Café Boleto

Café Boleto is a family business founded upon the goal of providing the local market with the specialty coffee produced in Costa Rica, most of which is exported. It began as a casual experiment in March 2012 with a small home roaster, where several batches rendered results highlighting distinct attributes unlike those offered by commercially available coffee, which led us to a passionate quest. !In this effort we have acquired a commitment for quality, purchasing only specialty grade green coffee according to Specialty Coffee Association of America (SCAA) standards. For decades, Costa Rican coffee drinkers have consumed low quality coffee, contradicting its legacy as one of best coffee producing countries. This occurs because the vast majority of the specialty coffee is exported and consumed in other parts of the world, but not at their origin. Thus, Café Boleto has a dedication to roast the best coffee and promote its availability. !Our coffees possess a traceability that meticulously details each origin, providing dependable information on the product and the processes that have determined the quality of the end product. !Café Boleto is a Specialty Coffee micro-roaster . !!

¿What is a Boleto?

In the 1840's, due to the lack of official money in circulation, the "boleto" was born an alternative legal tender. This allowed coffee producers to pay the salary of their employees and cover the expenses of the collection and processing of the coffee beans. !"Boletos" were manufactured in a variety of material, like tin, copper, bronze, aluminum, lead and bakelite. Generally they were round and their diameters ranged from 10 to 47 millimeters. Usually they were stamped with the name of the issuing coffee farm and their equivalent monetary value (cents, "reales") or collected volume ("fanega", "cajuela", "quintal"). !A boleto is not only a token; it is the embodiment of national coffee history and the commitment to quality of the local production. !Boleto is coffee. !!!

Specialty CoffeeAccording to the Specialty Coffee Association of Europe (SCAE), Specialty Coffee is defined as a "crafted quality coffee-based beverage, which is judged by the consumer to have a unique quality, a distinct taste and personality different from, and superior to, the common coffee beverages offered." The beverage is based on beans that have been grown in an accurately defined area, and which they meet the highest standards for green coffee, roasting, storage and brewing. !According to the Specialty Coffee Association of America (SCAA) and the SCAE, Specialty Coffee is free of primary defects, having no quakers, being properly sized and dried, free of faults and taints, having distinctive attributes and a distinctive character in the cup with a score of 80 or above when graded according to SCAA Standards. !At Café Boleto we conclude that Specialty Coffee can be defined as one that meets a series of quality control specifications in the cultivation, harvesting, milling, drying, roasting and preparation processes, leading to a beverage with SCAA score of 80 and above.
