To our customers,

This past year, we have focused on the importance of quality improvements, both in our internal procedures and in our products. For instance, we introduced a new look and added more options, including enhanced electronics and data output, with the launch of our new DV-I Prime Viscometer. In addition, our popular AST-100 In-line Viscometers are now available in a flange mount design for convenient mounting and also in a probe style for insertion into tanks from above. We also introduced two new time-saving options for our digital viscometer line: our Quick Action Lab Stand moves viscometers up and down the lab stand with a push of a button while the EZ-Lock Spindle Coupling System allows operators the convenience of quickly attaching spindles without the need of threading.

We continue to look forward to providing you with improved measurement systems. Coming in 2008, a new Texture Analyzer with tension and compression capabilities normally found in much higher priced instruments will be introduced. Also coming soon, one of our most popular instruments will get a new look, and we are also excited about the debut of a new robust viscometer that can stand on its own in just about any industrial environment. Be sure to check our website for the introduction of these exciting new instruments in 2008.

This year’s highlights.

EZ-Lock Spindle Coupling SystemSafely attach spindles in much less time with this innovative, spring-loaded spindle coupling design. Attach the new coupling to your spindle and simply insert the spindle into the chuck. That’s it! EZ-Lock can be purchased as an option with new instruments or retrofitted to many existing instruments. Available on the following models: DV-I+/Prime Viscometers, DV-II+ series Viscometers, and DV-III+/Ultra Rheometers.

NEW Protective Keypad CoversProtect keypads against dirt, scratches, spillage and dust with our new “peel and stick” flexible covers. Packaged in quantities of 10, they are ideal for instruments with multiple users and busy, high traffic work areas. Use with DV-I series, DV-II series, CAP series, DV-III series, YR-1, VTE series and AST-300SY touch screen controller models.

DV-I Prime Viscometer Note the attractive look and feel along with several exciting new features including “Timed Option” and “Print” buttons. Optional WINGATHER software allows use of a PC to collect, analyze and record viscosity test data. Continuous torque sensing and data display easily make the DV-I Prime Viscometer one of the best values in the market!

AST-100 Process Viscosity Controller DesignsThe popular AST-100 in-line viscosity control system now has new mounting design options. Both instrument options maintain the features of our standard AST-100 design, with no moving parts and no need for recalibration.

Flange MountFlange mount designs are available to allow direct mounting onto a process tank through a sidewall flange.

Probe StyleThis design allows for insertion into the tank from above.

Quick Action Lab StandSimply push a button. Your viscometer moves in an easy, continuous motion up/down the lab stand, allowing for quick positioning and faster testing. Perfect for environments with heavy workloads, multiple users and varied testing situations. Available as an option for use with both new and existing Brookfield Viscometers/Rheometers.

BROOKFIELD VISCOMETERS & RHEOMETERS

Why measure viscosity? The ability to gather data on a material’s viscosity behavior gives manufacturers an important “product dimension.” Knowledge of a material’s rheological characteristics is valuable in predicting its pourability, its performance in a dipping or coating operation, or the ease with which it may be handled, processed, or used. The interrelation between rheology and other product dimensions often makes the measurement of viscosity the most sensitive or convenient way of detecting changes in color, density, stability, solids content, and molecular weight.

Why Choose Brookfield?Ease of use, flexibility, reliable performance and quality of service have made Brookfield Viscometers favorites all over the world. All Brookfield Viscometers are accurate within ±1.0% of the range in use and have a reproducibility within ±0.%. Test results can be duplicated anywhere in the world when the same model instrument is used.

The difficulty with viscosity measurements of hot melts and liquids at elevated temperatures has been in maintaining accurate temperature control that is consistent from sample to sample so that meaningful data could be obtained. The Brookfield Thermosel solves this problem by providing a stable, precisely controlled sample environment. This, together with the inherent accuracy of the Brookfield Viscometers, is fundamental to the Thermosel System, which produces viscosity measurements that are not only accurate but entirely reproducible. Several factors contribute to the stable environment: Non-fluctuating temperature control Small sample volume and insulated sample chamber which reduces temperature gradients within the sample The rotating spindle, which acts as a built-in stirring device The test procedure is quite straightforward. Once familiar with the system, unskilled operators can easily produce accurate, reproducible data.

BROOKFIELD ACCESSORIES

Small Sample Adapter for rheological evaluation where sample volume is limited

The Small Sample Adapter provides a defined geometry system for accurate viscosity measurements at precise shear rates. Consisting of a cylindrical sample chamber and spindle, the Small Sample Adapter is designed to measure small sample volumes of 2 to 16 mL, and easily attaches to all standard Brookfield Viscometers/Rheometers. Removable Sample Chamber The design of the Small Sample Adapter allows the sample chamber to be easily changed and cleaned without disturbing the set-up of the viscometer or temperature bath. This means that successive measurements can be made under identical conditions. Temperature Control The sample chamber fits into a water jacket so that precise temperature control can be achieved when the Brookfield circulating temperature bath is used. The stirring action of the rotating spindle, plus the small sample volume, helps to keep the temperature gradient across the sample to a minimum. Direct readout of sample temperature is provided using sample chambers with optional embedded RTD sensor connected to the DV-I Prime and DV-II+Pro Viscometers and the DV-III Ultra Rheometer. Working temperature range for the Small Sample Adapter is from –15°C to 100°C. Cylindrical Geometry The Small Sample Adapter’s coaxial cylinder geometry provides extremely accurate viscosity measurements at defined shear rates. Disposable Sample Chambers Disposable 13R chambers, for hard-to-clean materials, are available in a kit that comes complete with 100 chambers and special-sized water jacket (Part No. SSA-DCU). Additional disposable chambers can be purchased in quantities of 100 (Part No. SC4-13RD-100).

Reduces measuring range to as low as 1 cP, depending on viscometer used Simple attachment to a standard Brookfield Viscometer or DV-III Ultra Rheometer Small sample size: 16 mL Cylindrical geometry provides defined shear rates for detailed product analysis Removable cap of low density polyethylene can be considered disposable for one-time use if required Stainless steel parts are easily cleaned

BROOKFIELD ACCESSORIES

The Brookfield UL Adapter is used with any standard Brookfield Viscometer and Rheometer to make accurate and reproducible measurements on low viscosity materials. Newtonian and non-Newtonian materials can be measured. It is most commonly used with the LV series instrument (at 60 rpm, these models have a full scale range of 1-10 cP with the UL Adapter). The UL Adapter consists of a precision cylindrical spindle rotating inside an accurately machined tube. Its rheologically correct cylindrical geometry provides extremely accurate viscosity measurements and shear rate determinations. The tube has a removable end cap which allows the open ended tube to be used in a beaker or tank. With the cap in place, the closed tube can be immersed in a temperature bath or used with the ULA-40Y water jacket for precise temperature control. Working temperature range is from –15°C to 100°C.

Why replace your current UL Adapter? The new design saves a significant amount of time on set up and tear down of equipment. The new spindle with universal connector is easier to thread onto the viscometer. The entire assembly can remain in place between tests with only the chamber being removed to prepare the next sample for testing.

Enhanced UL Adapter ideal for low viscosity materials

Detail of UL Adapter: 1. Locating Channel Assembly, 2. Water Jacket, 3. Chamber Tube, 4. Collar with thumbwheel, 5. Tube End Cap, 6. Spindle with universal coupling

Quick & Easy Design Saves TimeQuick & easy attachment of spindle: Longer coupling nut for better grip and twist action to connect spindle to viscometer. Redesigned bracket for attaching ULA assembly to viscometer. Provides more clearance for finger grip on coupling nut.

Quick & easy removal of chamber: Simply loosen thumbwheel, chamber slides down and out. Permits rapid testing of multiple samples by swapping out chambers. Choice of leaving spindle attached to viscometer or disconnecting spindle and removing it with chamber. Water jacket sleeve remains in place attached to viscometer while chamber and/or spindle only are removed. Saves set up time for the operator.

Unique ULA Assembly Design Provides Multiple Benefits: Sturdy collar attaches to locating channel assembly which is connected to viscometer pivot cup. Sample chamber is held firmly in place by the collar which provides proper alignment for the spindle rotation within the chamber. Universal coupling nut on spindle ensures firm connection with viscometer and automatic self-centering of spindle in chamber during rotation. Direct immersion of chamber in temperature bath is quick and easy. Water jacket grips slide over collar and operator manually aligns the collar/jacket assembly to allow easy insertion of chamber containing sample to be tested.

For viscosity/consistency measurement of gels, pastes, creams, putty, gelatin and other non-flowing substances. A Brookfield Viscometer or Rheometer is mounted on the Helipath drive motor and a T-bar spindle is attached to the viscometer using a special coupling. The drive motor slowly lowers or raises the viscometer so that the T-bar spindle creates a helical path through the test sample thus eliminating the problem of “channeling”. Compatible with standard Brookfield Viscometers and DV-III Ultra Rheometers Simple to set up and clean Provides a solution for hard-to-measure materials Complete with drive motor, 6 T-bar spindles with coupling, case, lab stand, rod and base

Viscosity StandardsBrookfield Viscosity Standards provide a convenient, reliable way to verify the calibration of your Brookfield Laboratory Viscometer/Rheometer. Brookfield Viscosity Standards

are Newtonian, and they are available as either silicone or oil. Silicone fluids are less temperature sensitive than oil fluids. Note: Brookfield recommends that all fluids be replaced annually

Accuracy: ±1% of viscosity value Excellent temperature stability Recommended for use with Brookfield and most other rotational viscometers Most economical Special viscosity values and temperature calibrations available upon request

VisCal KitThe Brookfield VisCal Kit provides all the necessary items to verify calibration of your Viscometer/Rheometer. Includes Brookfield 600mL Beaker, 1 pint of Silicone Viscosity Standard, Dispersing Bottle for cleanup and Trapper Cleaning Agent (available only in USA).

Silicone Viscosity StandardsThese fluids are most commonly used to verify calibration of Brookfield Viscometers/Rheometers.

Special Order Silicone FluidsFor our customers needing a nonstandard viscosity or temperature range, our silicone fluids can be modified to meet most requirements. Viscosity Blends Calibrated at 25°C (77°F)Minimum: 5 cP (mPa•s)Maximum: 60,000 cP (mPa•s)Blends will be within ±2% of requested value Temperature CalibrationsMinimum: 10°C (50°F)Maximum: 80°C (176°F)Minimum temperature increment: 2°C

Primary CharacteristicsPARAMETER SENSORIAL DEFINITION INSTRUMENTAL DEFINITION

HARDNESS

SPRINGINESS

ADHESIVENESS

COHESIVENESS

Force required to compress a food between molars. Dened as force necessary to attain given deformation.Rate at which a deformed material goes back to its undeformed condition after deforming force is removed.

The work necessary to overcome the attractive forces between the surface of the food and the surface of other materials with which the food comes into contact (e.g. tongue, teeth, palate). Work required to pull food away from a surface. The strength of internal bonds making up the body of the product (greater the value the greater the cohesiveness)

Peak force of the rst compression cycle.

Height that the food recovers during the time that elapses between the end of the rst bite and the start of the second bite. The negative area for the rst bite, representing the work necessary to pull compressing probe away from sample.

The ratio of positive force during the second to that of the rst compression cycle (downward strokes only)

*Parameters utilized in determining the manner in which a food handles and behaves in the mouth. PARAMETERS AS DENOTED WITHIN ORIGINAL SZCZESNIAK et al (1963) AND BOURNE (1978) TPA WORK

Secondary CharacteristicsPARAMETER SENSORIAL DEFINITION INSTRUMENTAL DEFINITION

BRITTLENESS(Fracture force)

GUMMINESS

CHEWINESS

The first significant break in the first compression cycle.

Calculated parameter: Product of Hardness x Cohesiveness

Calculated Parameter: Product of Gumminess x Springiness (essentially primary parameters of Hardness x Cohesiveness x Springiness)

Force at which a material fractures. Related to the primary parameters of hardness and cohesiveness, where brittle materials have low cohesiveness. Not all foods fracture and thus value may relate to hardness if only single peak is present. Brittle foods are never adhesive.Energy required to disintegrate a SEMI-SOLID food product to a state ready for swallowing. Related to foods with low hardness levels.Energy required to chew a SOLID food product to a state where it is ready for swallowing. attribute is dicult to quantify precisely due to complexities of mastication (shear, compression, tearing and penetration).

BROOKFIELD TEXTURE ANALYZERS

What is texture analysis?Texture analysis is primarily concerned with the evaluation of mechanical characteristics where a material is subjected to a controlled force from which a deformation curve of its response is generated. These mechanical characteristics in food can be further sub-divided into primary and secondary sensory characteristics which have proven to be correlated to sensory perception.

Consumer products succeed in the marketplace in part because their “textural characteristics” are pleasing to customers. This is certainly true with food products but it also applies to cosmetics, pharmaceuticals, packaging, industrial materials and even adhesive type materials.

Why Choose Brookfield?Brookfield has over 70 years experience in providing reliable, low cost viscosity measuring instruments while offering high quality product support. We are now using this recipe for success to expand our line of physical testing products to include texture analyzers.

Brookfield’s redesign of the LFRA enhances the load capacity and test speeds of the old model, which evolved from the Stevens range of Texture Analyzers and further back to the Boucher Jelly Tester.

The Brookfield Texture Division provides customers with a complete texture assessment service. We specialize in the development of novel and innovative test applications and accessories for solid and semi-solid materials, enabling our customers to maximize the practical value of their texture studies within all test environments.

Utilizing simple compression or tension forces, we are able to imitate almost all conditions imposed during the manufacture or handling of a wide range of foods, industrial materials and personal care products. Such measures provide a “real life” insight into the physical properties of a product, often invaluable in maintaining consistent quality manufacture while minimizing rejects in production.

Recommended instrument choices

The rheological properties of solder paste affect behavior during application to electronic assemblies. This includes dispensing operations and flow characteristics during screen and stencil printing. The Brookfield RVDV-I Prime Viscometer with Helipath Stand and T-bar spindle provides single point viscosity measurement for QC control. The Brookfield HBDV-II+ Pro Viscometer with Spiral Adapter offers an automated test method for total flow curve evaluation. Lab Features & Benefits Spindle can be inserted directly into paste container Methods comply with IPC test specifications

The physical properties of tablets and capsules are a critical characteristic to both ease of manufacture and product functionality. The hardness of a tablet or the strength of a gel capsule will have an effect on drug release rate in the body. Tests for hardness serve as a QC indicator at the point of packing or filling. The QTS 25 and its associated test accessories can accommodate variable geometries of capsules and tablets while maximizing the value of data obtained from texture investigations. Texture Features & Benefits Multiple applications with single instrument Rapid measurement of physical properties, such as tablet hardness and gelatin strength Stand-alone or PC operation

Most ointments need to be sufficiently thick when standing to prevent them from oozing away from the intended area of use. They also need to flow easily when applied (known as shear thinning behavior). The R/S-CPS Rheometer is the ideal instrument to measure high viscosity at near zero shear rate to determine yield stress values and to create viscosity vs. shear rate flow curves which simulate rubbing and spreading. Lab Features & Benefits Small sample volume Automated test method Rapid temperature equilibration Easily cleaned and maintainable

For your viscometers and rheometers, we will inspect your instrument for wear, clean, adjust and lubricate the internal mechanisms, replace part of the sensing system element (the pivot

support assembly and, when required, the pointer shaft), and check your spindles. Spindles that are returned to a Brookfield Service Center are also straightened if necessary. In addition to this maintenance, we calibrate and certify in writing that your instrument is operating within proper Brookfield specifications. This certification states that your instrument has been calibrated against standards which are traceable to the National Institute of Standards & Technology (NIST). This is becoming an increasingly important requirement as industry throughout the world takes steps to comply with ISO 9000 regulations.

For texture analyzers, we also inspect for wear, clean, adjust and lubricate internal mechanisms, and adjust, if necessary, the zero and span for proper load cell performance. Certified calibration weights can be purchased for your texture analyzer.

GlossaryViscosity Glossary3Aa US industrial standard for process equipment design; required certification for clean-in-place capability.

Absolute Viscositythe viscosity value associated with aNewtonian material

ASTMAmerican Society of Testing and Materials

Autorangemaximum viscosity value that can be measured using a specific spindle at a designed rpm.

bobspindle used with PVS Rheometer;also referred to as “bob/stator” because it does not rotate on this instrument. The sample cup rotates instead, causing the shearing action.

Concentric Cylindera cylinder within a cylinder. For viscosity measurement, a cylindrical spindle rotates within a cylindrical chamber. Also known as “Coaxial Cylinder” because both cylindershave the same center line.

DINDeutsche Industrie Normung, Germanorganization responsible for establishing test standards; similar to ASTM in United States.

dyne•cma unit of measurement for torque.

Footprintthe bench space or area required for an item of equipment.

Gapthe distance between the spindle and the chamber or cup in which the spindle is rotating.

Guard Legthe protective bracket for spindles supplied with standard Brookfield LV and RVViscometers/Rheometers.

In-lineprocess viscometer placement in a pipe.

NISTNational Institute of Standards and Technology. US Government organization for test standards.

Newtoniana material whose viscosity value is the same at all shear rates.

Non-Newtoniana material whose viscosity changes as shear rate changes.

On-lineuse of a process viscometer to provide continuous viscosity measurement of a material.

Pneumaticair operated

PPplate and plate geometry.

Relative Viscositythe viscosity value of a non-Newtonianmaterial at a defined shear rate.

RPMrotations per minute; a unit of measurement for spindle speed.

RTDresistance thermal detector; type of sensorfor measuring temperature

sec-1

the scientific unit of measurement for shear rate; expressed as “reciprocal seconds” or “inverse seconds.”

Shear Ratethe velocity gradient in a flowing material; the shape and rotational speed of the spindle rotating in a chamber or cup are used to calculate shear rate.

Shear Stressthe force per unit area used to move a material.

Spindle Geometrythe shape of a spindle. Brookfield spindles supplied with standard Viscometers/Rheometers (Dial Reading, DV-E, DV-I Prime, DV-II+Pro, DV-III+) are disc type. Other choices include Cylindrical, Cone, Plate, KREBS, etc.

Torque Rangethe torque measurement capability of a Brookfield Viscometer/Rheometer measured in dyneocm;designations such as LV, RV, HA or HB are used to define the Torque Range for a specific instrument.

Torque %the amount of torque resistance measured by a rotating spindle immersed in a material.

Yield Stressthe amount of force required to cause amaterial to flow.

Texture Analysis GlossaryCompression Testingthe sample is “compressed” with a probe of greater surface area to that of the sample.

Deformation the change in height of a sample whena force is applied.

Extrusion Testingthe sample is compressed until flow commences through an outlet. Texture analysis utilizes both forward (forced through an aperture) and backward extrusion (forced back around the compressing probe).

Penetration Testingthe sample is “penetrated” with a probe of smaller surface area than that of the sample. This creates both shear and compression forces within the sample and provides a good indication of product hardness and consistency.

Shear Testingblades or wires are utilized to cut through the sample and evaluate cross-sectioned characteristics using a combination of compression, shear and tearing forces dependant upon the geometry of the cutting fixture.

Snap Testingused to assess the fracture and bendcharacteristics of solid materials supportedat either end and compressed in its center.

Stress Relaxationsample is compressed to a target distance and held for a period of time. The sample relaxes under constant stress and the rate and degree of relaxation is used to evaluate sample elasticity, freshness, etc.

Tension Testingthe sample is fixed to both the base and the traveling beam of the texture analyzer and “stretched” via an upward movement.

Conversion TablesViscosity 1 cP = 1 mPa•s 1 P = 100 cP 1 Pa•s = 1,000 mPa•s

Sample Volume 1 L = 1000 mL 1 mL = 1000 µL 1 gal = 8 pt. = 3.7 L 1 pt = 16 oz.
