Japanese in Noh Time

KTConsulting was contracted by Silver Spoon Investments in December 2013 with the purpose to create, set up and develop a Japanese sushi bar in Galleria Mall, Al Wasl Road. websitewww.atisuto.aeopening date 15 december 2014seating capacity54 indoors and 32 outdoorsscope of workconcept creation and development / business plan / equipment selection / recruitment / pre opening processes / PR and marketing strategy / policies and procedures / standards manual / IT solutions / menu development / expansion strategy

The concept for Atisuto, which means ‘artist’ in Japanese, is based on the back- alley sushi restaurants found in Japan’s big cities, where the bustle of city life and creativity of the cuisine combine, creating a fast-paced, unique atmosphere. With original Japanese art and graffiti sprawling the walls, and a modern funky interior design, Atisuto will be the place to catch up with friends or relax in a casual, yet chic environment. The interiors of the restaurant are artistically unique. The space was inspired by avant-garde artists obsessed with Japanese Culture who entered the industrial space and expressed themselves freely, painting directly on the walls and floors. Up-cycled materials salvaged from local warehouses and yards, such as rusty metal and gnarled wood, were used in the fit out and design of Atisuto. Everything at the restaurant is based on sustainability and the importance of using locally sourced, environmentally friendly materials. From the furniture and general fit out, to the food used in the kitchen, wherever possible products were sourced from local UAE suppliers and companies. The menu is focused on sushi, sashimi, robata grilled, yakitori, udon and ramen soups. All items will be prepared fresh on a daily basis.
