Melt shortening in a mixing tank, heating and holding no more than 10 degrees over its melting point.

Add cheese powder and blend well while taking care to minimize the amount of air going into the slurry.

Bakery applications

Cheesecake

Scale cheese powder and buttermilk in a bowl. Mix until smooth.

Scale sugar and flour into a mixing bowl.

Scale eggs in a separate container. In that same container, scale sour cream and vanilla extract.

Mix cream cheese, sugar, and flour for 3.5 minutes on low speed.

Add eggs, sour cream, and vanilla. Mix 2.5 minutes on low speed.

Spray cooking spray on the bottom and around the sides of the pan. Using a scoop, add enough graham cracker crumbs to cover the bottom of the pan and edges.

Hold bottom of the pan and dump remaining crumbs. Using gloved finger, run around rim/edge of pan and allow excess to fall to bottom of pan.

Scale 1680 grams of batter in prepared pan.

Bake at 300° F for 1 hour. Turn o� oven. Leave cheesecake inside for 1 hour.

Refrigerate cheesecake overnight.

Cake filling

In a small sauce pan, place milk, cheese powder and all-purpose flour.

Heat over low to medium heat until mixture starts to thicken. Stir frequently.

Remove from heat and cool completely.

Cream together sugar, shortening and butter.

Combine ingredients.

Frosting

Combine milk and cheese powder in a small bowl until completely mixed.

Using a mixer, cream butter.

Slowly add confectioners sugar until completely mixed.

Add vanilla extract.

In a small bowl, combine parmesan cheese and cheese powder.

Melt butter and add garlic. Spread evenly over the bread.

Top with the cheese mixture. Bake for 5-7 minutes at 375° F.

Remove from oven and turn on broiler.

Place bread under broiler until bubbly and edges begin to brown, about 30 seconds to 1 minute.

Melt butter and stir in dry ingredients.

Brush on fresh baked bread, pizza crust, cooked pizza or pretzels.
