Frozen fruits and veggies are packed with nutrition because they are frozen right after harvesting. Ways to use frozen summer produce: Add frozen strawberries to your smoothie Mix frozen blueberries into oatmeal Mix chopped, defrosted frozen peaches into your muffin mix Defrost frozen green beans then roast in the oven with garlic Use defrosted frozen broccoli in place of basil in a pesto sauce Rainbow Scavenger Hunt Penny likes to stay active even as it gets darker earlier in the day. To move around, she looks for plant-based foods in her kitchen one color at a time. Write what you find next to each color. Build your own friendly snowman inside and enjoy a yummy treat. Rice Crispy Snowmen Makes 6 servings Ingredients: 1/3 cup cashew butter 1/3 cup maple syrup 3 cups brown rice cereal ½ cup white chocolate chips Directions: 1.Mix cashew butter and rice syrup in a microwave-safe bowl. Microwave for 30 seconds. 2.Add cereal to cashew butter and rice syrup mixture and fold to combine, careful not to crunch the cereal too much. 3.Roll ¼ cup of the mixture into a ball (x 6), then roll 3 T of the mixture into a ball (x 6), then roll 1 T of the mixture into a ball (x 6). 4.Pour white chocolate chips in a microwave-safe bowl. Microwave for 15 seconds, stir, then microwave again for 15 seconds. Stir until completely melted. Use white chocolate in between snowballs to build snowmen starting with the largest ball and ending with the smallest ball. Refrigerate until set, about 30 minutes.

Summer Produce in the Winter? Jessie loves summer fruits and veggies and has found a way to enjoy them even when it is cold outside! Instead of fresh, she will buy frozen.
