Thedemonstrationmustincludethefollowing:

1. Informationofeggs:nutritionalvalue,preparationandstorage,functionalproperties,gradingandsizing,versatilityandeconomicsofcookingwitheggs.

2. Stepsinpreparationofthedish.3. Afinishedomeletdishreadyforsampling.Thismustbepreparedinthecontest-site

kitchenfacilitiesonthedayofthecontest.Preparationmaybepriortothedemonstrationorduringtheactualdemonstration,dependingonthenatureofthedish.Nocontestantsmayprepareanyportionoftheirdishoutsidethecontest-sitefacilities.

4. Judgeswillbeservedandwillsamplethefinishedproductattheendofeachdemonstration.Paperplatesandbowlsandplasticutensilswillbeprovidedandthesemustbeusedwhenservingthejudges.Contestantsmaynotgiveanythingtothejudgesexcepttheirrecipe(andasampleoftheirfinishedproduct.

ü Thedemonstrationmustbenomorethan12minutesinlength.Contestantswillbepermittedtofinishthedemonstrationifthepresentationistwo(2)minutesorlesslongerthanthespecifiedlength,two(2)pointswillbedeductedfromthetotalscore.
