500g Australian Avocado Pulp

Finished product 6kg carton. Carton contains 12 by 500g peel top thermoformed packs.

Store frozen 2 years at -18o to -24o C. Once thawed keep refrigerated at less than 4oC. Use within 14 days of thawing. Consume within 3 days of opening.

Spicy Avocado Salsa with Chicken Skewers250g Australian Avocado Pulp 12 satay chicken kebabs2 tablespoons unsalted cashews, coarsely chopped1 tablespoon lime juice2 tablespoons coarsely chopped coriander

Preheat a barbecue or char grill on high. Add the satay chicken kebabs and cook for 3-4 minutes each side or until cooked through. Transfer to a serving platter.

Meanwhile, combine the avocado, cashews, lime juice and coriander in a medium bowl and gently stir to combine. Spoon Salsa over the chicken skewers and serve immediately.

Seasoned Avocado and Coconut Starter250g Australian Avocado Pulp

100g butter

1 leek, washed and sliced

1 clove garlic, chopped

1 litre chicken or vegetable stock

½ bunch parsley

Salt and pepper to taste

100ml coconut cream to garnish

Melt butter in a saucepan and sauté leeks and garlic without colour until soft.

Add the stock and bring to the boil. Add avocado, parsley and season.

Place into a blender and blend until smooth.

Serve in shot glasses and garnish with a spoonful of coconut cream.

Avocado Prawn Bites125g Australian Avocado Pulp2 tablespoons mayonnaise½ teaspoon wasabi paste12 cooked prawns, peeledPumpernickel bread cut into 4cm rounds12 pieces pickled gingerDill sprigs

Mix together avocado, mayonnaise and wasabi.

Place a dollop of avocado mixture on each round, top with a prawn and garnish with ginger and dill sprigs.
