1. Støt pepperkornene fint i morteren og bland dem med sukkeret og JOZO
05 ekstra grovt havsalt. Hakk dillen (inkl. stilkene) grovt og bland den med
havsaltblandingen
2. Legg en stor bit aluminiumsfolie på et fat for å pakke inn laksen.
Del laksen i to like store deler og legg stykkene på aluminiumsfolien med
skinnsiden ned. Fordel blandingen av salt og dill over begge laksedelene, og
legg dem deretter oppå hverandre med de saltstrødde sidene mot hverandre.
Brett folien stramt omkring dem. Legg deretter et fat på toppen av det hele
med vekt på, f.eks. noen steiner eller melkekartonger.
3. Sett laksen i kjøleskapet og la den marinere ett døgn, men maksimalt to
døgn. Jo lengre laksen ligger i marinaden, jo saltere blir den. Tøm av fuktigheten
som har blitt frigjort under marineringen.
4. Pakk ut laksen og tørk bort overflødig saltblanding fra laksen.
5. Skjær laksen i tynne skiver med en transjerkniv, og server
den til frokost, lunsj, som forrett eller som snacks sammen
med toast og sitron. Smaker også nydelig sammen med
varmt brød, bagler eller kjeks med kremost og litt sennep.
Den marinerte laksen er holdbar i 3 til 5 dager
i kjøleskapet og kan gjerne fryses.
