MOZZARELLA (IT) a moist white Italian curd cheese made

originally from buffalo milk

CAPRESE (IT) a simple salad from the Italian region

of Campania, made of sliced fresh  mozzarella, tomatoes and basil, seasoned with salt, pepper, and olive oil.

RICOTTA (IT) a soft white unsalted cheese made from sheep's

milk, used esp. in making ravioli and gnocchi

PARMESAN (FR) A hard dry cheese made from skimmed

milk, used grated, esp on pasta dishes and soups

MASCARPONE (IT) a soft Italian cream cheese

BECHAMEL (FR) Basic French white sauce is made by stirring milk into a butter-

flour mixture.

BOLOGNESE (IT) The traditional recipe confines the ingredients

to beef, pancetta, onions, tomato paste, meat broth, white wine, and milk or cream. 

LASAGNE (IT) Lasagne is a classic Italian pasta casserole

CHICKEN TIKKA MASALA (IN)

a curry dish of roasted chicken chunks (tikka) served in a rich-tasting red or orange-coloured sauce. The sauce is usually creamy, lightly spiced and contains tomatoes. Chicken tikka masala has been found the most popular dish in British restaurants and it has been called a "a true British national dish."

TANDOORI CHICKEN (IN)

The chicken is marinated in yogurt and seasoned with tandoori masala.

reduced in most Western nations. Cayenne pepper, red chili powder or kashmiri red chilli powder is used to give it a fiery red hue. A higher amount of Turmeric produces an orange colour. In some modern versions, both red and yellow food colourings are used. It is traditionally cooked at high temperatures in a tandoor (clay oven), but can also be prepared on a traditional barbecue grill.

TIRAMISU (IT) A dessert of cake infused with a liquid such as coffee or

rum, layered with a rich cheese filling, and topped with grated chocolate.
