That Winning Moment…

It all began with the announcement that these young ladies were on the SCHS 2014 Homecoming Court. Both were very excited even “totally speech-less” as Caroline stated. However, Faith “was not speechless. I was happy and glad I made it.” When asked about shopping for that perfect dress, their

eyes lit up as they began talking about their dress shopping experience. Caroline went to Bedazzled in the mall and “tried on 4 dresses. I tried on a gold one and everyone was crying.” She knew that was the one and said she looked like “Taylor Swift.” Faith found that perfect dress of purple and real-ized it needed to be “hemmed, A LOT!” Faith also stated that she “didn’t want to fall and trip over it.” The big day had arrived and even with the fore-cast of rain they were very anxious and nervous about the evening. Caroline, when hearing about the possibility of rain, stated, “Oh my gosh! We got all ready for this!” On the other hand, Faith was worried about the homecoming dance and the

chance it could be cancelled. Due the threat of severe weather, rain, and lightning the administration of South Caldwell High School made the difficult decision to move the homecoming festivities inside to the gymna-

sium. The court was presented to family, friends, students, staff and guests in a crowded gym awaiting that winning moment when the Maid of Honor and Queen would be announced. Faith was escorted by senior classmate, Carter Mackie and Caroline was escorted by her father, Kevin Tuttle. Both ladies were “nervous, scared and excited at the same time” as they enter the crowded gym.

Caldwell Journal Weekly Recipe Parkerhouse Rolls

Ingredients 3 to 3 1/2 c. all-purpose flour

1 pkg. active dry yeast 3/4 c. milk 1/4 c. sugar

1/3 c. butter or margarine 1/2 tsp. salt

2 eggs Butter or margarine, melted

Instructions In large mixer bowl combine 1 1/2 cups flour and the yeast. In saucepan, heat milk, sugar, salt and 1/3 cup butter or marga-rine until warm (115 to 120 degrees) and butter is almost melted; stir constantly. Add to flour mixture; add eggs. Beat at low speed of electric mixer for 1/2 minute, scraping sides of bowl constantly. Beat 3 minutes at high speed. Stir in as much of remaining flour as you can mix in with a spoon. Turn out onto a lightly floured surface. Knead in enough of the remaining flour to make a moderately stiff dough that is smooth and elastic (6 to 8 minutes total). Shape into a ball. Place in lightly greased bowl; turn once to grease sur-face. Cover; let rise in warm place until double (about 1 hour). Punch down; divide dough in half. Cover, let rest 10 minutes. On lightly floured surface, roll each half of the dough to 1/4 inch thickness. Cut with a floured 2 1/2 inch round cutter. Brush with melted butter. Make an off-center crease in each round. Fold so large half overlaps small half slightly. Place rolls, with large halves up, side by side in a greased 13 x 9 x 2 inch baking pan. Cover, let rise until nearly double (about 30 minutes). Bake in a 375 degree oven for 15 to 18 minutes or until done. Makes about 2 dozen.

The moment came that everyone had been wait-ing for…..”The 2014 – 2015 South Caldwell High School’s Maid of Honor is Faith Ball.” Faith was very excited when she heard her name but did not scream. “My parents told me not to scream so I had to keep it shut.” However, Faith could not contain her smile for the camera. Then there was silence and anticipation in the air as the announce-ment was made ….”The 2014 – 2015 South Cald-well High School Homecoming Queen is Caroline Tuttle.” Caroline was overjoyed with excitement and could not contain her screaming. “My parents said nothing about it so I screamed.” Much of the crowd, including the homecoming court was over-joyed with tears for these two young ladies; a rep-resentation true and sincere beauty. After the excitement of crowning, pictures and congratulations, it was time to go home. Faith en-joyed a meal at Waffle House and a snack of Spa-ghetti-O’s before bed. She was “too excited to sleep.” Caroline, on the other hand, was exhausted from a sleepless night on Thursday and went “right to bed.” They’ve had a few days to let the good news sink in and are now back at school. They were greeted at school on Tuesday morning with lots of con-gratulations and applause. Both said it felt “good to be at school” and wanted to talk to everyone about Friday night. They also said they were happy to see all the pictures on Facebook and to be on TV. Caroline was especially excited as she gets to come back next year and crown the 2015 – 2016 Home-coming Queen. It was such an honor to sit down with these two young ladies and hear all about their special night. Their joy and happiness are contagious! Spartans Win Seesaw Battle With Red Tornadoes

By Freelance Sports Writer Dan O’Neal...It was another weird Friday evening as South Caldwell faced their conference rival, the Hickory Red Tornadoes for a key conference matchup. Once again, the time for the kickoff was changed to 8:50pm due to the heavy downpour of rain that fell upon Spartan Stadium, which made the backdrop for this contest a bit unusual. The heavy rains also brought about a change in the evening festivities as it was Homecoming 2014. Due to the wet field condition, the homecoming court had to move to the gymnasium. Here, the Cald-well Journal offers a word of congratulations to Caroline Tuttle, who was crowned the 2014 Homecom-ing Queen. The Red Tornadoes entered Friday's night game with a 1-5 record. Prior to the contest, South Caldwell head coach Butch Carter could only speak highly of Hickory football and highlighted the fact their pre-sent record came as a result of a very difficult non-conference schedule. Coach Carter was spot on as the teams who defeated them had a combined record of 23-6-1. The Spartans came into this matchup riding a three game winning streak but knew not to take their 1-5 opposition lightly. Spartan Nation knew full well that Hickory would come out strong as they knew the importance of winning conference games enable teams to qualify for the state playoffs. Hickory there-fore, would have loved nothing more than the "Red Tornado" effect to crash the South Caldwell Home-coming gala. Hickory came out showing their agility and athleticism and controlled the line of scrimmage for much of the first frame as they maintained possession of the football for almost ten minutes but were unable to score in the period due to a blocked field goal attempt by Butter Weaver.

Spartans Win Seesaw Battle With Red Tornadoes Continued from page 8...

The Spartans began the second period with a Nick Hudson forty-two yard punt. Nine plays and forty-five yards later, the Red Tornadoes would strike first on a Jaquan Crawford four yard touchdown run followed by a Nathan Paquin extra point to put Hickory up 7-0 at the 8:06 mark. Paquin would make all four of his extra points as did the Spartans Will Benfield. From there, South would score on a 13 play sixty-three yard drive as QB Reed plunged across the goal-line knotting the score at seven. Then back come the Red Tornadoes as QB Crawford connected on a nineteen yard throw to WR Darius Hoover, giving Hickory a 14-7 halftime advantage. South would tie the score again in this seesaw battle, as QB Reed ran for a five yard score at the 5:18 mark of the third quarter. However, it did not take long for Hickory to respond as RB T.J. Saxton ran through the Spartans goal line shield for a one yard score, putting the Red Tornadoes up 21-14 at 10:57 in the fourth frame. The seesaw balanced toward the Spartans again as QB Reed threw to a wide open Philip Adams in the flat, and ran quickly past the Red Tornado defenders for a sixty yard touchdown, tying the score at 21-21 with 9:57 left in the con-test. Three plays into the next Hickory series had QB Crawford throwing a long seventy-six yard touchdown pass to WR Alex Roberts with 8:39 left in the game, putting Hickory up again at 28-21. It was obvious that Spartan Nation supporters were slightly on edge as time slowly ticked away. The good news for Spartans fans was this would be the last score for the Red Tornadoes. It was also apparent that the off-season conditioning for the Spartan players was taking effect while Hickory began to encounter fatigue in the last 6:30 of the game. South quickly capitalized on crucial Hickory penalties and responded with a six play twenty-seven yard drive as QB Reed would throw his second touchdown pass to utility player Garrison Drum to tie the score at 28 with 6:03 left in the game. On the next series, Hickory would turn the ball over on downs as the Spartans defense rose to the oc-casion with 3:50 remaining in regulation. South would be forced to punt after their next offensive series and punter Nick Hudson pinned the Red Tornadoes deep on their own four yard line. From there, Hick-ory was unable to move the football, forcing a punting situation. Reed then put his defensive cap on and blocked Paquin's punt and recovered at the Hickory thirteen with 1:30 left in the game. Reed followed his outstanding defensive feat with a thirteen yard touchdown run, putting the Spartans up, 35-28 with 1:23 remaining. Marvin Villanueva sealed the deal, intercepting Crawford's pass and ensured the Spartans Homecoming victory. "Hickory came in with a great game plan. But we didn't give up, an inch here, an inch there. There was a great attitude and effort with our kids. Gavin Reed came up big and we really gained energy in the fourth quarter. We simply have to keep our focus on getting better" commented Coach Carter. South Caldwell improved to 6-1 as well as a 3-0 conference record. This sets up a showdown of un-beatens in the Northwestern 4A/3A as the Freedom Patriots travel from Morganton to Spartan Stadium next Friday at 7:30pm. According to the WBTV weather forecast, this Friday is supposed to be sunny. Then again, the weather people have missed the mark so stay tuned Spartan Nation!

Dr. Herb Says….Take These Steps To Health

Energy

It is hard to function in life when a person does not have any energy. There are many things that you can do to help your energy level. During your waking hours stay active: Do some-thing. Work and exercise is good for you. And, at the time you are supposed to rest; rest. Stay active during the day and sleep at night. Do not stay up all hours of the night watching TV or anything. Your body needs rest and sleep to have energy for the day. Do not eat foods that deceive you; that give you energy at first then do not feed your body and actually drain your energy supply. Such foods are sugar, and refined carbohydrates. Do not take drugs to try and stimulate energy. Do not drink alcohol or caffeine drinks: they rob your energy. Smoking is bad to deplete your body of energy. Eating too much, and eating all the time, takes a lot of energy. Keep your mind on the Lord and trust in Him. Avoid stress. Worry, anxiety, stress, will zap your energy: when you could just turn it over to the Lord, He can han-dle it better than you can. Drink water and eat fresh and raw foods that God made. Do not eat man-made foods, which are robbed of their nutrients. Do not eat anything animal; it takes too much energy to digest it and process it through the body. Do not eat at night, you will rest.

Low Thyroid

The Thyroid regulates the function of all our cells. It is essential that the thyroid is normal in order to keep our energy up, and our body warm. There are many symptoms of dysfunc-tion when the thyroid is not up to par. The most common are fatigue, depression, cold hands and feet, slow doing everything, headaches, emotional, weak, and just feel cold when every-body else is warm. When waste is left in the body, it putrefies causing a bacterial problem. Bacteria can get in the thyroid and cause mal-function. Some people have been helped by eat-ing foods high in iodine, such as kelp or using iodized salt. It is better just to clean out and eat God’s food. Also you can drink water instead of man-made drinks. Eat foods high in minerals and trace minerals. Eat foods high in B-vitamins. Eat mostly raw foods; cooking kills B-vitamins. Get adequate rest and sleep. Be active; work for exercise. Be sure to eat foods that are good fiber so they will go through the body, and not clog it up. Meats, cheese, and any-thing animal does not have fiber. Digestion does not work properly at night. Be sure to go eliminate colon, three times a day and kidneys seven times.

Dr. Herb Says….Take These Steps To Health

High Blood Pressure

High blood pressure is referring to the pressure that blood exerts on your arteries and veins while the heart is beating and resting. The pressure while the heart beats is called systolic force, and the pressure during the hearts rest moment is called diastolic force. Normal blood pressure is represented by 120 systolic and 80 diastolic. The worst place to get an accurate reading is at the doctor’s office: Some people are up-tight and stressful about going to the doctor, so stress causes blood pressure to be higher. Some things that cause blood pressure not to be normal are: eating at night, eating too much too late, eating sugar and refined car-bohydrates, too much waste left in the body, not eating foods with proper nutrition, especially minerals and amino acids, smoking, taking in caffeine and/or alcohol, side-effects from some prescription drugs, not enough rest, water, oil or exercise and no break in eating. Eat a good breakfast of fruit and protein. Fruit and protein foods such as sunflower seeds, almonds and all nuts, beans avocadoes, bananas, cantaloupes are good sources of calcium, potassium, mag-nesium, minerals. Fruits and vegetables are good sources of vitamins and minerals to help strengthen veins and arteries.

Osteoporosis

Most every person has bone deterioration; some worse than others. We have all been brain-washed to take calcium, and/or drink milk. Milk is designed for an animal growing bones, but not sustaining bones. Once a person gets the bones growing, we need sunshine, exercise, and hormones to sustain healthy bones. When you start growing; start living. Do something; get exercise. Get outside and get some sunshine. Interact with people. In other words, LIVE! Do not just stay cooped up in a box called a house, and do nothing, and let yourself deteriorate. There are other things besides lack of living that cause you to deteriorate. Watching the world and all that the devil is doing in the world, can dry up your spirit, keep you depressed and will take a toll on your body. Watch God: He has a great future for everyone who wants it. He will lift your spirit and give you hope. Also, there are some physical things you can do that can cause you to deteriorate. Eating animal protein actually wears your digestive system down. Eating sugar destroys nutrients and can add to the deterioration of your body. Alcohol, caf-feine, drugs, smoking all take a toll on helping your body to go downhill, and take away your health. Eating too much physical food and not enough spiritual food will cause to deteriorate.

You Can Be Old and Healthy

If we carefully preserve the life force and keep the delicate mechanism of the body in order, the result is health. Without health, no one can distinctly understand or as completely fulfill his obligations to himself, to his fellow-beings, or to his creator. Therefore, the health should be as faithfully guarded as the character. Getting older does not mean we have to have poor health. Genesis 43:28 “And they answered, “Thy servant our father is in good health, he is yet alive.” Genesis 47:9 “And Jacob said unto Pharaoh, The days of the years of my pilgrim-age are a hundred and thirty years.” Jacob had good health at one hundred and thirty years. Moses was still healthy at one hundred twenty years old. Deuteronomy 34:7 “And Moses was a hundred and twenty years old when he died; his eye was not dim, nor his natural force abated.” Caleb was healthy at age eighty five years old. Joshua 14: 10, 11 “And now, behold, the Lord hath kept me alive and now, lo, I am this day fourscore and five years old. As yet I am as strong this day as I was in the day that Moses sent me.” He was as healthy at age eighty-five as he was at forty.

Obey God Stay Healthy

Disease, sickness, death are from the devil. God wants us to be healthy. Acts 10:38 “God anointed Jesus of Nazareth with the Holy Ghost and with power; who went about doing good, and healing all that were oppressed of the devil for God was with Him.” Believe in Je-sus and obey Him. If other people want to be sick, we do not have to follow that way. Disobe-dience or following the devil has diseases with it. Deuteronomy 28:27 – 28, 60 – 61 “Boils, scab, itch, whereof thou canst not be healed: Madness and blindness, and astonishment of heart. Diseases which thou wast afraid of; they shall cleave unto thee. Stay Healthy For God’s Glory Sickness is the body cleansing itself. When someone has the flu, they get diarrhea, throw-up, fever, perspire; this is the body’s way of eliminating toxins. We should never allow ourselves to let toxins build up so bad until the body has to go to drastic measures to cleanse itself. Fasting one day a week is good to let the body do some housecleaning. One of the biggest de-ceptions the devil has pulled off on mankind is thinking we have to eat all the time. Jesus fasted forty days. Jesus never set a bad example. The four thousand people that Jesus fed had been with Jesus for three days with nothing to eat. We cannot even get people to set in church only two hours without wanting to go home and eat. In Rev. 14:7 it says, “Fear God and give glory to Him.” How do you give God glory? 1 Cor. 10:31 “Whether therefore ye eat, or drink, or whatsoever ye do, do all to the glory of God.” God made us. The devil is trying to mess up God’s creation. The devil does not want God to receive glory, or for us to be healthy.

Lemon

The Lemon is a natural antiseptic. Lemon juice will destroy harmful bacteria in cuts, or other places in the body. Mix lemon juice with honey and destroy the bacteria that causes a sore throat. Lemon juice is good for acne and eczema. Lemon juice is good to kill the bacteria trying to come through the skin, by way of a boil. Lemon juice is good for blackheads, and clogged skin pores. Put lemon juice on wrinkles, and leave for several hours, and then wash it off, and apply coconut oil. Application Deadline Extended For 2015 Bicycle Helmet Initiative

By the NCDOT...The deadline for applications to participate in the 2015 Bicycle Helmet Initiative has been extended to Oct. 31 at 5 p.m. Designed to help local organizations supply helmets to children in need, the Bicycle Hel-met Initiative is funded by the Division of Bicycle and Pedestrian Transpor-tation within N.C. Department of Transportation, and is now in its eighth year. Countless studies have shown that wearing a bicycle helmet can reduce the risk of severe brain injuries by up to 88 percent. Sadly, fewer than 50 percent of children are likely to wear a helmet when riding, and the problem becomes more pronounced with lower-income populations. As such, the primary goal of the Bicycle Helmet Initiative is to reduce child bicycle fatalities and other serious injuries across the state. Each year, select applicants are awarded helmets for distribution to low income children par-ticipating in their programs. In order for the initiative to be as successful as possible, all sorts of organizations are invited to apply for the initiative, whether they are already holding bicycle safety programs, or simply want to get involved by developing a new bicycle safety program. General Election November 4 One-Stop (early voting) Begins October 23

Last Day To Register To Vote October 10

The North Carolina General Election will be held on Tuesday, November 4, 2014. Polls will be open from 6:30 a.m. to 7:30 p.m.

Citizens can still register to vote. Forms to register or to change information are due by 5 p.m. Friday, October 10, 2014.

One-Stop or Early Voting will be held from 8 a.m. to 6 p.m. October 23, 24, 25, 27, 28 & 29. From 8 a.m. to 8 p.m. on October 30 & 31 and from 7 a.m. to 1 p.m. on November 1. There will be three Caldwell County locations for One-Stop or Early Voting. The locations are the County/City Chambers, on the first floor of the Caldwell County Administrative Offices in the Alden Starnes Building, at 905 West Ave. NW, in Lenoir, the Shuford Recreation Center at 51 Pinewood Road in Granite Falls and the lower level of the Caldwell County Public Library Main Branch located at 120 Hospital Avenue in Lenoir.

If voters choose to wait until Election Day, November 4, to cast their vote, they must go to their regular precinct to vote.

There are three ballot styles for this election. Ballot style one is for the majority of the precincts. Ballot style two is for citizens who vote in the city limits of Hudson and will include their alcohol election. The third ballot style will be for citizens that vote in the Town of Blow-ing Rock and will include the city limit’s bond referendums.

There will no longer be straight party voting on election ballots. Voters must mark the ballot for each individual race they choose to cast a vote in. Races will be listed on the front and the back of the ballot.

The races for this general election will include: US Senate, US House of Representatives dis-trict 11, NC State Senate District 45, NC House of Representatives District 87, District Attor-ney District 25, Board of Caldwell County Commissioners, Caldwell County Clerk of Superior Court, Caldwell County Sheriff, Caldwell County Board of Education, Soil and Water Conser-vation District Supervisor and several NC Appeals, Supreme and District Court Judge races. There will also be a vote for a constitutional amendment. The additional issues will be the al-cohol election for voters in the city limits of Hudson and the bond referendums for voters in the Town of Blowing Rock.

Absentee Applications will be accepted until 5 p.m., Tuesday, October 28. You must use the official form to request an absentee ballot which can be found on the Caldwell County website, the NC State Board of Elections’ website or come by the Caldwell County Board of Elections.

By the NCDOT...Wednesday, October 08, 2014 Raleigh - The North Carolina Department of Trans-portation's Office of Education Initiatives kicked off a new program for high school students called the NCDOT Career Exploration Program. The Career Exploration Program is a job shadow-ing opportunity for students to gain insight into the transportation industry and learn about career paths within NCDOT. Students spend time with NCDOT staff and learn about various workforce demands within the state through worksite visits. Students interact with staff in fields including Construction, Aviation, Rail, Bike and Pedestrian, Communica-tions and much more! The Career Exploration Program is offered to high school students interested in science, technology, engineering and math fields as it relates to the trans-portation industry. Students who choose to partici-pate in the NCDOT Career Exploration Program gain valuable insights including the following:

1. Gain sufficient knowledge and understanding of the NC Department of Transportation and various career paths within the department. 2. Experience the day to day operations and func-tions of specific NCDOT division offices. 3. Develop a vision and goal for a future career within the transportation industry.

The NCDOT Career Exploration Program began this September with Independence High School in Charlotte, NC and Wake NCSU STEM Early College High School in Raleigh, NC. James Woodrow Miller Jr. Granite Falls - James Woodrow Miller Jr., 63, went home to be with his Lord and Savior on October 8, 2014 at his residence. He was born September 1, 1951, son of the late James Woodrow Miller Sr and Mary Lou Bentley Miller. Mr. Miller is survived by his son James Woodrow Miller III and wife Melinda of Hickory; two sisters, Cathy Gallashaw and husband Greg of Monroe, GA, and Marsha Rezapour of Braselton, GA; one grand-child, Rhiana Pruitt; one nephew, Cameron Shook; two nieces, Jasmine Rezapour Bishop and Parisa Rezapour. Hudson - Mr. Smith Daniel Moore, Sr. 88 of Hud-son passed away on Sunday, October 12, 2014 at his home surrounded by his family. Remember 9/11 A normal day began in America and the city of New York; kids are off to school as a new year has just got-ten underway. Mom and Dad are making their way to work with a family outing planned for the evening. However this day would be different than any other day in American history, not since December 7, 1941, has anyone dared to attack the American people and this time in our own front yard. Let’s painfully re-member that fateful day.

8:46 American Airlines flight 11 strikes the north tower of the WTC. 9:03 United Airlines flight 175 strikes into the south tower of the WTC. 9:37 American Airlines flight 77 strikes the Pentagon building. 10:03 United Airlines flight 93 crashes in Shanksville, Pennsylvania 10:28 North tower of the WTC collapses.

In just 102 minutes of terror America was changed forever as 2,977 citizens lost their lives. If history repeats itself what does the future hold for America? Let’s be sure to say a special prayer for sonless and daughterless parents as well as those orphans and many now single again. And may we all do whatever we can to see that this never happens again no matter what the cost. Pray for America!

Minnie Belle Starnes Starnes Granite Falls - 104, Minnie Belle Starnes Starnes died October 13, 2014, at her residence after a period of declining health. She was born May 6, 1910 in Caldwell County to the late Jacob Sylvanus and Sarah Etta Graham Starnes. Mrs. Starnes was the oldest living member of Dudley Shoals Baptist Church, Granite Falls, and was a long time member of the Women’s Adult Sunday School Class. In her younger years she was a member of Grace Chapel Methodist Church, Granite Falls. In addition to her parents, she was preceded in death by her loving husband of 61 years, Sherman Starnes; her son Dale S. Starnes; Son-in Law, George Hilderbrand of Tuscon, Arizona; granddaughter Deb-bie S. Whitener of Winterhaven, Florida; sisters, Hattie Richards, Mattie Kerley; brothers, Ed, Harmon, Roy, J.W. and Robert Lee Starnes of Granite Falls and Gaither Starnes of Hickory. Mrs. Starnes is survived by five children, Thelma Hilderbrand of Fountain Hills, AZ, Conley Starnes and wife Dottie, Bedford Starnes and wife Barbara, Peggy Huffman and husband Horace of Hickory, Wayne Starnes and friend Carlene Woods, ; Daughter-in-law, Alene Starnes, widow of Dale Starnes. She is also sur-vived by seventeen grandchildren, thirty-three great-grandchildren, twenty-three great-great grandchil-dren. She is also survived by eleven nieces, two neph-ews and a sister-in-law, Mattie Starnes of Granite Falls. Pallbearers will be great grandsons, Honorary Pall-bearers will be grandsons and flower assistants will be granddaughters. Pastors Gordon West, Don Ingle and Randy Smith will be officiating. Visitation will be at Dudley Shoals Baptist Church Wednesday, October 15, 2014, 10:30 AM to 12:00 PM and the funeral at 12:00 Noon. Burial will follow in the church cemetery.
