Continuing to expand their golf activi-ties throughout the country the Unit dStates Junior Chamber of Comrnerc re-leased early in December a 15 minut , 16mm sound, color film "Golf for Youth."The production was jointly produc d bythe USJCC and the National Golf Foun-dation.

Hugh Egan, Jr., Jaycee sports andrecreation director, reports the· film habeen enthusiastically received by juniorchambers, golf associations and countryclub groups in various parts of the nationand pointed out that the film is availablefrom his office at no cost.

In addition to bringing to the screen acomplete history of the growth of thNational Jaycee Junior golf program thfilm also includes shots from .Jaycee-spon-sored PGA tourneys. "However," Egansaid, "one of the most important me -sages in the film is the need for increas dgolf facilities across the nation. We havfound Jayce groups coming to the frontin this field and accordingly have film dactual work at Zanesville, Ohio andSpringfield, Illinois where municipal in-stallations are now underway sparked bythe local Junior Chamber of Commer e."

Another portion of the film alerts thnation's junior golfers to the 5th AnnualNational Jayc Junior championshipwhich will b played on the Iowa StatCollege course Augu t 13 to 19th. Ov 1a short span of five years the JaycJunior has risen to the largest organiz dgolf program in the nation. Committee meeting they lose all th bu i-ness sense they ever had.

Now, you take this food co t controland these stati tics so you can know yourprices and know what you are talkingabout. Go into the meeting and ju tresolutely tell them, "These are the facof life, gentlemen. You can't dispute thi ."You will get along a lot better if you havesome fellow tell you in there that he don'tsee why you with your possibly 200a daybusiness can't sell something as ch ap athe hotel that has 1000a day bu ines .

Know your food costs, have your priceset to break even or return a small profit, for in most club you will find your dueare not carrying the overhead exp nsthey are supposed to cover. Give omthought, too, to the combining of food andliquor results. Most hotels today do thi ,although separate schedules of ach d -partment's revenues and expenses ar al 0kept for management information.

I remember a few years ago we got outa form of standard account for city cluband you have also had one for countryclubs. We did a eparate accounting in therestaurant and bar, like country clubs al-ways did but we have one sheet that com-bines the two together and why no ? Thsuccessful restaurants in your town 11food and liquor, they hire ch fs, cook, waiters, cashiers and everything and wh nthey make up th ir results at the nd ofthe month they take the cash r gistertapes, that is their receipt, and they maka profit and they put you fellows at a dis-advantage b cause somebody on yourboard says, "Joe's Restaurant down hermakes a profit, why didn't you?"

If you could say to him, "All righ , throwinto my restaurant department also hreceipts from the bar and then let'swhat we are doing." The one good xcusfor you to do that, and the logical xcusand the neces ity for doing it is: howmuchof the liquor do you serve in your club byyour waiters? In our club the larg tamount of our liquor sales goes throughour banquet department and, therefor , ifwe were following out the old syst m inits entirety the service of all that liquorwould be credited to the bart nder, thhead bartend r's department and no part ofit to our restaurant, but our re taurant ipaying the wages of erving 60 per cent ofthe liquor business that is being done in it,including everything. That is the r a onwhy one should keep that schedule andhave the club used to getting the :figurethat way so they will know what is b indone.
