CARLOS ARGUIÑANO: How to do meatballs.
1. - Choose the meat. While beef is traditionally popular, turkey, bison or any ground meat you have a taste for can be made into meatballs. Turkey may require additional bread crumbs to stiffen its consistency.
2. - Choose between ready-made bread crumbs or toasted bread. For toast, rub together and shred into crumbs. If using store bought bread crumbs, check the ingredients to see what spices may already be included. Check also to see if the ingredients include anything you would rather not consume. Some bread crumb mixtures contain partially hydrogenated oils, the dreaded source of trans-fats.
3. - Place all ingredients in a large bowl and squeeze together by hand.4. - Roll up golf ball-sized meatballs and cook in a greased skillet on the stove, or a greased baking dish in the oven. Both methods require turning to cook evenly. Brown the outside, drain off grease and place in hot pasta sauce. Use the related article, "How to make zesty pasta sauce" for best results.
