Why distilled spirits?

• A spirit is any alcoholic beverage in which the alcohol content has been increased by distillation.

• Other spirits include:●brandy (distilled from wine), ● rum (distilled from sugarcane juice or molasses), ● vodka (distilled from grain but not aged), and ● gin (also distilled from grain and unaged but flavored with berries and other ingredients.)

Distilled Spirits

Whisky (from the Gaelic word uisge beatha, "water of life") has been produced for hundreds of year in Scotland since at least the fifteenth century. -is a spirit produced from fermented grain and aged in wood.-Alcohol concentration is measured in proof, where each proof is 1/2 %. So, 80 proof means 40% alcohol. Most distilled spirits are 80-100 proof.

Whisky is made from three ingredients only.

1. Barley2. Spring water3. Yeast

-The water used is often considered the most important factor in making good whiskey.

The single most important ingredient is: Barley.

Stage 1: Malting

Barley are soaked in water to allow germination, so enzymes turn the starch into sugar.

Stage 2: Kilning

To smoke dry the green malts to stop germination and prevent sugar being used for growing.

Stage 3: Milling

In this stage, barley malts are grinded to produce “grist” (65% husk, 25%

middle, and 10% flour).

Stage 4: Mashing

Mix hot water with grist in a large vessel called “Mash Tun” to extract sugars.

The output is hot, sweet water, called “wort”

Stage 5: Fermenting

Transfer cooled “wort” to “Wash-Backs”. Yeast is added to turn wort into weakalcohol, called“wash”.

Stage 6: Distilling

The “wash” is transferred to a wash still that is typically heated to 80 degrees. Its vapour is collected to become “low wines”.

This is repeated at a second (low wines) still to produce70%-79% spirit.

Scotch Whisky Stills

Stage 7: Maturing/ Aging

● Scotch spirit is stored and matured in oak casks.

Stage 8: Blending

• Different batches of whiskey are mixed together to produce a better flavor.

• Often neutral grain spirit is added to lighten the flavor, caramel is added to standardize the color, and a small amount of sherry or port wine is added to help the flavors blend.

Vodka• Vodka is the traditional

distilled spirit of Russia, Poland, Finland, and other Eastern European countries.

• Vodka is made from fermented grains (mostly wheat and rye), or from potatoes.
