I Luv Invers got a ‘sneak peak’ at the Invercargill City Council’s ‘Urban Rejuvenation’ project on Monday when the Committee responsible for putting the plan into action had their dress rehearsal for their ‘Press Release’ at Southend

United Football Club’s clubrooms. The enthusiasm and energy was evident as different members of the committee bounced ideas of each other and shared their visions. The name ‘Big Yellow’ was heard often and it refers to the a big yellow letterbox that is the official ‘mascot’ of the project. The Invercargill City Council is responsible for quite a vast area and is aware there are some areas within Invercargill where there is need for ‘improvement’, ‘a spruce up’ and rejuvenation. While the Council will ‘lead’ this project, it is essentially a community based project where individual projects will be chosen by the community. The community will be responsible for identifying, prioritizing and implementing the projects

with support of Council.South Invercargill is an area where the age and quality of buildings and other facilities is really in need of help and I Luv Invers is going along for the ride to watch this part of the city in particular as it springs back to a life of vibrancy and a place to be proud of. 2. Heat the butter until almost smoking in a heavy based oven proof pan.

3. Seal the beef all around until it is well browned in the clarified butter.

4. Transfer the beef to an oven at 230°C and roast until cooked to your preference. Approximately 10-12 minutes for rare (with internal temperature of 130-140°C) or 15-18 minutes for medium (with internal temperature of 140-155°C).

5. Remove the meat from the oven and allow it to rest in a warm place for at least 10 minutes.

2. Place the egg yolks, water, lemon juice, cayenne pepper, salt, white pepper and Tabasco sauce and your reduction into the bowl of the blender. Cover and blend on high for approximately 5 seconds.
