yBeer is a term for an alcoholic beverage that is
fermented from malted barley and other cereals
and flavored with hops, the flowers from a
particular vine.
yThe alcoholic content of beer varies according
to type, usually between 3.5-10% alcohol byvolume.

yThe quality of beer depends on the quality
of ingredients.yThe ingredients from which beer is made are water, barley malt, other starchy cereals
such as rice and corn, hops, yeast andsometimes sugars.

Types of BeersyBasically, beer is categorized into one of
three different categories: lagers, ales, and
the rest fall into a category called specialtybeers.
yThe difference between a lager and an ale is
the type of yeast used in fermentation.

AlesyAn ale yeast is called top fermenting because
of its tendency to stick together and rise to the
surface of the brew during the first few daysbefore settling to the bottom.
yTo brew ale, fermentation must take place in
warmer temperatures for the yeast to multiply
and enhance fermentation. Ales are usually
higher in alcohol, darker in color and more
distinctively flavored and hopped.

LagersyThe lager yeast simply flocculates (not at the
surface) and sinks to the bottom. Therefore it is
known as bottom fermenting. Lager yeastsneed cool temperatures during fermentation to
perform their magic.
yLagers tend to be lighter in color and usuallytaste drier than ales. They are generally lessalcoholic and complex. This is the mostcommon beer type sold.

yBeer should be served at temperature of 12.5C
15.5C and lager a little cooler at 8.9C -
10.5C. However always remember the guests
preference and request.
yWhilst considering the guest preference a
chilled glass is often recommended in order toprevent a beer from warming faster.

ContdyWhen pouring bottled lager, it should be
poured down the inside edge of the glass which
is held at slight angles, always pour slowly soas to create a big head (froth).
yBeer glass should be spotlessly clean with no a
grease or finger marks as pouring lager / beerinto a dirty glass can cause it to go flat very
quickly.

ContdyWhen it is hot weather, extra care must be
taken when pouring as such conditions cause
the beer to work froth much more.
yThe neck of the bottle is never to be inserted in
to lager/beer when pouring.
yWhere bottle of lager/ beer have sediments, alittle lager / beer must be left in the bottle when
pouring to hold back the sediments
