Master Jam 2011: Some lucky members of Team Prana will be attending MasterJam Fashion Forward on 10 April at Old Billingsgate, London. Ok, so it’s an old joke but it has more than a ring of truth to it.Chocolate is sensuous, comforting and utterly delicious. What’s not to like?You may have guessed I’m something of an addict myself. But where didchocolate come from? Who invented it?

It was the Aztec civilization, deep in the heart of equatorial Central Americawho first cultivated the tree from which chocolate derives.

The tree is the Theobroma Cacao. Translated this means‘drink of the gods’ from Theo (meaning god) and broma

(meaning drink). Originally chocolate was always taken inliquid form.

The Aztecs attributed all manner of powers tochocolate: spiritual wisdom, energy and evenenhanced sexual prowess.

Emperor Montezuma was reputed to drink overfifty flagons of chocolate per day. He also

issued it to all his warriors to fortify them whilst on military campaigns.

The Spanish explorer Herman Cortes referred to chocolate as, “The divinedrink..,” he also noted that, “A cup of this precious drink enables a man towalk for a whole day without food.”

The conquistadors ensured that chocolate made its way back to Spain.From there it followed the trade routes to Northern Europe and Britain thenback across the Atlantic to America.

Initially in Britain it was served as a drink. During the Industrial Revolutionseveral eminent Quaker families - the Cadburys, the Frys, the Rowntreesand the Terrys - helped to transform the manufacture of drinking chocolate.

It was the Fry family who created the first ‘eating’ chocolate and Cadburyquickly followed suit. Needless to say this new chocolate innovation was anastounding success. From it’s initial marketing at an 1849 trade fair demandgrew and today the world consumption of cocoa beans is over 600, 000 tonnesper year. I blame the Aztecs! Easter Egg anyone?

A British survey has revealed that nine out of ten peoplelike chocolate… The tenth lies!

Since this was an ‘Easter’ edition we thought we would look at a veryimportant component…

Who are we? Dalbeattie Community Initiative was formed in 1997 in response to aseries of job losses in the area. Its aim was and still remains “to aid the physical,economic and community regeneration of Dalbeattie and surrounding area”. It wasinitially set up as a community organisation with membership made up of around 16local groups and organisation. In 2002, due to increasing financial responsibilities fromlarger scale project developments, the organisation changed legal status to a companylimited by guarantee and also became a registered Scottish Charity. Membership hasalso widened and as well as ongoing input from local groups, has over 120 individualmembers from the local community, many of whom support our activities as volunteers.

What do we do? Some of our earlier projects included the completion of a pathwayaround Colliston Park to join up at the primary school; the replacement of the publicslipway at Kippford; the Granite Festival in 2003 and providing volunteeringopportunities for local people.

We are currently involved in a wide range of activities which include: operating our owncharity shop, ‘Preloved’ in the High Street, operating the visitor information centre andcraft shop; the Carbon Action Project which advises local people how to reduce theircarbon footprint and save money on household energy bills; organising the annualHardrock Challenge mountain biking event and the Dalbeattie Walking Festival; arestoration project at the town’s former thriving port; providing information technologyaccess for the visually impaired; environmental work in Rounall Wood, Old Port andIslecroft; producing a community newsletter 3 times a year; running and maintainingthe Dalbeattie Matters community website; working with the three local schools onenvironmental and eco projects; as well as many other activities.

What can YOU do? The Initiative currently employs 1 full time and 1 part time staff andtherefore relies heavily on local volunteers to help either in the charity shop, visitorinformation centre, environmental projects and administration work. Volunteers can beany age, many are retired and enjoy the social contact of life in the charity shop, someare younger and unemployed and see volunteering as a way to get back into a workroutine and will hopefully move on to further training or into work. The Haill Six IncorporatedTrades of Kirkcudbright

Clothiers, Hammermen and Glovers,Shoemakers, Squaremen, Tailors and Weavers

The Haill Six Incorporated Trades ofKirkcudbright have existed, unbroken, sincethey were instituted by Charter granted underKing Charles 11 on the 20th July, 1633.Their history before Incorporation howeverdates from 1425 when it was enacted that everyCraft in every Burgh should choose a "WiseMan" as a Deacon to "Governand Assay all its handiwork".They were, in effect, an earlyform of Trade Unionism andwere set up in directopposition to the MerchantsGuilds who, through theirposition, amassed great wealthand held disproportionateinfluence in the community.It was soon realised that the powers enacted onthe Trades conferred too much influence on theDeacons and their duties were soon restrictedto a fortnightly enquiry into the skill of itsmembers and the quality of work produced. Theposition of Deacon was thereafter summarilyabolished.  The Tradesmen refused to acceptthis and in defiance of Government theycontinued to elect their own Deacons and tohold gatherings, which were termed by theauthorities as, "seditious meetings".  There wassuch resentment and rebellion by the Trades thatin 1456, by Royal Proclamation, it was enactedthat every Trade in the Burghshould again be allowed to electits own Deacon.The Tradesmen ofKirkcudbright were now rightlyin control of their own destiny,had become a very powerfulbody, and had assumed therights and privileges previously

assigned to the late Merchants Guilds.In 1587, the "Siller Gun", now the oldestsporting trophy in the United Kingdom andarguably the world, which is still used for itsintended purpose, was presented by King Jamesthe I and VI of Scotland, "To be shot foroccasionally, in order to accustoum the Liegesin the use of              firearms". This trophy, on

display in the StewartryMuseum, Kirkcudbright,continues to be shot for todayby the Trades on Royaloccasions, the results of whichare still communicated to theMonarch.At the time of the NapoleonicWars the Incorporated Trades

were instrumental in the raising and equippingof the Privateer "Britannia" to prey on Frenchshipping. When she was later disarmed, hercanon were stored for many years in theTollbooth and later mounted on concrete plinthsand displayed on the Moatbrae. A further canonwas later excavated from the mud of the HighStreet and now lies on a carriage in front of theCouncil Offices next door to the Selkirk ArmsHotel.The power of the Trades existed until fairlyrecent times when in 1846 by Act of Parliamentthe powers and privileges were abolished but

not so the ceremonial role.   TheClothiers,  Hammermen andGlovers, Shoemakers,Squaremen, Tailors andWeavers, still meet today to electtheir Office Bearers, discusslocal issues, and elect theirDeacon .

Method

Preheat the oven to 180C/ 160C fan/ gas 4.

Cream together the butter and sugar until light, fluffy and pale, then gradually beat in the egg, addinga little flour if the mixture looks like it might curdle.

Beat in the vanilla extract and milk.

Place 12 paper cupcake cases into a cake tin and divide the mixture between them.

Bake for 15-20 minutes until golden and springy to the touch. Remove from the oven and cool on awire rack.

For the icing

In a mixing bowl beat the butter with a wooden spoon or in a mixer until smooth, then sift in the icingsugar, beating regularly.

Add the vanilla extract and milk and beat for five minutes. The frosting should be really light andfluffy.

Mix your chosen food colouring colours into the icing to give an even colour.  You can use onecolour or split the icing and use several.

When the cupcakes are totally cool, spoon or pipe the icing on top. Finish with your chosendecorations and let the kids lick the bowls!

For the cakes150 g butter, softened150 g sugar3 eggs, beaten150 g self-raising flour, sifted1 tsp vanilla extract1 tbsp milk

For the icing

75 g butter, at room temperature150 g icing sugar1 tbsp milk1 tsp vanilla extracta selection of pretty food colourings.

To decorate

A selection of Sweets, mini eggs look particularly nice as do Sugar flowers and Sprinkles
