RICHMOND Dusk be-gan to set on the evening of Dec. 11, and a mini van slow-ly drove by as Virgil Kalthoff turned on his Christmas light decorations. Theres been limou-sines, tour buses, you name it and theyve stopped by to see it, said Virgil. Virgil and his wife, Mary, have spent the past 25 years turning their front yard into a brilliant Christmas light dis-play that attracts sightseers from miles around.
We left the farm in 1989, and have been doing this ever since, said Virgil. The Kalthoffs own and manage Virgils Vigorena, a feed and seed busi-ness, from their home in Rich-mond. P r i -or to the Christmas s e a s o n , as Virgil keeps busy with customers during the day, Mary unpacks the boxes of decorations and by evening they are both out-side deciding how the display
should be laid out. We started off really small with just a few lights on the house, said Mary. Over the years, people have en-couraged us to add more.

One thing led to another, and now we have all of this, said Virgil. This includes a wel-
come sign, a skating rink with skaters, Mickey Mouse characters, Santa Claus and his reindeer, a nativity set and much more. It takes the couple almost six weeks to put up the entire display. We immediately take down the Halloween display, which isnt nearly as great as this one, and begin putting up the Christmas stuff, said Vir-gil.

Sno-Cleats promote safety, fun on trails

SAUK CENTRE Snow-mobiling is as engraved into the culture of Minnesota as any hobby, especially around cen-tral Minnesota. The Sauk Centre Sno-Cleats takes that to heart as a 40-plus-year-old snow-mobile club that promotes safe snowmo-biling while ma in ta in ing over 100 miles of trails in thearea. Sno-Cleats trail admin-istrator, John Olmscheid, ofElrosa has been part of recentimprovements to the trail sys-tem, including new trails from Elrosa to Spring Hill in 2008 and from Sauk Centre to Padua in 2010.
Were currently working on opening a new trail from El-rosa to Meire Grove once the land easements and signs are taken care of, said Olmscheid,who is active at the county and state level and currently serves on the Minnesota United Snow-mobilers Association Board. Collin Messer, of Sauk Centre, has been Sno-Cleatssecretary since 2011 and re-ports current membership at 26 families or households.
I became interested in snowmobiles when I was about12 years old. I got a few rides on dads 1978 Arctic Cat ElTigre, and since then Ive been hooked on snowmobiling and Arctic Cat. Everyone seems tohave their own preference, he said. Messer spent the next num-ber of years either riding, work-ing on a snowmobile or dream-ing of riding a better model. He bought his rst snowmobile at the age of 15 with his brother: a 1997 Arctic Cat ZR 580.
When I was 19, I got my own, a 1999 ZR 400 Sno Pro.

RICHMOND Dusk be-gan to set on the evening of Dec. 11, and a mini van slow-ly drove by as Virgil Kalthoff turned on his Christmas light decorations. Theres been limou-sines, tour buses, you name it and theyve stopped by to see it, said Virgil. Virgil and his wife, Mary, have spent the past 25 years turning their front yard into a brilliant Christmas light dis-play that attracts sightseers from miles around.
We left the farm in 1989, and have been doing this ever since, said Virgil. The Kalthoffs own and manage Virgils Vigorena, a feed and seed busi-ness, from their home in Rich-mond. P r i -or to the Christmas s e a s o n , as Virgil keeps busy with customers during the day, Mary unpacks the boxes of decorations and by evening they are both out-side deciding how the display
should be laid out. We started off really small with just a few lights on the house, said Mary. Over the years, people have en-couraged us to add more.

One thing led to another, and now we have all of this, said Virgil. This includes a wel-
come sign, a skating rink with skaters, Mickey Mouse characters, Santa Claus and his reindeer, a nativity set and much more. It takes the couple almost six weeks to put up the entire display. We immediately take down the Halloween display, which isnt nearly as great as this one, and begin putting up the Christmas stuff, said Vir-gil.

Sno-Cleats promote safety, fun on trails

SAUK CENTRE Snow-mobiling is as engraved into the culture of Minnesota as any hobby, especially around cen-tral Minnesota. The Sauk Centre Sno-Cleats takes that to heart as a 40-plus-year-old snow-mobile club that promotes safe snowmo-biling while ma in ta in ing over 100 miles of trails in thearea. Sno-Cleats trail admin-istrator, John Olmscheid, ofElrosa has been part of recentimprovements to the trail sys-tem, including new trails from Elrosa to Spring Hill in 2008 and from Sauk Centre to Padua in 2010.
Were currently working on opening a new trail from El-rosa to Meire Grove once the land easements and signs are taken care of, said Olmscheid,who is active at the county and state level and currently serves on the Minnesota United Snow-mobilers Association Board. Collin Messer, of Sauk Centre, has been Sno-Cleatssecretary since 2011 and re-ports current membership at 26 families or households.
I became interested in snowmobiles when I was about12 years old. I got a few rides on dads 1978 Arctic Cat ElTigre, and since then Ive been hooked on snowmobiling and Arctic Cat. Everyone seems tohave their own preference, he said. Messer spent the next num-ber of years either riding, work-ing on a snowmobile or dream-ing of riding a better model. He bought his rst snowmobile at the age of 15 with his brother: a 1997 Arctic Cat ZR 580.
When I was 19, I got my own, a 1999 ZR 400 Sno Pro.

VILLARD If you are looking for Brady or McKenzie Gerdes on the weekends this summer, you will more than likely fi nd them sitting behind the wheel of a stock car. I like to go fast, Brady said. Its fun. McKenzie agreed. I always wanted to go fast, she said. When Brady (20) and McKenzie (17) arent working together at Villard Implement with their parents, Chad and Sandy, they are racing their stock cars each weekend in Fergus Falls and Alexandria. Chad and his brother, Ryan, serve as Brady and McKenzies pit crew while Sandy cheers them on from the race trailer. Its fun to be around the family like that, Brady said. Brady and McKenzie started their love for racing at a young age. Dad asked me if I wanted to race go-karts when I was seven, Brady said. He didnt have to talk me into it. I was on board. Chad saw Bradys talent that fi rst year. He did real well, he said. With her older brother starting to race, four-year-old McKenzie watched, but knew she wanted to be on the race-track, too. I wanted to be like him, McK-enzie said. I wanted to race when he started, but I couldnt until I was six years old. During that year, Brady taught his younger sister how to drive. Mom didnt like that he did that when I was that young, McKenzie

said. But it happened anyway. Once McKenzie turned six, she started racing go-karts, too. After racing go-karts for close to six years, Brady was ready for a real car. When he was 14 years old, Brady started driving a Midwest Modifi ed car in the B Mod class. I was ready for the big cars, Brady said. Bradys fi rst race was something he was excited about, but at the same time a little anxious. I was nervous for that fi rst race, he said. But once I got in the car, it all went away. Brady drove his Midwest Modifi ed for three years until he got his Modifi ed stock car and started racing in the Modifi ed class at the age of 16. When it came to picking a number for his car, Brady knew just what he wanted. He decided on the number 2x. I am a big Rusty Wallace fan, so I wanted the number 2, but a few of the cars that were racing already were number 2, he said. So I decided to throw an x on it. Plus, other cars with an x on them tended to be faster cars, too. While Brady was racing stock cars, McKenzie wanted to as well. I wanted to race a big car like my brother. Ive always looked up to him, she said. He was good starting out and I wanted to be the same way. McKenzie got a Midwest Mod-ifi ed car and is racing in the B Mod class this year. For McKenzie, fi nding a number for her car was easy. I decided to have the number 13x, she said. I wanted 13 because that is the date of my birthday, and I did an x like Brady. She copied my x, Brady added. This year marked McKenzies rookie season racing stock cars. I was nervous for my fi rst race, she said. I expected to get lapped, but that didnt happen.
Both Brady and McKenzie have had success recently on the racetrack. Brady has won a total of fi ve rac-es over three years, with two of those wins happening this season. But his fi rst race in the Modifi ed class race has been the most memorable. On the last lap, I passed Travis Saurer. I was in the second-place posi-tion before I passed him, Brady said. He is one of the toughest racers to beat. To pass him and get a win was a
pretty big deal. For McKenzie, her third night rac-ing in the B Mod class is what she re-members the most. I ended up getting in the top 10. I came in smiling, she said. As a rook-ie, it is not that common to place that high. Most of them spin out often, but I havent yet, knock on wood. Sandy remembers McKenzies third night racing as well. The fi rst thing she said when she got out of the car was that she made the top 10, she said. I was so proud of her. Chad and Sandy have seen McK-enzies improvement in a short amount of time. My stomach does fl ip fl ops when I watch her race, Sandy said. But she is getting there. Chad agreed. She is better than I thought she would be this early, Chad said. As racers, the Gerdeses have their superstitions. I have lucky shirts I wear, Brady said. But I never eat sunfl ower seeds on race day or anything with a shell. Every time I have, I have gotten into a wreck of some kind.
McKenzie has a superstition of her own. I dont wear my own racing shirts either, she said. Despite their success, Brady and McKenzie take the week between races to get their cars ready and fi nd where they need to improve for the next race. Dad tells me where I screwed up the last race and Ryan will give me advice on which lines I should run,
Brady said. Chad and Ryan also help McKenzie, but Brady is the one that has taken her under his wing. He has helped me a lot, McKenzie said. But he is tougher on me than Dad or Ryan are. Brady agreed. Im not going to
sugar coat it, he said. I tell her what she needs to fi x. Sandy has also seen that relation-ship between her kids. Brady likes to prep her. He likes to drive with her to the races to do that, Sandy said. Hes a good broth-er. Currently, Brady is leading in points at Fergus Falls and McKen-zie is eighth in points at Alexandria, which is unique for a rookie. Im hoping to make the top fi ve in points or get Rookie of the Year in Alexandria, McKenzie said. When Brady and McKenzie are not working or at the racetrack, they are at the Minnewaska Area Go-Kart track in Westport. Brady is the fl ag-man and McKenzie keeps score for the races. For the Gerdeses, racing is not only about doing well on the track, but spending time as a family. It makes me proud to watch them, Chad said. It is great because I get to be with the kids doing what they love to do as a part of their pit crew. Sandy agreed. Its a thrill to see them win and do well, Sandy said. But for us it is

Lasagna1 lb. lean ground pork, browned (2 lbs. for 9x13 inch pan) (you can use ground beef if you prefer)1 tsp. salt1 small onion, choppedPizza seasoning sprinkled over meat to taste1 can tomato soup6 lasagna noodles, cooked2 cups mozzarella cheese (more or less to preference)1 cup shredded cheddar cheese or reduced-fat cheddar cheese Combine meat, salt, onion, pizza seasoning, and tomato soup. Layer twice: noodles, meat and cheeses. Bake at 350 for 30 min-utes.

Melt in microwave. Mix shortening, brown sugar, eggs, vanilla, our, soda, salt and quick-rolled oats. Spread 3/4 of oatmeal mixture in 15x10 inch pan. Cover with melted chocolate mixture; dot with remaining oat-meal mixture. Bake 30 minutes at 350.

Place in a small roaster. Pour gravy over the top and bake for 1 1/2 hours at 350.

A meal that takes 16-18 hours to cook bet-ter taste darn good, right? For those who have been to a pit barbeque, they know that the savory taste of beef brisket is well worth the wait. Steve and Suss Kluver, along with friends Mark and Gwen Kranz, all of Sauk Centre, have hosted such a party the past fi ve years. It started off as a fi sh boil, a popular trend they learned of while visiting Door County, Wis. But the past two years they turned to pit bar-bequing. I got the idea from an old wild game cookbook, said Steve Kluver. It was some-thing I always wanted to try so we decided to go for it. Steve got digging. He dug a 4-foot by 4-foot pit four feet into the ground on his three acres just off the shores of Fairy Lake. He laid cement block around the base and up the sides, and created a ledge a foot off the bottom for a grate to sit on. With the pit ready, the Kluvers and Kranz-
es prepared the meat. They purchased up to 70 pounds of beef brisket from Schaefers Mar-ket in Sauk Centre and covered it with a spe-cial homemade rub. Once the meat was rubbed down with spices, it was covered in wet paper bag material, which was then covered with wet newspaper. Meanwhile, a fi re had been started in the pit as hot coals began to fi ll the bottom. Klu-ver aimed for a foot of hot coals before plac-ing the wrapped meat on the grate and lowering the grate onto the ledge. Once the grate was in place, Kluver placed a piece of plywood over the hole, placed a canvas over the plywood and then shoveled dirt over it all to make it airtight. What it does is shut off the fl ame, just like turning the burner off on the stove, he said. Those coals then stay at a nice, low even tem-perature when the fl ame is out. After covering the hole, its time to sit back and wait. Timing is everything, said Kluver. Usu-ally we will put the meat in about midnight the night before so its ready when people start coming the next afternoon. The method of pit barbequing is an age-old tradition that began with the indigenous people who cooked their meat and vegetables in earth
ovens. The method is believed to have originated in California by Native American tribes. In the late 18th and early 19th centuries, at the end of culling and leather tanning season of large
cattle herds, the remaining meat would be cooked in large pit bar-beques. After California be-came a state in 1950, the tradi-tion was contin-ued for outdoor fi estas. Today, meats usually barbequed using the pit method are beef, pork and goat. K l u v e r said it is a fun process that doesnt take a lot of work or mon-ey. It took
me about a half day to dig the hole, he said. Its defi nitely not rocket science. Its a lot of sweat, but doesnt cost a lot to do. And people can make their pits a lot smaller than ours. All
you need is a little real estate where you donmind digging a hole. Kluver said he dug a large pit because hisparty has grown to about 100 people. Two yearsago when he took his fi rst try at the pit methodhe was nervous. I had 100 hungry people standing aroundand raised 60 pounds of meat out of the groundthat I didnt know if it was going to turn out ornot. It turned out to be a success. When you take the meat out of the hole itsalmost cool to the touch on the outside, he saidBut the meat inside is the perfect temperature. The two families also serve potatoes boiledover a campfi re and supply the rest of the foodto make for a memorable event. Its a lot of fun, Kluver said. Usually afew people bring a bottle of wine and the pastwo years weve had a keg of beer. Familiesbring their kids out and we play kickball andvolleyball. Sixteen to 18 hours might seem like a longtime to wait for a meal. But when surrounded byfriends, family and fun activities, the time goesby fast. Soon enough, everyone is enjoying themouth-watering taste of traditional pit barbeque. Its fun and its well worth the wait, hesaid. Its incredible how it works. The past twoyears it has turned out perfect. Its amazing howgood it tastes.
