adelaide University.1974 – the station moves to 530 on the AM band, later changed to 531, where it has stayed untilthis year.1988 – then station manager Jill Lambert submits a formal request for FM conversion.1990s – the next station manager, Jeff Langdon, takes up the job of lobbying for an FM licence.1992 – Dr Langdon gets the go-ahead from the then Minister Michael Duffy, but weeks later theBroadcasting Act is amended and the newly established ABA decides to start the entire processfrom scratch.1999 – new station manager Deborah Welch continues the push for FM.2000 – 5UV told by the ABA that it will go to FM.2001 – FM licence finally granted. 5UV Radio Adelaide begins broadcasting on October 1 on 101.5 FM.

The awards also help producersgauge the quality of their oils and table olives,with judging criteria developed by HVOstaff, based on international standards.

At the tastings last month, two classes ofolives were judged: black table olives withstones, and spiced or dried table olives. Thisyear there were 14 entries for table olives and67 entries for olive oil.

“Several criteria are assessed, includingappearance, colour, texture and flavour,” saidDr Jenny Guerin, a Postdoctoral Fellow withthe University’s olive research team.“Flavour, saltiness, bitterness and overallbalance of flavours are all important factors intable olives,” she said.

The judges included South Australian foodexperts Maggie Beer, Zannie Flannigan andMark Gleeson, and Professor Stan Kailis

from the University of Western Australia.Dr Guerin said events such as this werevaluable for both the University and the oliveindustry.“Adelaide University has close links with theindustry and we regularly update results fromour research projects to the industry viaOlives South Australia.“The main issues in olive research at themoment are the selection of new varietiesfrom superior feral olive trees, developingmethods for reliable olive identification, andunderstanding the main factors that influenceoil yield and quality,” she said.Research projects into olives at theDepartment of HVO are led by ProfessorMargaret Sedgley and show the breadth anddepth of scientific expertise at work:• Selection of superior olive trees from the

feral populations in southern Australia,with the aim of producing new olivevarieties adapted to Australian conditionsthat are high yielding and have unique oilflavours (Dr Jenny Guerin, ProfessorMargaret Sedgley and Research AssociateDr Michael Burr);

• DNA fingerprinting for varietyidentification of olives (Dr Jenny Guerin,Dr Graham Collins and Prof MargaretSedgley);

• Pollination compatibility betweenvarieties for good fruit set and high yields(PhD student Shubiao Wu, Dr GrahamCollins and Prof Margaret Sedgley);

• Chemical and sensory analysis to

determine olive oil quality (Dr GrahamJones);

• Construction of a genetic map usingmorphological and molecular markers(PhD student Shubiao Wu, Dr GrahamCollins and Prof Margaret Sedgley).

HVO isn't the only department interested inolives, with other research projects foundelsewhere at the University. These include anexamination of the history of the olive

industry in South Australia (by Departmentof History Masters student Craig Hill), andwork into the irrigation of olives (by Dr IanNuberg from the Department of Agronomyand Farming Systems, Roseworthy Campus).

The results of the olive tastings are yet to beknown, with the judges' final decisions to beannounced at an award presentation lunch onSunday, October 7 at Zac's Restaurant, WestLakes.

FRUSTRATED by the internet?Finding it too slow, too complicated, orjust confusing? Shouldn't it be moreaccessible, and cheaper?

The new Centre for Internet TechnologyResearch at Adelaide University aims toaddress some of the current internetproblems, to make it faster and morepervasive.

The centre, which opened officially lastmonth, has been established to bring togetherthe best expertise in internet technology inone place.

The centre's work will be based upon basicand applied research to improve and developthe technology that drives the internet. Itwill also undertake research to examine waysto improve the use of the technology in socialand business environments.

International and Executive Dean of theFaculty of Engineering, Computer andMathematical Sciences, Professor Ian Young, said the centre's work was moreimportant now than when it was initiallyconceived.

“As the internet has developed, theinadequacy of its technology has become more apparent. Its success and wide adoption now require a greaterfocus on the science and technology that underpin it to enable the internet tomature.”

Professor Young said the centre’s work would be the kind of fundamental and basicresearch that leads to importantbreakthroughs in the development oftechnology.

“Development of new and advancedtechnology for the internet must continue,despite the downturn and crises in the global

industry in the past 12 months,” he said.

“The research to be done by the centre isoften highly specialised and complex, but can lead to the necessary technicalbreakthroughs that, ironically, make thetechnology easier to use, cheaper and morefunctional.”

The centre, located in Adelaide University's building on 10 Pulteney Street, Adelaide, will in turn be connected to the national CooperativeResearch Centre for Smart InternetTechnology, which the university is alsoinvolved in.

Professor Young said the centre would alsocollaborate with Adelaide's recentlyestablished mNet Corporation, a wirelesstechnology platform for mobile internetsupported technologies with North Terraceas its testing site.

Top government manager appointedAN EXECUTIVE with the Premier’sOffice has been appointed ExecutiveDirector of Student and Staff Servicesat Adelaide University.Ms Susan MacIntosh will take up herappointment on October 22, replacing MrIan Creagh, who has taken a position at theCity University of London.

An Adelaide University graduate, MsMacIntosh is currently Executive Director,Corporate and Organisational Developmentat the Department of the Premier andCabinet, where she has worked since 1993.Her previous positions in the Departmentwere as Director of Executive Services andProgram Coordinator, and Director of theCabinet Office.

Ms MacIntosh is also a former Director ofthe Department of Labour andAdministrative Services and has held seniorpositions in the Department of Personneland Industrial Relations and the South

Australian Health Commission.

The Vice-Chancellor, Professor CliffBlake, said he was pleased that theUniversity had attracted a senioradministrator of Ms MacIntosh’s calibre.

“Her extensive experience in top-levelmanagement positions makes her avaluable asset to the University,” he said.

STUDENT leaders at AdelaideUniversity have urged the people ofAdelaide not to blame Islamic membersof the community—including students—for the recent tragedies in the UnitedStates.Adelaide University’s Students’ Associationand the Islamic Students' Society have jointly condemned the recent terrorist attacks in America and urged all SouthAustralians to remain calm and tolerantduring this time.

Why we’re feeding the public on child nutritionWIDESPREAD obesity is a curse ofmodern times, and also of developedcountries where food is plentiful andavailable to all. Ironically those are thecountries where education is alsoavailable to all. You might expect that theeducation would help reduce the obesity.Nutritional advice is, in fact, freely available,but often in the form of slimming advice forthe already overweight. New diets—somesound, many absurd—grace the pages of manymagazines, but proper nutritional attitudes arebest developed not in adults anxious abouttheir body images, but in the very young, alongwith other important life skills.The National Child Nutrition Program is acommunity grants program funded by theCommonwealth Department of Health andAged Care. It is aimed at boosting childnutrition throughout Australia, and will assistaround 120 communities. Its many projectswill be delivered through collaborativepartnerships with local organisations, todevelop innovative strategies which improvethe nutrition of pregnant women and children.In the first round of applications there were93 successful projects. Four of them in SouthAustralia aim to develop sound nutritionalattitudes in children from 0 to 5 years of age,with most of their efforts directed at childrenin child-care centres. The four projectscombine the efforts of about a dozenpartners, of whom Adelaide University isone.The Start Right – Eat Right Child CareNutrition Award Scheme has its two-yearpilot project in Adelaide. It is designed tostrengthen the capacity of childcare centres toprovide a nutritionally adequate menu, goodhygiene practices and a supportive andenjoyable eating environment for children. Itwill provide training and support for centrecooks and managers.

Talking to Families About Nutrition willincrease the awareness and understanding ofnutrition in families with young children byworking with community dieticians andnutritionists to develop ongoing strategiclinks at the local level.The Healthy Food Choice in Family DayCare Project will work to increase thecapacity and confidence of Family Day Careproviders to promote healthy food choices tochildren in their care and to their families.The youngest children will be served byAdelaide University’s Breastfeeding inPublic: Improving Community Attitudes.This project aims to improve communityacceptance of public breastfeeding throughthe accreditation and promotion of businessesthat are friendly towards breastfeeding.“The objective of this study is to pilot theaccreditation and promotion process in threeareas in South Australia: Whyalla, Elizabethand Mount Barker,” said Rose Boyd, theproject manager (Department of PublicHealth).“The project will then be implementednationally in 2002, with the aim of accreditingbreastfeeding-friendly public places andbusinesses throughout Australia,” she said.The project, developed in collaboration withthe Australian Breastfeeding Association,involves the distribution of a sticker that canbe shown by restaurants and other businesses.“This marketing aid will show mothers thatthey are welcome to breastfeed at the venue,”said Ms Boyd.“At the same time it will raise the awarenessof the community that breastfeeding isacceptable in public.”Details of the program and projects can befound at www.health.gov.au/pubhlth/strateg/childnutrition/index.htm.

THE ANNUAL jazz concert onThursday, October 11 in Elder Hallpresents Adelaide University's mostoutstanding jazz ensembles andperformers in a spectacular finale to the2001 Elder Conservatorium ConcertSeries.Jazz – Then and Now, compered by theABC's jazz broadcaster Jim McLeod,weaves together a tribute to a century ofvocal jazz styles.

THE TERM “science communicator”puzzles some people. Sciencecommunicators can be teachers,journalists, broadcasters, authors, orwork in organisations that need peoplewho can make difficult science materialaccessible to the public. They share aconviction that science, its potential,methods, even its hazards, should bebetter understood by a wider audience.It couldn’t have happened at a better time.On the one hand, we are bedevilled bypseudo-science and new-age nonsense, suchas healing crystals, numerology and creationscience. On the other hand, real scientificdevelopments now occur so fast that theyoutpace society’s ability to respond. Stem cellcultures, genetic engineering, internetcommunication and cloning all highlightscience’s extraordinary progress, but alsosociety’s ponderous inability to cope with itsethical and legal consequences.

Science communicators have also emerged atthe right time to play an important role in thetransformation of our universities. Onceadequately funded to allow research in allareas, they must now increasingly find moneyfrom fee-paying students, corporate links andpatenting the products of academic research.

This works well if you research somethingmarketable, like biotechnology, but if yourresearch involves classifying seaweeds, or theecology of snails, you may have troublewinning scarce money for it no matter howgood your science; for as the emphasis shiftsto entrepreneurial activity, it’s not scholarshipalone that counts but corporate links andbusiness savvy. Unfashionable science haslittle place in the corporate world.

Despite the dubious message that sciencethat really matters is science that pays, it hascreated openings for science communicators.To attract corporate dollars, universities mustbe recognised as research high-fliers, andpromoting research is what sciencecommunicators do. Several universities andbodies such as Cooperative Research Centresand the CSIRO have them now, to put outgood science news to the media linked totheir organisation’s name.

Traditionally that is done through a mediarelease faxed to newsrooms, radio shows,freelance journalists and so forth. Thenewsroom’s chief of staff distributes incomingfaxes of interest to waiting reporters. Oneday’s faxes may contain hundreds of stories,but only a few will be used.

Freelance journalists don’t want the story thateverybody else has, so they research their ownstories, and find the internet and worldwideweb invaluable. Some websites simply postscience media releases. Science reportersaccess them for unlimited stories, packagedand ready to go.

These websites are equally valuable if you are ascience communicator trying to get your storyout. No longer at the mercy of chiefs of staff,it is there for any freelance reporter to use.But there are now more sciencecommunicators writing these stories, and whilethe number of stories being used by the mediais also growing, it is not in proportion to thenumber being produced. Which then survive?Those considered the strongest stories, whichoften means those with the strongest angle.Five angles apply particularly to sciencestories: the release of a study’s finding; acontroversy, especially between specialists;the quirky or unusual (perpetuating the‘eccentric scientist’ stereotype); the GuinnessBook of Records angle (biggest, mostexpensive, any superlative); and while mostresearch involves discovery, many journalistsuse that angle alone, with ‘breakthrough’ thecliché of the science story.But these common angles are now beingovertaken by another; that of the science thathasn’t taken place. Science stories oncefeatured discoveries that had been made.These days, they often feature research thatmay lead to an important advance, with thehypothetical promise of this advanceproviding the angle, making the story work,and occupying a large proportion of it. Evenmore hyperbolic is the story announcing alarge grant to begin research that may lead toa great advance of conjectural value.Darwinian processes of natural selection arenow at play in the science media. Only the“strongest” stories are selected for. Theyinclude quirky, controversial and extremestories but, increasingly, speculative storiesthat exploit where a discovery may lead oneunspecified day, if things turn out as hoped.

There is nothing wrong with this as such—the scientists and their research are good, thestories legitimate—but the balance is shiftingas honest records of solid achievement giveway to exciting but speculative appraisals ofwhere preliminary research (or grants toundertake it) might one day lead. Whatreaders take from them is not so much thescience in them but conjectural inferences ofwhat it may become. Science reporting isstarting to resemble science fiction.To test this perception, I punched the words“stem cell” into the search engine ofEurekalert, perhaps the most influentialscience release website in the world. Itturned up 243 stories containing those words.The engine can rank them according toseveral factors; I chose date first, and read theten most recent stories.Only three avoided the speculative angle,dealing respectively with anatomy, ethicalissues and why cloned cells die. The otherseven, while describing good research, werenewsworthy because of where that researchmight one day lead.

They claimed that there “may now be theoption of donor cell treatment”, it “may opena new door”, that stem cells “might one daymend damaged hearts”, “cure urinaryincontinence”, “treat a variety of diseases” or“theoretically repair any organ”. It’s possiblyall true; we’ll have to wait and see. In themeantime, these science stories ride to anuncomfortable extent upon their conjecturalangles.That is not just my value judgement. Searchengines can tell you the degree of relevance ofwhat they find, expressed as a percentage.The average relevance of the sevenspeculative stories was 80%. By contrast, thepurely factual stories rated 63%. Eightypercent against 63%? It’s a telling differenceif you want a winning edge that gets yourstory to air. The clear lesson is to use a strongspeculative angle of the promise of things tocome, with the underlying science a lotfurther down in the text.The search engine can also rank storiesaccording to this relevance. Another searchfor the 10 most relevant stem cell storiesaveraged them at 87%. Again, only threelacked the speculative angle, announcing acall for public comment, a Congressionalbriefing and stem cell injections that helpedLupus sufferers.The other seven stories, in varying degrees,used the speculative angle of where stem cellsmight one day cure: spinal cord injury,Alzheimer’s disease, strokes, Lou Gehrig’sdisease, diabetes, immune disorders,Parkinson’s disease, cancers, heart failure,spinal paralysis, multiple sclerosis and othertherapeutic applications. One story cautionedthat this experimental procedure “may work inhumans, but there is still a long way to go”.So what’s the problem? News is reallyentertainment, so surely anything goes… We’rejust doing our jobs?… There is still good sciencebeing reported…

These are all reasonable excuses or, if you like,legitimate claims. But surely, in thedeveloping field of science communication,we may not want to see it continue this way.If this is how the world’s most consulted andmost respected science news websiteevaluates its top stories, what comes next?Just as universities are being edged towardsresearch with a commercial payoff, sciencecommunicators are being eased intoextrapolating from scientific findings intospeculation, hyperbole and even fantasy.There is good science in these stories, but stripthe hyperbole away and much of the science isslighter than that behind the classification ofseaweeds or ecology of snails. Add thehyperbole, and stem cells will beat algae andmolluscs to news broadcasts every time.Perhaps, as specialist communicators, weneed a certain code of practice. Maybe weshould better separate the science in ourreports from conjecture about its significance.Perhaps we should more often join that lonereporter in cautioning, when we predict thefuture benefits of today’s research, that “westill have a long way to go”.And, while we reassure the public that we arethere to help them decipher the sometimescomplex but always exciting world of science,we might remind them that science issupposed to encourage healthy scepticismabout dogma, and that reports from sciencecommunicators, just as much as the claims ofthe scientists they feature, should be treatedwith a healthy dose of that.

Wine industry wins national research bidAUSTRALIA’S wine industry capabilityand research effort is to be boostedthanks to a major Federal Governmentgrant to an Adelaide-based consortium ofwine researchers, including AdelaideUniversity.Under the Federal Government’s MajorNational Research Facilities Program, theCommonwealth Government will contribute$4.5 million and the South AustralianGovernment $700,000 to the establishmentof a ‘National Wine Research Cluster’.An additional $2.5 million will becontributed by partners in the bid, includingthe Australian Wine Research Institute,CSIRO, the South Australian Research andDevelopment Institute, Adelaide University,the Grape and Wine R&D Corporation andCharles Sturt University.The Cooperative Research Centre forViticulture will contribute in-kind support aswill all other partners.“This facility will strengthen the nationalcapacity to perform grape and wine researchin support of a rapidly expanding wineindustry,” said the Director of the

Australian Wine Research Institute, ProfessorPeter Høj.“There is funding for both buildingexpansions and purchase of state-of-the-artanalytical, fermentation and harvestingequipment.”Mr Robin Day, a Director of Orlando-Wyndham and a member of the bid team,said the availability of such new infrastructurewas crucial and would secure better returnson public and private funding in industry-focused research.“It will deliver knowledge, recommendationsand services, which allow wine industrypractitioners to manage vineyards andwineries to specified market requirements,with consequent growth in exports andemployment, largely in regional Australia,”he said.CSIRO Plant Industry Deputy Chief DrNigel Scott said the successful bid was a realcoup for the wine industry nation wide.“This facility makes the Australian wineindustry’s commitment to a knowledge-basedapproach to wine production even morepowerful,” he said.

A primary aim of this program is to developimproved barley varieties that can producebetter malt to make more and better qualitybeer. This puts Dr Evans in an enviableposition: “It’s a tough research job, butsomeone has to do it,” he said.

In assisting barley breeders, Dr Evans hasbeen identifying and characterising maltfactors that impact on beer quality and theefficiency of the brewing process.The projects being investigated by DrEvans's group include the influence of maltprotein composition on the formation of beer

foam and haze (cloudiness).Brewing process efficiency is being improvedthanks to the investigation of maltcomponents that influence beer filtration,lautering and the production of nutrients thathelp in yeast fermentation.Dr Evans's research has been generouslysupported by funds provided by the GrainsResearch and Development Corporation overthe past nine years.A feature of his work has been collaborationwith research teams from the majorAustralian brewers and maltsters. Adelaide wins$11m in latestARC roundMORE money for new research projectsis coming into Adelaide Universityfollowing the recent announcement ofthe latest grants from the AustralianResearch Council (ARC).Adelaide has reaffirmed its position as aleading national research university, with$11 million in total for research projectsand infrastructure over at least the nextthree years.Funding announced for Adelaide includes:$8.9 million in large "Discovery" grants for39 research projects (an increase on lastyear of $1.8m)*; $1.1 million towards newinfrastructure, equipment and facilitiesbased at Adelaide University; $927,000 fornine research projects linked to industrypartners; $124,000 for three researchprojects linked with overseas universities.

At a State level, Adelaide Universityreceived 39 of the 56 Discovery grantsawarded in South Australia.

"Adelaide University continues to performstrongly on a national level for majorresearch funding," said the Vice-Chancellor, Professor Cliff Blake.

"It is pleasing to see an increase in our largegrant monies, particularly when publicfunding for research is so tight. TheUniversity's reputation for quality researchhas been strengthened by the fundingannouncement," he said.

Projects funded at Adelaide University inthis latest round of grants cover many of theUniversity's areas of strength: science(including physics, genetics, chemistry,physiology, geological, agricultural andenvironmental sciences), mathematics,engineering, computer science andtelecommunications, psychology, archi-tecture, and humanities and social sciences.

“Shrivel of the berry obviously involves somewater transfer at some point, or an imbalanceof water transference; there’s more waterleaving the berry than is coming in. Sounderstanding where the water goes andwhether or not it’s related to areas in whichI’ve already done research is something I findpretty exciting.

“Down the track I'd like to do more researchon measuring water relations in grapevines,and to find ways in which growers can moreconveniently monitor how water-stressedtheir vines are.

“This is the message I’ve been getting fromgrowers, that there's a gap in how they canassess the water status of vines. That's reallyimportant because if you've got to decidewhether or not to put on irrigation on aparticular day you need to know if the vinesactually need the water. Growers could savea lot of money on water if they had moreaccurate information about that. I’ve got afew ideas up my sleeve about how we can dothat.

“There are techniques that researchers use tomeasure water status but they’re actually quite complicated techniques; there’sno way that you could monitor a wholevineyard with these techniques. So the

challenge is to find a way to measure thewater status of vines to give growers a better idea about when to water and whennot to.

“The other major things are salt tolerance and drought tolerance in vines. We all know that the water we're getting forirrigation in the Riverland is getting more saline, and so sooner or later we'regoing to be looking at developing more salt-tolerant root stocks.

“Research into this has been around for quitea while and there are already some salt-tolerant root stocks, but there are somedisadvantages and the challenge there is todevelop much better ones, and extend that todrought-tolerant root stocks.”

How do you see the future of the industry, and itslinks with science?

“There’s room for much further growthsupported by high quality research anddevelopment. However, the amount ofmoney that's being invested into R&D into viticulture and oenology in Australia isfairly small by world standards. The industryare flat out reinvesting into capital tomaintain supply for our growing exportmarkets.

“The industry supports research and

development through a levy on wine grapesthat is matched by the Federal Government.The Grape and Wine DevelopmentCorporation manages this component ofR&D.

“The industry puts significant funds into my position, as they have done alsowith research grants and other positions, andalso into the Hickinbotham RoseworthyWine Science Laboratory, the AustralianWine Research Institute and the CRCViticulture here on the Waite Campus.

“So obviously the industry is keen to supportresearch and development because they knowit will help them in the long-run, but I thinkthey would like governments to invest moreas well.

“As far as I know, the industry is also keen to see more basic research going on;they're not just interested in specific appliedprojects, they do understand that basic,fundamental scientific research mustunderpin the applied research. So I’ve foundthe industry to be very progressive, and notjust in research: the industry is veryprogressive when it comes to education. I getthe feeling they want us to train students asgood thinkers and scientists, to give them abroad range of skills which they can use toadapt to the various problems they will facein their chosen fields.”

FOOD writers need to cast their critical netbeyond restaurants to the supermarkets,according to Adelaide University gastronomylecturer Dr Barbara Santich (pictured).

Dr Santich plans to tell food and wine writers ata University-sponsored forum at this month’s

Tasting Australia that they should be "roadtesting" new food products, in the same waythat they review restaurants.

Adelaide University is one of the major sponsorsof Tasting Australia, which runs in Adelaide from5-14 October.

"I would like the forum to reflect on the roles andresponsibilities of food writers and I think one ofthese responsibilities is to evaluate foodproducts and prepared meals sold insupermarkets," she says.

"Just as diners eating out can select a restaurantbased on published reviews, so those 'eating in'should be able to choose meals or mealcomponents according to the recommendationsof informed palates. The objective would be topromote eating for pleasure—and enjoying ameal is indeed one of life's pleasures."

She also suggests that a trained palate might beusefully engaged before some food products aremade publicly available.

"I am critical of some new food products," shesays. "There needs to be proper and expertevaluation before new foods are marketed."

Dr Santich will develop this argument at the

"Eating into the Future" forum, on October 13—part of the International Food and Wine Writers’Festival which in turn is one of the key events ofTasting Australia.Other speakers at the forum include AdelaideUniversity history Associate Professor RobertDare. Dr Dare plans to predict the end of the20th century "culinary enthusiasm".

"In the future, the refrigerator and themicrowave will complete their triumph over thegarden and the stove: our food will be grownanywhere and nowhere, prepared out of oursight by anyone or no-one, and consumed atanytime in the undifferentiated eating spaces ofwork, street and playground," he says.

"We will in other words take fuel rather thanshare meals, and when that happens, we willrecognise the long twentieth century of culinaryenthusiasm for what it was—a glitch in time."

The forum is just part of Adelaide University’sextensive involvement in Tasting Australia.

Run jointly with Le Cordon Bleu, the program will take in its first students next year and will be offered entirely on-line as well as on campus.

The Gastronomy program has been developed forpeople who have a passion for the study ofgastronomy and for professionals seeking relatedcareers in hospitality, media or tourism.

Twenty inaugural scholarships—each worth$10,000—will be offered in 2002 for studentsstudying on campus, reducing the cost of theprogram to $20,000.

THE University’s Research Centre for theHistory of Food and Drink is gainingincreasing international attention.

Founded by Dr Lynn Martin in 1997, at the timethe centre was the only one of its kind in theworld. The main purpose of the centre is thepromotion of research in the history of food anddrink from production to consumption, in theirrelationship to issues such as politics, society,the economy, environment, health and culture.The centre also serves to promote the fine foodand drink available in South Australia.

Dr Martin says the centre’s work has sparked arash of investment in similar centres overseas.

"There has been a world-wide development ofinterest in food and wine," he says. "AdelaideUniversity’s History Department has been on thecrest of that wave.

"Since 1997, the European Union has sponsoredthe establishment of a similar centre inStrasbourg, which had its firstsymposium in June. A Canadianacademic has also recentlyestablished a similar centre, andin November, the AmericanCentre for Wine, Food and theArts will be opened."

IT'S said that the proof of the pudding is in theeating. And this month, the internationalmedia will be the proof of research duringAdelaide University's "Science on a Plate"tour.

The tour, part of Tasting Australia, takesinternational media through some of the brilliantwork conducted by the University's Faculty ofAgricultural & Natural Resource Sciences.

Supported by producers including Maggie Beer,Australian Native Produce Industries, CoopersBrewing and Temple Bruer Wines, and cateredby Adelaide’s own Ann Oliver, the tour promisesa full day—and a full tummy—to remember.

Tasting Australia generates millions of dollarsworth of promotion for the State and hundreds ofstories in newspapers and magazines devoted tofood and wine all around the world. The mediarepresentatives who come here are very curiousindeed about the myriad research and educationactivities at Australia’s premier food and wineuniversity.

Their tour will include tastings of products suchas beef, legumes, olive oil, barley, chilli, wine,native spices and grains—all of which AdelaideUniversity is researching. The tastings will beheld in the Plant Research Centre on the WaiteCampus where the University's research innative flora will also be on show.

The media will view the unique ‘Chemical Nose’Facility for Aroma and Flavour Analysis (one of only five operating worldwide andhoused in the Hickinbotham Roseworthy Wine Science Laboratory), hear presentationson current research in wheat testing andmalting, and have a chance to meet futurewinemakers among the University's students.

After their tour, members of the media will joinresearchers and producers for a very speciallunch devised by Ann Oliver. Her menu willfocus on the produce currently being researchedat the Waite and Roseworthy campuses.

Ann has created special recipes for Triticalepocket breads, to serve with babaganoush andtabouleh, chicken roasted with harissa andserved with couscous and pickled lemons, asauce of Australian blood limes and chilli, andmuch more.

Triticale will also feature in a rich fruit loaf,and Ann says she’s excited by the opportunity touse this grain, which is rather like a crossbetween wheat and rye and has a sweet,aromatic flavour that lends itself to all sorts ofbreads and cakes.

The wide-ranging work of the LivestockSystems Alliance at Roseworthy will berepresented by meat tastings on the tour and arange of top-quality products at lunch.

Radiocarbon dating aims tostamp out “Chateau de fraud”WINEMAKING fraud could beuncovered by radiocarbon dating,following a study by experts fromAdelaide University and the AustralianNuclear Science and TechnologyOrganisation (ANSTO).The work is the result of collaborationbetween team leader Dr Graham Jones of theUniversity's Department of Horticulture,Viticulture & Oenology and Dr EwanLawson and Dr Claudio Tuniz of ANSTO'sPhysics Division.Dr Jones said their studies showed thatcarbon dating—the method better known foruse on the Shroud of Turin and ancient relicssuch as rock art—can also be used for datingand authenticating recent wine vintages.“Detecting unauthorised additives and otherwine forgeries is of growing importance tothe industry,” Dr Jones said.The method relies on measuring tinyamounts of Carbon 14 (14C) in materialswhich were once in equilibrium with theatmosphere.Incorporated within carbon dioxide,relatively large amounts of 14C were releasedas a result of atmospheric nuclear weaponstesting during the 1950s and early 1960s.The uptake of this atmospheric carbondioxide by plants means that plant derivedproducts can be accurately dated.“The amounts of 14C to be found in plantmaterial at particular dates are known fromstudies of tree rings and from atmosphericcarbon dioxide samples,” Dr Jones said.“In the case of wine, sugars and other

components, such as flavour compoundsaccumulated in the grape berries during theirripening, contain this age information.When the grapes are fermented into winethis information is retained in the alcohol andmany other wine components.”Atmospheric radiocarbon levels surged afternuclear testing during the Cold War. Duringthe bomb explosions the electrically neutralparticles, neutrons, were generated and

interacted with atmospheric nitrogen to formthe carbon radioisotope.

Dr Jones said an interesting discovery as part of this research was that the amount of14C in the southern hemisphere peaked ayear or so after it peaked in the northernhemisphere.Because Carbon 14 is found in one part forevery trillion (one thousand billion) or less ofother carbon isotopes, it requires extremelysensitive measurements. Thesemeasurements were overseen by Dr Tunizand Dr Lawson of ANSTO's AcceleratorMass Spectrometry group. AMS is anultrasensitive analytical technique based onthe use of an ion accelerator such asANSTO's Australian National TandemAccelerator for Applied Research(ANTARES).Most of the measurements of the vintagescoincided closely to their labelled dates.However, the researchers are doing furtherwork to check the results of one samplewhich showed a significant discrepancy withthe vintage printed on the bottle.

Dr Jones noted that the proportion ofCarbon 14 to ordinary carbon (carbon 12) incarbon dioxide in the atmosphere is decliningto the point where the method may becomeunreliable in about the next 10 years, unlessmore sensitive equipment is devised.The study was partly funded by theAustralian Institute of Nuclear Science andEngineering and the Australian ResearchCouncil. Mr Quan Hua and Dr Ugo Zoppiof the ANSTO AMS facility provided muchof the technical support for this work.

WINE research and education in SouthAustralia will enter a new era whenAdelaide University establishes acommercial vineyard at Glenthorne Farmin partnership with BRL Hardy.Glenthorne is a 205-hectare property atO’Halloran Hill in Adelaide’s southernsuburbs. Previously occupied by the CSIRO,Glenthorne was bought from theCommonwealth by the State Government in1998 and handed over to the University inJune this year. Development work on the siteis expected to begin next year.BRL Hardy will manage the vineyard andsale of fruit, more than half of which will beavailable to other winemakers. The vineyardis expected to begin generating income forUniversity research from the third vintage.Professor Steve Tyerman from theUniversity’s Department of Horticulture,Viticulture and Oenology said the venturewas an exciting development for theUniversity and the industry as a whole.

“The flow of profit from business activities into viticulture research anddevelopment will lead to a much-needed shotin the arm for viticulture and will allowgreater integration with wine making R&Don the Waite campus,” he said.“The expected flow-on into education andtraining will also be a positive outcome.“The five hectares set aside for Universityresearch now needs an injection of capital torealise our vision of a hi-tech, electronicallymonitored vineyard in which long-termexperiments can be conducted. Theequipment will allow researchers to monitorexperiments from remote locations. It willalso allow senior students to study real-timevine physiology and growth.“Various government agencies and the privatesector will be approached over the next six to12 months to invest in this excitingdevelopment that will underpin sustainablegrowth in the wine industry,” he said.

The grain is sought as a high quality stock-feed, particularly by the dairy industry, andcan also be used in specialty food products.

TRITICALE LOAFMakes 2 large loaves

50g fresh yeast500ml warm water50ml your favourite extra virgin olive oil300g strong flour650g triticale flour + little extra for working the bread30g sea salt

Whisk the yeast, water and oil together until the yeast is dissolved. Add the flours andwork with a dough hook until it starts to come together and then add the salt andwork the dough until it comes together in a smooth, slightly sticky ball and the sideof the bowl is clean. Cover with plastic wrap and allow to double in size.Put a small amount of the triticale flour on your work bench. Cover a baking sheetwith baking parchment. Punch the dough down and scrape it onto the prepared worksurface. Divide it into two and knead it out into two oval shapes. Roll it through thicktriticale and place them well apart on the prepared tray. Make deep slits about 2cmapart into the loaves and allow them to prove.Pre heat oven to 200°CGive the loaves a light spray with water and bake until well coloured and crunchy onthe outside.TIPThis bread has the most wonderful flavour and is just gorgeous slathered with butterand cheese or dunked in olive oil. ALONG much of the River Murray,traditional crops are in trouble as fruitgrowers try to deal with changing tastes,competing imports, saline soils and riverwater that has grown more contaminatedas it has become less available.Sustainability is now the measure of crops ofthe future, with Bookmark BiosphereReserve near Renmark dedicated toproviding examples of how social,environmental and economic sustainabilitycan be made compatible.

On its first open day, held earlier this year,visitors inspected a number of projectsranging from restoration of degraded pastureand wetlands to experimental industries ofthe future. One of the most popular field tripswas to look at native floriculture.

This trial project is exploring how to develop,cultivate and market Australia’s native flowersas a sustainable paying crop; one that requireslittle water, and is suited to the localenvironment.

There are many native plants to choose from,all with their distinctive appeal, but mostwith other characteristics that make them lessthan ideal for the floriculture market. Pearlbluebush is beautiful, but its stem length isshort. Correa reflexa is beautiful, too, but itsflowers grow along the stem, not at the tipswhere florists want them. Those problemspose a scientific challenge.

Dr Kate Delaporte from AdelaideUniversity’s Department of Horticulture,Viticulture and Oenology is intimatelyinvolved with Bookmark. Her work involvesthe selection and cultivation of native plantsthat show promise for floriculture, andBookmark provides her trialling ground.

"When selecting a species for development,one of the primary things we look at is wherethe flower is located on the stem," said DrDelaporte.

"Most eucalypts that I’m working with havebuds that start to appear 12 months beforethey flower, so when they first appear they areat the end of the stem. 12 months later, thestem has continued to grow, so the flowers are20 to 30 cm down the stem. Florists requireflowers to be at the end of the stem, so herewe have a problem.""You’ll go through a population of say 200plants and you pick out the five with the mostterminal flowers," she said. "You’ll take those

five plants and propagate from them, andslowly work you way to achieving most of thecharacters you want. It’s the same with wheator rose breeding; you’ve got a list of charactersthat you are trying to achieve, and you workyour way through the entire population tofind those characters."Is the struggle worthwhile? Floriculture canbe a very traditional business."The majority of the Australian market isdominated by European flowers; roses,carnations, gerberas and so on, and nativesare often perceived as being very masculine; afuneral flower, not really romantic, soft ordelicate," said Dr Delaporte. "It’s a slowprocess but very very rewarding when you canget a plant so that someone else says ‘Hey,that’s a great plant,’ and you can say ‘I madethat!’ That’s really good."A growing appreciation of Australian nativeplants has seen them adopted and grown inmany gardens, but making the leap tofloriculture is harder. Partly because of theirnovelty value, native flowers are oftenregarded more highly overseas than they arein Australia.Dr Delaporte was awarded a ChurchillFellowship to travel overseas and evaluate theexport potential of native flowers."My Churchill Fellowship sent me off toMediterranean countries because I wanted toinvestigate what they were doing in terms ofAustralian native plants; whether they likedthem and what the market was," said DrDelaporte. "There is a big demand, but to getflowers from Australian to European marketsis very difficult," she said.Dr Delaporte cites Bookmark as aninteresting area because of its isolation fromflower markets. Crops grown there will haveto be trucked to Sydney or Adelaide forexport by air, a process full of logisticaldifficulties, but she has proposed a better wayto market our floriculture expertise."Australia might be better positioned tobecome a plant breeder and developer of newvarieties," she said. "It takes a lot less time,space and infrastructure to develop new plantvarieties, then propagate them and licensethem to be grown in other countries wherethey are very close to their market."Because the varieties will be registered withplant breeders’ rights, the breeder willautomatically get a royalty from every plantsold, and in some cases, even from every

bunch of flowers produced. For every plantsold you’re getting some money back, insteadof having the majority of the risk here inAustralia of growing the product and thentrying to ship it to Japan or Europe."The trial ground at Bookmark will eventuallygrow, as the reserve becomes a self-fundingfloriculture site. Most of the reserve consistsof native vegetation, which incurs few costs.Areas that were cleared long ago will now beused for crops of cultivated native plants thatDr Delaporte believes have real potential as anew industry."I am fortunate to be able to work witheucalypts in floriculture, thanks to theforesight of funding agencies and tocollaborative arrangements with Bookmarkand other industry players," said DrDelaporte.

"Research and development into newfloricultural crops will enable the expansionof Australian flora into the world market."Half the Bookmark area will be used fortesting and trials, the other half will soonstart producing income, and it is hoped thatultimately the 20 hectares will provide anexample of an ecologically sustainableindustry, providing grape and citrus growerswith examples of alternative crops that can begrown throughout the Murray Mallee districtand elsewhere where growing salinity anddeclining rainfall mean that dryland farmingnow requires alternative approaches.Dr Delaporte’s work will feature as one of 30stories in the series ‘Wetlands, Drylands,’ tobe aired on 5UV Radio Adelaide fromOctober 15.

MAJOR international resources groupBHP Billiton has committed $100,000 inresearch funding to Adelaide University'snew School of Petroleum Engineering &Management, which opens next year.A London-based executive of the groupannounced the commitment during a visit tothe University. Mr Keith Hunter, Presidentof Petroleum Project Development andOperations for BHP Billiton, said the$100,000 would be provided over 2002 and2003 to support research projects at theSchool.Professor Peter Behrenbruch, who becamethe first Head of the new School in Augustthis year, was formerly Chief ReservoirEngineer with BHP Billiton.“We were disappointed to lose Peter becauseof his experience and industry standing, butwe're confident that his appointment willprovide significant strengths to the School,”Mr Hunter said.“I have been able to see the progress beingmade with the new building for the Schooland discussed plans for its teaching andresearch activities with members of its Boardof Management.

“Adelaide University is on the right path withits emphasis on comprehensive degree-levelprograms, research programs and specialtraining courses focused on oil and gasindustry needs. We are looking forward toemploying graduates from the School in fouryears time,” Mr Hunter said.

“We have also asked Professor Behrenbruchto develop some in-house courses forengineers already employed in BHP Billiton.”

Adelaide University’s Vice-Chancellor,Professor Cliff Blake, said the commitmentfrom BHP Billiton was the first from aprivate source since Australian energycompany Santos Ltd announced itscommitment to the School in 1999.

“The Santos gift of $25 million forestablishment of the School was amagnificent beginning for the project, layingthe foundation for the School for the next 20years. However, the company and theUniversity intended the School to operate asa major resource for the benefit of the entireoil and gas industry,” he said.

“We welcome this commitment from BHPBilliton as an indication that this intention isrecognised.”

Engineering a career pathfor women: top studentMORE girls would study engineering atuniversity if they were made aware of thecareer opportunities the discipline offerswhile they were still at high school,according to one of Adelaide University’stop female engineering students.Department of Mechanical EngineeringPhD student Kimberley Clayfield said shebelieved the major problem with attractingyoung women to engineering is that youngwomen (and to a lesser extent, men) aregenerally unaware of what a professionalengineer does, while they have clearpreconceptions of what other professionalsdo, such as doctors and lawyers.

“Strong engineering role models likeastronaut Dr Andrew Thomas do a lot toimprove the public perception of theengineering profession, but there is still muchmore to be done,” she said.

“Engineers seem to rarely receive publicaccolade, and while most people couldrecognise the contribution civil engineers made to the new ConventionCentre extension, for instance, far fewerpeople realise that one of the recentachievements of a group of mechanical andchemical engineers was the design of thecombustion system of the Sydney 2000Olympic torch.

It is this sort of information that needs to bemore widely conveyed to school students.

“In my case, I had always been interested inspace, but going through school I didn’t haveany ideas about which courses of study wouldlead to me getting a job in the spaceindustry,” she said.

“Then one day I heard an astronaut beinginterviewed on the radio, and that’s when Ilearnt that Mechanical Engineering providedone possible pathway.”

Ms Clayfield, 23, is currently studying for herPhD in Fluid Mechanics, with a long-termview of applying her research in the spaceindustry.

She has gained significant national attentionfor her work at Adelaide University, beingnamed as a national finalist in the HigherEducation category for Outstanding Womenof the Year in Non-Traditional Areas ofWork and Study for 2001, and also being oneof three nominees for the South AustralianYoung Professional Engineer of the YearAward 2001, awarded by the Institution of

Engineers, Australia.

In addition to her studies, she is Chair ofAdelaide University’s Student Branch of theAmerican Institute of Aeronautics andAstronautics, is one of the coordinators of theSouth Australian Space School, and is theonly female member of the ExecutiveCommittee of the Young Engineers Australia(South Australia Division).

She also is heavily involved in the promotionof careers in both engineering and the spaceindustry, a responsibility she views as veryimportant.

“I really enjoy going out to the schools andtalking to the girls, to let them know that ifthey are interested in engineering that theyshould go for it,” she said.

“I had such a good time here when I wasstudying engineering that I would like forother girls to go through the same sort ofexperience that I had, and for them to know that engineering can be a reallyexciting, challenging and personallyrewarding career.”

WINE students at Adelaide Universityare learning the international language ofwine—French—in an innovativeprogram designed to further enhancetheir already world-class qualifications.Twenty-five fourth-year Oenology studentsare undertaking an intensive semester-longTechnical French course which will see themtake a basic grasp of French into their careersin the wine industry.

Course coordinator Dr Jean Fornasiero saidthe course began in 2000 as a result of studentdemand and was an instant success, pavingthe way for the 2001 course which finishes atthe end of the year.

“It was very much driven by student demand:students are increasingly wishing to broadentheir professional experience in places likeFrance, and learning the language is reallyimportant in their professionaldevelopment,” she said.

“However, it’s a relatively short course andthere’s only so much we can teach in thatamount of time.

“A lot of the students have no previousknowledge of the French language, butbecause they are studying oenology they havea fair idea of the French wine regions likeBordeaux and Burgundy, so for the firstsegment of the course we build theirvocabulary up around that.“Other technical aspects of wine-making wecover include things like wine tasting, theclassification of wine, and how to read a winelabel.

“The second segment of the course is devotedto general conversational and writing skills.This is taught by Carolyn Stott, who was oneof the pioneers of the first course, and who isalso responsible for inviting guest speakersfrom the wine industry.”Some of these speakers include executive

chairman of Mount Adam Winery, AdamWynn, and winery manager of OrlandoWyndham’s Rowland Flat operations,Andrew Miller.

One of students in the current course, JaneEgerton, said she was finding it to beextremely beneficial.

“The course is very well structured with twoseparate classes: the language class where thefocus is on grammar and aural, and a readingclass where the focus is more oncomprehension, and in particular readingfrom wine industry journals and learningwine-specific vocabulary and jargon,” shesaid.

“The language component of the course givesyou a good basic understanding of some ofthe more salient grammar points, a list ofeveryday vocabulary and some practice withaural skills to assist you in getting by witheveryday life in France.

“Equally importantly, the reading class givesyou the ability to pick up a wine-relatedarticle or journal and be able to identify keywords from it, and hence get anunderstanding of what it’s about, rather thanan ability to provide a word-for-wordtranslation.

“These are skills that I believe I will havewhen I complete the course and that will beof immeasurable benefit to me when Iattempt to do a vintage in France next year.”

Ms Egerton said she thought it wasimportant for Australian wine students tolearn French due to the evolving nature ofwinemaking globally.

“The profession of winemaker has evolved tothat of a ‘flying winemaker’,” she said.“Many winemakers will do a vintage betweenJanuary and May in the SouthernHemisphere, and then leave for north of theEquator and do another vintage commencing

in September.“An increasing number of winemakers nowtravel to wine-producing countries other thantheir own, and a result of this is the sharing ofideas which is a great thing for the industryand the wine-lover.“It goes without saying that if you are anAustralian winemaker working in France andyou are able to speak the French language,you will maximise the contribution you makeat the winery, maximise the experience andknowledge you gain from the winery and also

maximise the enjoyment you reap from sucha working experience.“We’ve had two winemakers come and talk tous so far, Adam Wynn who has a proficientknowledge of French and Andrew Miller,who at the time had just enough French toget by.“They both enjoyed their winemaking stintsin France, but they also agreed that you getmore out of it with a command of thelanguage.”

Carol is aiming for a PhD in EnvironmentalPhysiology. Her PhD research projectfocuses on the responses of the surfactantsystem in the lungs of mammals to thermally stressful events. Carol plans toutilise the Bursary to work in overseaslaboratories, as well as attending a conferencein Africa.

Three other AFUW bursaries were providedearlier in the year to Adelaide Universitystudents: the Winifred E. PreedyUndergraduate Bursary ($2000), the NancyWebb Mathematics Prize ($300) and the StAnn’s Prize ($300).

The attacks on the World Trade Center andthe Pentagon produced an urgent demandamong media for academics with a specialistknowledge of the political and healthimplications. Dr Felix Patrikeeff and DrJohn Bruni from the Politics Departmentfeatured prominently in media coverage ofthe aftermath. Dr Patrikeeff gave a series ofradio and television interviews and alsocontributed a column in The Advertiser(September 18) warning of the dangers ofAustralia’s becoming a terrorist target. Someof the many interviews given by Dr Bruni toSouth Australian media found their way intooutlets further afield, including interstatenewspapers such as The Mercury in Hobartand the Courier Mail in Brisbane.

In interviews with Channel 7 (September12), 5AA and 5DN (September 13),Professor Sandy MacFarlane commented

on the psychological impact of the attacks.He told The Sydney Morning Herald(September 13) that the world could expectto face long-term public health issues. Up toone million people could be at risk ofpsychological problems and 20% of thosewould probably go on to develop “full blownclinical syndromes”, he estimated. DrMichael Roberts was interviewed by KenDickin on 5DN (September 12) aboutsuicide attacks and the reasons why peopleare willing to sacrifice their lives for a cause.Law student Yasmine Ahmed spoke toChannel 7 news (September 13) and 891 ABC(September 14) about the abuse suffered bysome South Australian Muslims since theattacks, but praised the support provided bythe University community.

The Tampa crisis and the wider issue ofasylum seekers in Australia was the other big

media story. Margaret Castles and lawstudent Catherine Hartley spoke to PhillipSatchell on 891 ABC about what it had beenlike to visit the Woomera Detention Centreand interview detainees. On RadioNational’s Asia Pacific (September 6), lawstudent Andreas Schloenhardt provided aninsight into the economics of peoplesmuggling, and predicted a rise in thenumber of asylum seekers arriving inAustralia. Dr Don McMaster spoke on5DN (September 7) urging people to attend alunch-time rally in Adelaide in support ofbetter treatment of asylum seekers.

The ACTU released findings by the Centrefor Labour Research which highlighted theemergence of a new social problem inAustralia: overwork. Centre Director DrBarbara Pocock was featured in The Age, TheAustralian Financial Review, The Sydney

Morning Herald, The Newcastle Herald andThe West Australian (all September 5), TheAustralian (September 8), and the WA SundayTimes (September 9). On Radio National’sHealth Report (September 10), ProfessorAlastair MacLennan from Obstetrics &Gynaecology said that 50% of the Australianpopulation used alternative medicines and20% had visited an alternative medicinepractitioner in the last 12 months.

Writing in The Age (September 5) John Gavafrom Law suggested it might be time toaccept that the modern university was“beyond redemption”. He argued against theuse of universities for vocational training andeconomically driven research and wrote of“recreating universities as places where thesmall numbers of Australians of all socialbackgrounds and ages who want to beeducated can be educated”.

PIANIST and student Anthony Hunthas been awarded a major prize at the2001 Adelaide Eisteddfod.Anthony took out the piano division of theDoris West Elder Conservatorium ConcertoPrize at the event.

Anthony, 21, is a third-year student atAdelaide University's Elder Conservatorium.It was his performance of Stravinsky'sConcerto for Piano and Wind which securedhim the prize of $1000.

The award is sponsored by Adelaide Universitythrough the Doris West Bequest and providesa rare opportunity for students to prepare andperform a piano concerto of their choice.

Anthony is a student of the Conservatorium'sAssociate Professor David Lockett, and iscurrently the holder of the Cecil PatrickGreenland Scholarship.

“Doris West was herself a lover of the pianoand a great supporter of music within theUniversity,” said Associate Professor Lockett.

“The Elder Conservatorium and theAdelaide Eisteddfod Society have bothdemonstrated long-standing commitment tothe nurture and promotion of young talent.

“The bequest enables us to encourage andreward outstanding young pianists, and weare delighted to be able to cooperate in thisvery practical way.”
