fresh pasta with summer sauce

how to:

ingredientsFresh Pasta• 200g flour• 2x eggs• 1x egg yolk

Summer Sauce• 500g firm ripe tomatoes• 1x onion• 6x green olives• 1tbsp of capers• ¼ teaspoon of oregano• 1/3 cup chopped parsley• 2x cloves garlic• ½ cup oil

method

1. Pour the flour out onto a clean working

surface and make a small well in the

middle.

2. Add to the well the eggs and egg yolk

and mix/knead together until you have a

smooth and shiny texture.

3. Set your pasta dough aside for 20

minutes.

3. Roll the dough through a pasta maker to

create the desired style of pasta.

4. Chop up all ingredients and combine them

with the oil.

5. Leave the mixture in the fridge overnight to

allow flavours to bloom.

6. Serve over hot spaghetti for a cool

and refreshing lunch.

tip:

This sauce is a cold style sauce which

can be prepared ahead of time
