HEALTHY RASPBERRY MUFFINS

• 1/2 cup rolled oats• 1 cup low-fat milk• 3/4 cup flour• 1/2 cup cornmeal• 1/4 cup wheat bran• 1 tablespoon baking powder

• 1/4 teaspoon salt• 1/2 cup honey• 3 1/2 cups canola oil• 2 teaspoons lime zest• 1 egg, lightly beaten• 2/3 cup raspberries

• Preheat oven to 400°F. Line a 12-cup muffin pan with paper liners.• Combine oats and milk in a large, microwave-safe bowl. Cook for 3 minutes until

oats are tender. Set aside.• Combine flour, cornmeal, bran, baking powder, and salt in a large bowl. Stir in

honey, oil, lime zest, egg, and oat mixture.• Fold in raspberries.• Divide batter equally into each cup.• Bake 16–18 minutes. Allow to cool on a cooling rack before serving.
