Christmas Cake Truffles Ingredients: 1 x Baker’s Delight Christmas cake 150g dark chocolate, chopped 1 tbsp coconut oil 100g white chocolate, chopped Dried cranberries to decorate Fresh mint leaves to decorate Method: 1. In a large mixing bowl, break up Christmas cake into breadcrumbs. 2. Melt chocolate with coconut oil. 3. Pour melted chocolate mix into breadcrumbs and combine. 4. Roll heaped tablespoons of mixture into balls and place onto a lined tray. Place in fridge for 1 hour to firm up. 5. Melt white chocolate. As it starts to slightly cool and thicken, use a teaspoon to carefully drizzle white chocolate over the truffles. 6. Decorate with fresh mint leaves and cranberries on top to resemble Christmas holly. Place in fridge to set. Keep refrigerated until ready to eat.
