James W. Grebe Jr. inducted into the Bakers Hall of Fame

As the third generation of a now fourth generation bakery operation, James W. Grebe Jr., or “Jimmer”, as every-one in the Wisconsin Bakers Association (WBA) knew him, was recognized for his contributions and dedication to the baking industry with an induction into the WBA Hall of Fame on Monday, March 7, 2016 during the WBA’s Awards and Appetizers Networking Evening in Milwaukee, WI.

“I don’t believe he ever said no to one thing that was ever asked for by this organization,” said WBA’s CEO, Dave Schmidt, CMB. “Throughout the past 35 years, Jimmer’s constant guidance and leadership has been a strong influence on Wisconsin’s baking industry.”

Grebe served for many years on the WBA Board of Directors and volunteered his time to assist with golf outings and other community events. Grebe’s sons’ Brandon, Garrett, and Colton were in attendance to accept the award on his behalf. According to Grebe’s Bakery’s website, “Family-owned and operated since 1937, Grebe’s Bakery is now in its 4th generation and is proud to still call Wisconsin our home!”

The WBA seeks to honor an individual each year whose service and contributions to the baking industry and to the WBA have proven over time to leave a lasting impact by induction into the WBA Bakers Hall of Fame. BB

2016 Art of the Cake Competition Winners AnnouncedThe Wisconsin Bakers Association (WBA) is pleased to announce the winners from this year’s Art of the Cake Competition held March 7-9, 2016 during the Midwest Foodservice Expo in Milwaukee, WI. With the highest turnout of entries in the contest’s history, professional and beginner cake artists from across the state of Wisconsin competed in the Extreme Wedding Cake Challenge, Extreme Groom’s Cake Challenge, Creative Cake Decorating Competition, and the Cupcake Warrior Championship.

In addition to the cake and cupcake competitions, the WBA introduced a brand new contest - Wisconsin’s Ultimate Donut Duel. The duel highlighted five donut categories: Favorite Fritter, Best Bismarck, Most Creative Cruller, Sensational Savory Long John, and Hole-in-One Donut Holes.

Judges for the Extreme Wedding Cake Challenge, Extreme Groom’s Cake Challenge, and the Creative Cake Decorating Competition were Ashley Andre, Wisconsin DATCP, Natalya Chaffee, Augusta Bakery, Jennifer McClure, Fox Valley Technical College, and Diane Wisnieski, The Extra Special Touch Bakery. Augusta Bakery Named 2016 Bakery Operation of the YearAugusta Bakery, located in Augusta, WI, was named the 2016 Bakery Operation of the Year (BOY) by the Wisconsin Bakers Association (WBA). The award was presented on Monday, March 7th, 2016 during the WBA’s Awards & Appetizers Networking Evening in Milwaukee, WI. This year’s awards ceremony was held in conjunction with the Midwest Foodservice Expo.

Four outstanding Wisconsin baker-ies were nominated for the Bakery Operation of the Year this year. Past Winners of this award voted to determine this year’s winner. The recipient of the BOY award re-mained a secret until the moment the name of the bakery was re-vealed. Natalya and Robert “Bob” Chaffee, CMB, owners of Augusta Bakery, were in attendance to ac-cept the award.

The Bakery Operation of the Year award was created back in 2001 to recognize an outstanding bakery operation annually. Each year’s winner gets to keep the coveted BakeMark trophy for one year and the traveling trophy is then passed on to the new winner. The winner also receives a permanent plaque to display in their bakery.

Rebecca White Body from the Eau Claire Community Foundation submitted the Bakery Operation of the Year nomination for Augusta Bakery. In her nomination, she wrote, “When Robert and Natalya Chaffee purchased the bakery in 2012 and changed the name to Augusta Bakery, I was wary. Since most business owners are on a first-name basis with their customers in our small town (Augusta, WI, population 1500), I’d grown to know and like the previous owners, and I was sorry to see them give up the business. However, the Chaffees quickly won me over, not only with the quality and variety of their baked goods, but with their friendliness and professionalism.”

WBA Plans Annual Member Meeting

Whether you have just joined the WBA or have been a loyal member of the association for decades, all WBA members are invited to attend our upcoming annual meeting on Tuesday, April 26th at 10:00 AM. This meeting will be held at Valley Bakers Cooperative Association located at W6470 Quality Drive in Greenville, WI.

Join us as we take the first steps towards a change that will promote a clearer direction and improve the way the WBA Board of Directors functions to serve and provide the right leadership for future generations of baking professionals!

Last week, we sent out a packet of information to all WBA members in the mail. This packet included amended articles of incorporation and proposed by-laws for the organization. If you do not receive this packet by Friday, April 1st, please let us know! The WBA Board of Directors welcomes your input and hopes you will take the time to review these documents. We encour-age you to attend our upcoming annual meeting! Your participation and suggestions will pave the way for the WBA Board of Directors to begin its work.

We would also like to invite you to attend our Spring Bakers Forum at 1:00 PM on April 12th at Manderfield’s Home Bakery located at 5100 W. Michaels Drive, Appleton, WI. Wedding cakes and trends will be the hot topic of this forum. You truly don’t want to miss it! BB

IDDBA Announces Key Highlights and Speakers for 2016 Show & Sell Center Press release by IDDBA:

The International Dairy-Deli-Bakery Association™ (IDDBA) has announced key highlights for the Show & Sell Center at the Dairy-Deli-Bake Seminar & Expo, June 5-7 in Houston. The Show & Sell Center is the huge interactive marketplace that is the centerpiece of the industry-leading show, providing best-in-class merchandising, creative new concepts for retailing food, invaluable take-away tools, inspiration, education, and practical information.

“The Show & Sell Center proves itself each year to be one of the most visited and talked about elements of the show,” says Jeremy Johnson, Education Director of IDDBA.

To keep things fresh and new, the layout and the department highlights of the Show & Sell Center changes each year. A few of the new merchandising ideas that will be showcased in this year’s Show & Sell Center include:

Cheese: View merchandising concepts for multiple occasions and uses; focus on comfort foods; and educate consumers on types of cheese.

Cakes: Learn about the history of cakes, and the integral and recurring role of cake in life-event celebrations; see live decorating demos; and uncover best practices for displaying tiered cakes.

Bakery: Focus on ancient grain and organic breads; discover bread and butter pairings; introduce branding in the in-store bakery (ISB); delight in a premium donut program; and engage with an ISB pizza program focusing on crust.

Deli: Rediscover the deli with a sandwich program featuring ISB bread and unique ingredients; introduce the Pho bar; and explore charcuterie flights.

Meals: Tour the grocerant piazza; indulge in ethnic-inspired rotisserie meals; discover efficient and consistent sous vide solutions and blast-chilled entrees; and venture to the taco truck for new possibilities.

While in the Show & Sell Center, don’t miss the workshops. They are timely, tactical, interactive 30-minute sessions that promote learning, community, and networking. Workshop speakers include Anthony Bourdain, J.J. Watt, Max McCalman, Harold Lloyd, Phil Lempert, and Lidia Bastianich. Additionally, the FDA will be presenting on menu calorie labeling.

“The Show & Sell Center was created in direct response to retailers’ requests for executable ideas on how to put together their own creative merchandising displays,” says Johnson. “The need for new ideas and new sales tools is never ending, and the Show & Sell Center has become a go-to destination and resource for inspiration.” BB
