The entire exercise is scheduled to be completed next year.

Cove exudes warm tropical charm. This year, we invite you to start your festive

celebrations a little earlier at the sixth edition of the ONE15 Christmas Boat Light Parade™ on 16 and 17 November. Our boaters will kick off celebrations on Saturday with a dockside light display while a breathtaking cruising parade will end the festivities on an equally high note on Sunday.

In conjunction, the Sentosa Cove Holiday Market returns for the third time, bigger and better than ever. Members and their families and friends will be able to savour festive delights, discover curated gift ideas, and enjoy game stalls, children’s rides and various roving entertainers.

Christmas is a good time to focus on the people who truly matter—such as family and friends. So gather your loved ones at LATITUDE Bistro for a festive meal they will remember for a long time.

Our decadent Christmas buffet will indulge you and yours in tantalising classics and addictive fl avours. Some of our signature Christmas offerings such as roast turkey, ham, beef and log cakes are also available for takeaway. Turn to page 28 for the full menu as well as trivia on popular holiday dishes.

At ONE°15, the little ones are never left out. Throughout the school holidays, our line-up of craft activities, balloon sculpting and exuberant pool parties will ignite their imagination. The updates and its designation as the only prime marina here to operate an immigration facility make ONEº15 Marina Sentosa Cove the epicentre of all things yachting-related.

Upgrades In StoreThe marina will be updated in two phases, with Phase 1 having begun in October and Phase 2 set to come into effect in the second quarter of 2020. Upon completion, Members can expect a modern marina with new state-of-the-art pedestals, with features including automated billing and brand-new pontoons. Additionally, boaters will appreciate the spacious berths and new layout expanding the overall linear footage by 18.6 per cent, which will increase our berthing fl exibility within the region.

The Club will also be able to accommodate a greater number of superyachts upon completion of the upgrading exercise. Not only will there be added berths for superyachts, these will also be relocated to the front of the Clubhouse, adding yet another layer of convenience and accessibility besides offering unbeatable open-water views to Members.

Ease of port clearance is guaranteed at ONE°15 Marina Sentosa Cove’s very own Customs, Immigration, Quarantine (CIQ) facility, which opened in June this year. Once in, yachters can refuel at the pumps within the marina, use its waste pump-out system and top up their water supply.

Superyacht owners can also enjoy peace of mind when they leave their vessels at ONE°15 Marina Sentosa Cove, as the Club provides round-the-clock security guards, CCTV surveillance, card-only access to the marina.

In addition to a 24-hour mooring service, Members can expect quality service and assistance from an experienced marina team on issues such as equipment competence.

An effi cient buggy service to get you to and from the Clubhouse, which offers convenient shower and laundry facilities—if your stop is a short one—as well as high speed Wi-Fi connectivity that makes doing business a breeze, are other perks. Yachters can also avail a range of other facilities, from indulging in gourmet nibbles and choice tipples, to a spot of relaxation at the Club’s lobby or at the many restaurants and bars scattered around ONE°15 Marina Sentosa Cove.

At ONE°15 Marina Sentosa Cove on a sunny Wednesday afternoon, tranquillity prevails. Glossy yachts are berthed in the calm waters and guests can be seen ambling unhurriedly

around the club. Seated across from me is James Roy, the very man who ensures that the marina runs like clockwork. As marina director, he oversees a constant fl ow of services and support for yacht owners, from the application of cruising permits to berthing and refuelling assistance.

“I’ve seen the yachting industry evolve tremendously over the last two decades. When I was growing up, a marina was just a place to park your boat. You did everything yourself, from berthing to maintaining it. Now, we provide help and support. We don’t just fulfi l specifi c requests; we offer value-added service. It’s much closer to being a hotel than just a marina,” he shared.

Born To SailJames speaks from personal experience. Born in Lymington, a small town in England famous for yachting, the ocean is in his bloodline. His father was a naval architect, his mother worked for a ferry company and his grandfather was a shipwright. He started sailing as soon as he could walk, and learnt how to sail by himself at the age of fi ve.

The 42-year-old once dabbled in competitive sailing himself, winning a few races, including the New York Yacht Trophy from the South Coast of England for laser sailing in the early 1990s. However, the marina director is not just a sailor; he is a true yachting insider. While his peers were collecting pocket money from their parents, he had started his own yacht services company at the age of 15.

After school each day, the enterprising teenager would go from marina to marina, maintaining, polishing, cleaning and moving 15 different boats. His business fl ourished to a point where he had no option but to employ local part-timers to help with the workload.

After he sold his service contracts, he sailed around Europe and North America as a crew member. Over the next two decades, he worked as a commissioning engineer, sailmaker and charter captain until 2008. He then relocated to the Middle East to work as a marina manager in Saudi Arabia, Bahrain, and the United Arab Emirates. The insights he gained from these diverse roles cannot simply be gleaned from the best marina management courses in the world.

“Boating is exciting because you never know what can happen,” he added. “You could encounter horrible weather or your engines could stop working. You can’t just say, “I give up. I’m going home for a cup of tea.” There is no clocking off until you get to your marina destination. That is why a good marina triggers a ‘switch-off-mechanism’ in boaters. Once they park, they should have peace of mind. Our goal is to provide good service so that they can actually ‘switch off’.”

Another reason his current role is particularly fulfi lling for James is his deep love for the ocean. “One of my most beautiful memories is seeing the northern lights from my boat in the Arctic Circle, refl ected off water and ice. Because there is zero light pollution there, I could see all the stars and the Milky Way. You don’t realise how much light pollution comes from buildings until you actually get away from them,” he added.

He also loves meeting like-minded people at the club. “I like that boaters here are very passionate about their vessels. MUSTANG TEST DRIVEMembers got the chance to take Ford’s classic muscle car for a spin

Few vehicles are as iconic and representative of Americana than the Ford Mustang, a car that has starred in numerous movies, television series and songs through the decades. On the evening of 20 August, Members and guests at the Ford showroom had the opportunity to not only revel in the Mustang’s good looks, but also experience its power-packed perfomance. The venue was abuzz with excitement as everyone awaited their turn to hop into the driver’s seat and experience the American legacy for themselves. A buffet with mini French pastries, popiah, shepherd’s pie, meatballs and teriyaki chicken kept appetites satiated in the meantime. Each Member also received a golf bag after their test drive as a token of appreciation.

HEALTH TALK ON ERGONOMICS AND POSTURETop tips for all-round mobility The importance of a healthy spine cannot be overstated as it is central to our ability to function properly. Members and their guests received invaluable advice by chiropractic physician Dr David Leung at a session on how to care for the spine, held on the evening of 26 August at Constellation Ballroom. Attendees were given notes on how the way they sit affects the spine as well as other parts of the body, because of the pressure placed on the bones. Dr Leung also encouraged attendees to stretch and exercise on a regular basis to keep the bones and joints mobile. Members went away with a better understanding of spinal health and how vital it is to everyday life.

ONE°15 MARINA CLEAN-UPBattling the spectre of marine litter for trash-free seas

ONE°15 Marina Sentosa Cove organised its annual Marina Clean-up in conjunction with its Eco Day carnival on 8 September. The Club celebrated the aquatic ecosystem that is its lifeblood by attempting to remove trash before it reaches the ocean.

The ill-effects of marine trash are far-reaching and signifi cant—ocean litter threatens maritime safety, degrades water quality, imperils ocean life and people’s health, and has adverse effects on local economies, tourism and fi shing.

Over 100 land volunteers and divers joined in to help out at the event, which kicked off at 9.30am following a safety briefi ng. After arming themselves with nets and diving necessities, the volunteers dove into action to pick up as much trash as they could.

The two-hour clean-up snagged 60kg of metal rubbish and 8kg of plastic trash. Among the junk were glass bottles, traffi c cones, a skateboard, bicycle and even a rusty shopping cart. The volunteers partook in lunch after the clean-up exercise to celebrate the success of the operation.

ONE°15 ECO DAY AND PACT SPONSORSHIPClub flies the flag for green causes

In celebration of its 12th anniversary, ONE°15 Marina Sentosa Cove dedicated 8 September to doing its part for the environment. Members and business partners attended an eco-themed family carnival, where they learnt how to reduce, reuse and recycle courtesy of upcycling workshops and engaging activities.

Eco-related games taught visitors about the items that can be recycled, and those that cannot. Another educational booth centred on the emergence of plant-based meat dishes and introduced the Impossible menu, which features at LATITUDE Bistro. Impossible Meat smells, handles, cooks and tastes just like real meat, but is kinder on the environment as cultivating plants results in a lower carbon footprint compared to producing meat and dairy products from animals.

A number of eco-friendly vendors were also in attendance, offering various sustainable products ranging from daily necessities to apparel. Adding to the carnival feel were free popcorn, balloon-sculpting sessions and a 10m infl atable obstacle course in the pool for the little ones.

To keep up its efforts in cultivating the ONE°15 Marina – Seakeepers Asia Coral Garden project, the Club also invited Members and partners to become sponsors in the Plant-A-Coral-Today (PACT) initiative. Marina Technology & Construction signed up to be a part of the project, which saw divers from NUS’ Tropical Marine Science Institute also play their part by planting corals at the marina.

Backed by a team of coral researchers from NUS’ Tropical Marine Science Institute, ONE°15 Marina Sentosa Cove has a long-term vision to build a thriving marine biosystem within its waters. The Club also hopes to eventually develop it as an educational site where students can learn about marine biodiversity.

LITTLE MAGICIAN WORKSHOPMembers’ children had fun learning optical illusions

Captain’s Table was transformed into an illusionist’s paradise on the afternoon of 17 August as budding young conjurers gathered to pick up tricks at the Little Magician workshop. The Members’ kids imbued the venue with squeals of laughter as they observed and also tried their hand at seemingly impossible feats under the guidance of a magician, such as turning pieces of paper into money and card-guessing tricks. The event proved a hit, with the children and their parents asking when the next workshop would be held.

NATIONAL DAY CARNIVALMarking the nation’s birthday with fun and games

Members and their guests gathered to celebrate Singapore’s 54th birthday at the Club on the evening of 9 August. About 40 people gathered outside LATITUDE Bistro and by the pool to participate in a number of fun games such as a Nerf shoot-out—which proved especially popular—as well as darts and can knockdown. Lending a local fl avour, in keeping with the occasion, was kuti-kuti: A traditional children’s game in which two opposing players take turns to fl ip colourful plastic tokens on top of those of their opponent. Kids also had fun in the pool as they made their way through the infl atable obstacle course. The National Anthem was played and the Pledge recited as everyone rose to their feet, remembering the signifi cance of the day.

MID-AUTUMN FESTIVALLittle hands were kept busy crafting lanterns and mooncakes for the Zhong Qiu Jie celebration

Members’ kids enjoyed two fun and educational workshops on 14 September to mark the Mid-Autumn Festival. The afternoon kicked off with a snow skin mini mooncake-making class at Captain’s Table, with children learning how to make the mooncake skin and fi llings, and combine both into delicious confections. The kids proved to be quick learners, and some had even made up to 18 mini mooncakes at the end of the session. It was a lively session full of chatter and laughter.

The evening workshop involved a lantern-making class and walk. Young ones gathered in the Kids’ Playroom for a fun-fi lled session that required them to exercise their creativity as they followed the instruction sheet and attempted to bring the products of their imagination to life. After they had come up with their own colourful creations, the kids and their parents took a walk with the fruits of their labour from the Club to Sentosa Cove Village and back again, making new friends along the way.

Members making payments with their membership account will also be able to use the fuel station from 8am to 8pm.

Just download the ONE°15 Fuel Management System app from the Play/Apple store, and log in with your username and password (your membership number). For fi rst-time logins, you will receive an OTP on your registered mobile number.

Members who wish to change their registered mobile number can do so by emailing the Marina Department. If you also wish to grant access to other individuals such as your captain, crew or family members, please send an email with your full name, mobile number and email address. You may also request for access via these steps in case you have boats berthed elsewhere, but need to use the fuel management system.

Beef in Red WineHoliday feasting in Italy spans the course of three days: Christmas Eve, Christmas Day and Boxing Day. Each region here has its own speciality cuisine, and one popular dish, originating from Piedmont in northwest Italy, is beef braised in red wine. Strips of beef are marinated in red wine and herbs before being sautéed with cured pork fat.

While the dish uses a specifi c red wine known as Barolo, you can substitute it with similar red wines such as Chianti or Montepulciano d’Abruzzo. The secret to making tender beef strips, says Chef Soh, is to fi rst cook the beef sous vide before slow-braising it in the oven. “Consider using Singaporean beers or spices to the dish to help tenderise the meat, too,” he adds. “Serve it with pickled gherkins, roasted potatoes or root vegetables of your choice.” But if all that is too much work in too little time, serve LATITUDE Bistro’s Roasted Beef Sirloin at your Christmas get-together instead.

ITALY

ProseccoChristmas in Italy means it’s time for bollicine or bubbly. There’s only one kind of bubbly that’s a must at Christmas, and that is Prosecco. While most drink it unmixed, it’s also a great option for those who want an elegant aperitif. “It’s one of my favourites because it has great body, carbonation, and is easy to drink if you’re new to wines,” says Chef Soh, who uses Prosecco and raspberry liqueur to make a delicious cocktail. “It also goes well with yuzu and honey,” he adds. You don’t have to go far to fi nd a good bottle either, as LATITUDE Bistro is stocking up on bottles of Accademia Prosecco just for the holidays.

Roasted GooseGermany’s bird of choice for the Christmas meal is goose—it’s a staple at every festive occasion. This fowl choice results from a Catholic tradition of commemorating St. Martin’s Day early in November by consuming goose. Typically held on 11 November, it marks the start of Advent, a time of fasting which ends on Christmas Eve, where goose is again eaten as part of the celebrations.

Goose meat has a sweet, distinct fl avour and is typically seasoned with salt, pepper, mugwort or marjoram. However, Chef Soh prefers to use local Singaporean spices, kaffi r lime leaves or even pineapple juice to “remove the meat’s gamey smell” before stuffi ng the goose with forcemeat, foie gras, lemon and garlic couscous. “It’s important to baste the goose regularly during the slow roasting process to keep the meat from drying out,” he advises. But if you’re not a fan of goose’s strong aroma, take a cue from the US and Britain and go for turkey instead. Better yet, opt for LATITUDE Bistro’s traditional roast turkey.

Bûche de NoëlThe term originally referred to an actual Yule log, which was burnt on the hearth during Christmas. This practice fell out of favour sometime in the fi rst half of the 20th century, and the term was then transferred to the dessert. Traditionally made from a yellow genoise that’s baked in a large, shallow Swiss-roll pan and then iced with chocolate buttercream, the dessert has now grown to include a variety of fl avours and even liqueur icing.

It is typically served with one end sliced off and placed atop the cake or on the side to resemble a chopped branch. The secret to making a good log cake, says Chef Soh, is to build a light sponge base with good texture. “You can also infuse the sponge cake with a dash of alcohol-imbued syrup such as rum, Kirsch, Grand Marnier or Cointreau, while fi llings such as mango, durian and jackfruit add a beautiful local fl avour,” he explains. This Christmas, LATITUDE Bistro has three log cakes to choose from: Vanilla, durian, and chocolate.

Roasted Capon A rooster that has been castrated before reaching sexual maturity, the capon has occupied a place on the tables of European clergymen and royalty since the Middle Ages. It was often baked into pies, stewed or roasted, and was considered the poultry of choice for Christmas feasts in the homes of the wealthy. In modern-day France, capon is a signifi cant part of the Christmas Réveillon, a long dinner that takes place on Christmas Eve and goes on past midnight.

The lack of testosterone makes capon meat more tender and fl avourful than regular chicken. It is also fatty with a higher proportion of white meat. While the French stuff their capon with chestnuts, Chef Soh recommends pairing it with spicy coconut or peanut sauces to give it a Singaporean fl avour. He also recommends serving capon with roasted capsicums or parsnips. However, capons are a rare fi nd in Singapore, so if you’re unable to locate any at supermarkets or butchers around the island, consider LATITUDE Bistro’s Honey Roasted Ham for your holiday repast.

Feuerzangenbowle This classic German rum punch was made popular by a 1944 German fi lm titled Die Feuerzangenbowle and is made from heated dry red wine that has been spiced with cinnamon sticks, cloves, star anise and orange peel. A small pair of tongs is then fi tted with a 250g sugar cone that is soaked with rum and set alight to melt slowly into the wine. The ceremony of preparing the drink is itself considered to be important as it promotes Gemütlichkeit, a feeling of warmth and friendship.

Chef Soh considers punches such as Feuerzangenbowle to be versatile party drinks. “Whenever orange peel, nutmeg and cinnamon, or even fruits such as cranberries and cherries are added to any drink or meal, it gives our senses the idea that it is Christmas,” he says. What he loves most about Christmas punch is its fruity zest which is sparkling and simple—“the right amount for the start of Christmas spirits.” You can use gin, whisky, bourbon or Shiraz as the base for your punch bowl or pick up a bottle of Croix Du Marquis Sauvignon Blanc from LATITUDE Bistro.
