FREDDY HOT AND COLDROLLED INTO ONEIts name is Freddy (design Decoma Design) and it is the only electrical appliance for domestic

use that combines slow heat with fast chilling in a single unit. Freddy - available in either

a built-in or free-standing version - is the only temperature-reducing system designed for home

use (but professional in origin), whose chill cycle rapidly takes cooked food from 90°C to 3°C,

ready for storage in the refrigerator. And Freddy’s shock freeze cycle can even reduce

the temperature from 90°C to -18°C. During Milan Design Week 2011, Freddy was also

presented with some new functions: slow cooking, controlled thawing, regeneration of ready

meals and natural dough raising. The new slow cooking programme, the secret of many chefs’

success, gently cooks food to a maximum temperature of 75°C, enhancing the nutritional

properties and flavour of the dishes being prepared. The controlled thawing function rapidly

defrosts in an even way without partially cooking the food, while the ready-meal regeneration

function takes the cooked dish to a temperature of 65° and keeps it nice and appetising

as long as is necessary. Freddy’s natural dough raising function, finally, creates the optimum

temperature for the preparation of bread, pizza and croissants, ensuring that the finished

baked item is easier to digest, is flavoursome and has an appetising aroma.

Is the kitchen appliance and furnishings sector committed to protecting the environment or is it

using the theme as a source of inspiration and as a commercial rather than ethical strategy? There

can be no doubt that the appliance and furnishings sector has espoused the “green” cause, as

demonstrated by the latest washing, cooking and food storage products on the one hand and the

kitchen cabinetry construction on the other. But while efforts to be eco-friendly yield more

immediately tangible results that can be measured in terms of reductions in energy and water

consumption, when it comes to kitchen furnishings things are much more complex, and the “eco”

aspect appears in many different ways, for example in the use of structural panels that require

minimal quantities of formaldehyde (if any at all), water-based paints, recyclable or recycled

materials such as aluminium, glass and a new kind of compressed paper, or more generally the

greatest possible reduction in the amount of material used as a whole. So for kitchen

manufacturers, commitment to protecting the environment can take many different forms. The good

news is that many manufacturers do now seem to be on an “ecological mission”. Some firms do it in

a more obvious way by going “natural” and using materials like stone (sourced in Italy) and timber

(from certified managed forests), finished in a way that brings out the very. “Grooved” hand-sawn

wood, for example, clads the fronts of the Kalea from Cesar, or Progetto50 model, from Toncelli,

combining this special timber effect with cement (in the case of Il Cantiere), a genuine material with

a low environmental impact. Then there are those firms and designers who devote time and energy

to developing new prototypes for “eco”-systems as part of an effort to adopt a more systematic

approach to kitchen manufacture, in both environmental and social terms. One such case is Cooking

For All, a kitchen system designed by the team at the Snaidero Scientific Foundation, originally

devised for the visually impaired but usable by all, featuring bamboo fronts and complete with its

own indoor greenhouse. Matteo Thun, meanwhile, recycled the wood used on trade fair installations

to create La Cucina, where the archetypal concepts of hearth & home and conviviality are revived in

a way that harks back to a pre-technological age. The Artematica Vitrum system, with Base Invitrum,

from Valcucine, and the new Eco model, from Key, go all out in their environmental protection

approach: Key’s cabinet fronts and worktop are made of Paperstone® a highly innovative material

made from recycled paper, compacted and bonded using petrol-free resins, while Valcucine

continues to pursue sustainability using exclusively recycled glass and aluminium, and a

construction technique based entirely on the use of metal joints rather than adhesives. This offers

the added advantage that the kitchen can be readily dismantled at the end of its working life and

recycled by the firm itself, thereby setting in motion a virtuous cycle of use and reuse.

ECOThe very name hints at its “green” credentials, and environmentally compatible design is indeed the philosophy on which the new Eco kitchen is based. Eco is highly innovative from a construction point of view:the whole kitchen is made using a new and quite uniqueeco-friendly material called PaperStone®. Here PaperStone®

has been chosen in two versions: plain or slate, for the fronts; chequered - with modules in four colours -to clad the hanging hood and the top and sides of the island unit mounted on a recessed plinth. The fronts have a grooved fingergrip along the upper edge.

LA CUCINAA design based around three main themes: a hearth, a food preparation area and a foodstorage area. La Cucina is a concept developed by Matteo Thun that harks back to a bygone ageprior to mechanisation and extremely advancedtechnological features, when kitchens were simplerand revolved around the idea of conviviality. The archetype of the hearth and the idea of everything being visible are expressed throughshelves that ensure everything needed to preparefood is kept within easy reach. The wood usedcomes from discarded trade fair installations.

The work-islandblock is finished in “grooved” wood, cement and marble, which contrasts with the cabinetry whose fronts are finished in matt lacquerwork,regenerated leather or grooved wood. Presented on the occasion of the 50th anniversary of the foundationof Toncelli, the system is the result of extensive workover two years researching into ancient craft techniquesand new technologies, with the help of specialised craftworkers. The showpiece creations are the two “auteur”furniture creations, Cantina and Cocktail, featuring mathematically calculated inlaywork.

DNA URBANO SLABSStone Italiana’s green philosophy is expressed on the DNA Urbano collection, a series of slabs for indoor or outdoor use made using material swept up from public streets and produced in collaboration with CEM Ambiente, a firm that works with forty-nine municipal authorities in Lombardy. In fact the main component of the DNA Urbano slabs (75% for outdoor use, 55.70% for indoors) is the gravely earth that accumulates at the roadside which can be converted into a raw material, a process which as well as saving energy reduces waste disposal costs. The rest of the slab contains sand, quartz and polyester resin, the latter accounting for between 4 and 6.6% of the total, in line with Ecolabel certification requirements.

“The initial idea, for the design of Set, was

very much to do with the fact that I am a de-

signer who loves to cook: that’s why I focused

on developing a functional efficiency adapted

to the movements of anyone who actually has

to use a kitchen,” says architect Rodolfo Dor-

doni of Set, his new kitchen design project for

Dada. A system that is big on performance

features but has a sophisticated, traditional

soul, using warm materials such as canaletto

walnut, glossy lacquerwork and Carrara mar-

ble. On top of this there’s the use of a particu-

lar detail to give added aesthetic appeal, in

this case the handle positioned midway on

the side of the front, a kind of steel “ribbon”

folded in such a way that it adheres perfectly

to the 45° angle of the front panel. But this is

not the main concept on which the architect

dwells during the interview about Set.

Dordoni starts from his concrete approach to

kitchen design, and his desire to create a

kitchen-workshop, one that is trendy but also

caters to the real demands of the market.

“The Set system came about after discus-

sions with Dada, in which we asked the ques-

tion: what are kitchen furnishings all about

nowadays? They tend to be larger than life,

and offer all manner of functions.

And yet what the market really needs is a fur-

nishing system that fits into the spaces most

of us actually have at our disposal for a

kitchen, in other words a normal size, even if

the room itself is quite big. So the design of

Set began with studies into size. The result is

a kitchen that is in proportion to real require-

ments”.

Even the name is based on ‘real’ needs: “It’s

called Set because, just like a set of

saucepans or utensils this system can be con-

sidered as a series of elements that make up

a set, each individual item in it serving a par-

ticular purpose. So you have panelling sys-

tems, storage units, tables hob and hood:

each with its own functional, formal identity.

Each expresses its particular function, so the

idea is more one of practical use than an at-

tempt to harmonise everything into a whole”.

EFFICIENT ELEMENTS WITH CHARACTERAppearing as a furnishing system that satis-

fies current home lifestyle trends, Set is based

on a structural composition whose functionali-

ty is divided up into individual, highly charac-

teristic elements. The design is based on the

well-established concept of the American

modular kitchen, made up of a large collection

of elements that can be creatively combined in

a variety of ways, according to principles of ef-

ficiency and logicality of use. The large storage

units typical of the most fashionable kitchens

are downsized on Set: “normal-sized” base u-

nits adjoin ultra-thin cantilevered tables, with

one or two shaped sides, depending on

whether the kitchen is positioned against the

wall or takes the form of an island unit; the

dresser-like cabinets have glass fronts; the

low wall units have folding doors; the new-

concept panelling systems, complete with

shelves, extend all the way up to the ceiling.

“I wanted to concentrate on the vertical devel-

opment of the kitchen. Why neglect the full

height of a room, when it is all there to be ex-

ploited? Hence the shelved panel systems and

the self-supporting wall, which can be various-

ly equipped, to say nothing of the hood with

its upward-extending shelving. When the

kitchen is a workshop, as is the case with Set,

it makes more sense to have objects and uten-

sils within easy reach rather than hidden away

inaccessibly in storage units. So I’ve brought

out onto the outside everything that could be

brought out”. Designed as a kind of totem,

Set’s self-supporting wall can be positioned

anywhere in the room and fitted out on both

sides. If you include island blocks, this wall

supports the hood on one side and can be fit-

ted with shelves on the other like a bookcase;

the electrical wiring runs inside the totem.

The independent hob is unusual in that it has

an extra-large pan stand.

“Usually the burners are surrounded by a lot

of space which means that much of the hob

remains unused,” continues architect Dor-

doni. “So I came up with a new idea featuring

a continuous stand that covers the entire

stovetop so much bigger cookware can be

used. Risotto, for example, turns out much

better if it’s cooked in a big saucepan!”

The cantilevered tables areshaped in a choice of threeversions: left-hand sideonly, right-hand side only,both sides. Available also in a rectangular version.

The self-supporting wall on Set has the hood unit on one side and shelves on the other. The purity of rationalist architecture and of a high-performance material such

as HI-MACS® solid surface are the main features of the solution pictured here,

part of a splendid private villa, designed by Studio Bembé Dellinger in the lakeland

setting of the Ammersee, in the German region of Bavaria. The clean symmetrical lines

of the Bauhaus-inspired building stand out against the leafy surroundings

and are reflected in the water of the swimming pool. And it was for the exterior

of the building (and then also for the interior and the actual furnishings) that the two

architects, Felix Bembé & Sebastian Dellinger, together with the owner Karl Dreer,

decided to use HI-MACS® solid surface (in the Arctic White and Concrete Grey

versions) for some of its most striking furnishing features.

Starting from the outside, for example, the entrance doors are flanked by large glass

walls screened by HI-MACS® slats that modulate the light coming inside and create

a reassuring barrier. Or the outdoor flooring and poolside, which form a stylistic whole.

The reason for such an all-round use of HI-MACS® is the excellent performance

features and versatility of this surfacing material, which can be moulded to produce

a variety of formal solutions on any architecture or interior design project.

A “SOFT” TABLE

Inside the villa, on the main floor, daylight floods in through the glazed openings

and makes the generous living-room overlooking the patio look even brighter.

In this open-plan area, which is both a living space and kitchen, the two designers,

together with Karl Dreer, gave free rein to their creativity by producing interior design

elements with great aesthetic appeal using HI-MACS®. Most prominently of all,

for the large table at the centre of the space that defines the dining area,

a white monolith with a soft, futuristic form, a work of sculpture in its own right,

imposing in both its shape and size: it measures 3.85 metres in length.

Around the table six upholstered chairs with warm brown covers express

the importance the owners attach to entertaining. Opposite the table the countertop

coffee-table is again finished in HI-MACS®, as is the kitchen worktop against the wall,

its rectangular sink in the same material fitting seamlessly into the work surface.

This design scheme creates a sense of unity and purity, harmony and hygiene,

thanks to the use of HI-MACS solid surface, whose particular composition

is completely resistant to water and humidity. Even the enormous gas fireplace

that hangs down from the ceiling is clad in HI-MACS: a 2.3-metre-long structure that

offers glimpses of the generous conversation area as it heats this warm, white space.
