Mold Ripened Cheese , Saturday, April 23, 1:00-3:00Our guest presenter, Mary Crawford, will be discussing the required and recommended supplies while demonstrating how easy it is to make mold ripened cheese. She will be comparing the process for Brie, Camembert and Cambazola production and the ease with which it can be made around your already busy schedule. Mary always delights by sharing the results of previous batches.

All Grain Brewing , Saturday, May 21, 10:00-3:00We will be making a batch of all grain beer discussing the process each step of the way. Topic to be discussed will include mashing techniques, equipment requirements for each technique, what's happening during the mashing process, sparging and on the the kettle for the boil.

Fruit Wine M aking , Saturday, June 4, 1:00-4:00Summer is the time for a great variety of fresh fruits and what better to do with them than transform fruit into wine. During this seminar we will be making a batch of fruit wine demonstrating fruit preparation, recommended tests and balancing the wine. We will discuss the necessary equipment, the fermentation process, clarification and aging, bottling and sanitation.

Jack Keller's VisitSaturday, February 27, we had a nice visit with Jack Keller. Jack shared fermentation stories with those in attendance and customers were able to ask questions of one of the longest standing wine aficionados in this country. Thank you Kevin for this opportunity.

This is a great opportunity to interact with other brewers, ask and answer brewing related questions and see the very simple to the most creative, elaborate systems being used by other homebrewers. So, bring your kettle and propane burner and brew with us or just come and celebrate homebrewing. This is a day you don’t want to miss.

Tips & TidbitsKettle Care

A shiny kettle is nice, but a clean kettle is essential to producing good beer. Soaking a kettle with beer stone in P.B.W. will loosen the beer stone or caramelization making it easy to wash off with hot

water and little or no scrubbing. A stainless steel S.O.S. pad can be used for the stubborn spots. Never use a chlorine based cleaner or sanitizer on anything made of stainless steel. The chlorine can pit and corrode stainless steel.

Kettle valves are great places for harboring bacteria. To prevent infecting a batch, remove the kettle valve after brewing. Rinse it out thoroughly and clean it so sweet wort trapped in the pockets does not allowed bacteria to grow between uses. Then it's a good idea to boil it before each brew.

To prevent the black soot from forming on the bottom of the kettle during your boil, rub regular dish soap on the bottom of the kettle prior to placing it on the propane burner. The dish soap will turn black rather than the bottom of the kettle and it will rinse off. Clean kettles make happy brews.

Hop RhizomesThe hop plant (Humulus Lupulus) is a perennial that produces climbing annual vines from a perennial crown and rootstock. The vines may grow 25 feet in a single season, but will die back to the crown each fall.

Hop plants are unisexual, only the female hop produces the flowers that are used in brewing. All rhizomes offered by Bacchus & Barleycorn, Ltd. are female. As the female flower matures, it forms cone-like structures. These mature cones are 1 to 3 inches long yellowish green and papery to the touch. The cones are generally harvested in August and September, dried and then used for whatever brewing, medicinal, or ornamental purposes you desire.

Alpha = average bittering rating for brewing purposes

Upon obtaining the rhizomes, they should be stored in a plastic bag, slightly moistened, and kept in a refrigerator until you are ready to plant them. Planting should be done after danger of heavy frost and before the days are too long and hot. It is not recommended that hop rhizomes be planted after the 1st

of June in this region, Kansas City.
