Ingredients:
1 small apple per person (red or green)
1/2 cup of corn syrup (light)
1/2 tsp teaspoon of red food colouring
3 cups of white sugar
1 cup of water
Also needed:
Popsicle sticks
Baking tray lined with parchment paper
Optional Toppings:
Sprinkles or shaved chocolate
Peanuts or crushed almonds
Directions: 1. Wash and dry the apples and insert popsicle sticks in the centre of each apple so that they
are firmly positioned in the apples. Set the apples aside on a cookie sheet lined with wax paper/parchment paper. (You can also pre-slice apples and place on sticks for smaller portions).
2. Combine the sugar, corn syrup and water in a heavy-bottomed saucepan over medium-high heat. Bring it to a boil, reduce to medium heat and simmer the mixture until a candy thermometer reaches 300 degrees (the hard crack stage) or test by dropping a spoon full of candy into ice water to see if it forms hard threads that are brittle.
3. Remove the candy mixture from the heat and carefully stir in the red food colouring. You may have to add more food colouring depending on the quality and strength of your food colouring.
4. One by one carefully dip the apples into the candy mixture, swirling to coat them and allowing any excess to drip back into the pan. Dip in desired toppings and place on wax paper and allow to cool until the candy has fully hardened. Pour excess candy on a parchment paper lined pan and wait until hardened to dispose for a mess free clean up!
