Wine & Cheese PairingChef Mike Sabella lent his time and expertise to conduct a wine & cheese pairing for the Casa Sandoval residents. Chadonnay, Pinot Noir, Reisling, and Zinfandel wines were paired with a

variety of cheeses as he helped determine the best combinations. Chef Mike’s background as a successful San Francisco restaurateur gave him the knowledge and insight to teach us all the

nuances of selecting a good wine. The event was successful and is on the Casa calendar for 2014!

Time Well-Spent (cont.)variety  of  events  and  ac2vi2es  that  Casa  offered.  By  immersing  herself  in  arts  &  craEs,  music,  exercise,  shopping,  and  brain  games,  she  created  fast  friendships  and  established  her  new  lease  on  life.        “We  did  a  lot  of  walking  and  par2cipated  in  singing  groups,”  said  Janet.  “And  of  course  the  ice  cream  social  was  always  fun.”      Those  daily  par2es  inspired  Janet  to  invite  folks  to  more  personal  social  gatherings  in  her  room.  “I  love  to  bring  people  to  my  apartment  for  liCle  luncheons,”  said  Janet.  “We  bring  people  together  and  have  a  good  2me  learning  about  the  different  cultures  and  ways.”

It’s  oEen  someone’s  birthday  that  transforms  Janet  into  a  ‘welcome  wagon’  of  sorts.  “We  have  birthday  par2es  and  friends  come  and  join  us”,  said  Janet.  “We  always  felt  like  a  family.”      Janet  also  loves  the  Casa  dining  room;  from  the  excellent  fare  to  the  waitstaff  themselves.  “I  always  write  a  liCle  love  note  to  the  chef  to  tell  him  about  the  good  stuff,”  said  Janet.

As  such  an  ac2ve  member  of  the  Casa  community,  Janet  has  first  hand  experience  of  the  holiday  cheer.  “The  atmosphere

gives  us  a  good  conversa2on  piece,”  she  says.  “At  Christmas  2me  we  have  all  these  Santa  Clauses  from  all  over  the  world.  It’s  unbelievable.”

Anyone  who’s  spent  2me  at  Casa  knows  about  the  special  music  programs.  The  pa2o  can  be  full  of  dancers  one  week  and  singers  the  next.  “We  have  all  the  music  that  keeps  us  wan2ng  to  pop  out  of  our  chair  and  dance.  I  love  it!”  said  Janet.      Janet’s  four  children  are  also  successful  parents.  Barbara,  Geraldine,  Mary,  and  James  have  produced  10  grandchildren  and  nine  great-‐grandchildren  but  s2ll  make  2me  to  say  thanks  to  Mom  for  her  loving  spirit.  She  says,  “I  count  my  blessings  because  of  another  day  and  I  am  happy.”

Her  2me  at  Casa  reminds  Janet  of  when  she  and  Edward  would  travel  for  square  dancing.  They  kicked  up  their  heels  and  had  fun  with  new  friends.  She’s  had  a  great  run  here  also  and  considers  Casa  a  blessing.  “I’ve  never  felt  so  good  in  all  my  life  because  I  didn’t  have  any  worries.”

PROLONG YOUR LIFE

Chef’s  Corner

Casa  Sandoval  was  invited  to  join  the  professionals  at  Sysco  for  a  Mediterranean  food  tasting.  Miss  Ann  and  Chef  Claude  sampled  a  variety  of  new  healthy  offerings  that  wowed  them!  It  gave  Chef  some  new  ideas  and  it  won’t  be  long  before  he  presents  them  to  your  table.

Among  the  items  that  will  soon  be  on  the  Casa  menu  are  Grilled  Swordfish  with  Horta  and  Tomato.  This  dish  includes  swiss  chard.  Delicious!

A  second  dish  that  was  spectacular  and  headed  for  our  menu  is  Fusilli  with  Peas  and  Feta  Cheese.  Fusilli,  as  you  know  is  long,  thick,  corkscrew  shaped  pasta.

While it may seem odd to walk by the Card Room and see a large group of people striking dramatic poses, the group doing Tai Chi just might be prolonging their own lives. Tai Chi is one of the best forms of low-impact exercise and functions as an effective stress reducer and immune system builder. Best of all, it’s perfect for senior adults. Tai Chi and other similar exercises like yoga help the body become more limber and increase blood flow to the extremities. These exercises can be performed anywhere and at any time. Tai Chi is often a great benefit to both mind and body. Tai Chi is completely customizable for each individual and the moves and poses can be completely their own. This makes it ideal for seniors who may have arthritis or have difficulty moving about in certain directions. To accommodate the restriction, Tai Chi allows each person to develop their own repertoire that fits within their own range of motion.

A Hearty Welcome! We’d like to extend our warmest welcome to the newest Casa residents. Take time to introduce yourselves and encourage the newcomers to get involved in as many activities as possible.

Two  other  dishes  that  impressed  Chef  and  Miss  Ann  include  the  Coriander  crusted  Pork  Tenderloin,  on  a  bed  of  red  cabbage.

Broad  Bean  &  Feta  Crisps  on  sliced  baguettes  are  also  filled  with  flavor  and  very  eye-‐appealing.      Casa  Sandoval  is  well-‐known  for  its  attention  to  quality  food.  That  commitment  will  continue  with  this  new  and  improved  selection  of  foods  from  Sysco.

Oktoberfest is a 16-day festival celebrating beer held annually in Munich, Germany. Running from late September to the first weekend in October, it is one of the most famous events in Germany and is the world's largest fair, with more than 6 million people from around the world attending the event every year.

To the locals, it’s called "die Wiesn", after the name of the fairgrounds themselves. The Oktoberfest is an important part of Bavarian culture, held since 1810. Other cities across the world

also hold Oktoberfest celebrations modeled after the original Munich event. The festival is held in an area named the Theresienwiese (meadow of Therese), located near Munich's center.

Casa Sandoval will celebrate its own version of Oktoberfest from Sept. 30-Oct. 4. Join us as we celebrate with beer tasting (Paulaner, Hofbrau, Erdinger), authentic German food prepared by our own EuroChef Claude Troska, lively German music, historic landmarks and a live performance at 3:00pm on Thursday, Oct. 3rd by Nada Lewis, voted Best Accordionist of the East Bay in 2010. During the week, we’ll have activities that you can join and earn points towards a prize at the

end of the week. We’ll watch a movie about the origin of Oktoberfest, make German hats and flags, play word searches and scrambles, answer trivia questions, and bake and decorate pretzels just like they do in Munich. The more activities you attend, the more points you’ll earn! Let’s celebrate Oktoberfest in style and raise another stein to Casa Sandoval! "Ein Bier, bitte.” (One more beer!)

Sing-a-longs and Singing Circle are very popular among Casa residents.

Vitamin  C  +  D  =  Bone  Health

Seniors can take a number of actions designed to keep their bones healthy, including eating the right foods, taking supplements, and engaging in weight-bearing exercise. "Science is showing us that everything our mothers told us is true," says Marian Hannan, Associate Professor at Harvard Medical School and a leading researcher on the impact of nutrition on bone health.

"We should eat breakfast, lunch and dinner," she says. "And our diets should include sufficient amounts of protein and vitamins. There are things that people can do at any age that have a positive impact on bone health, either slowing bone loss or reversing it."

Most importantly, seniors should eat a sufficient amount of protein. For most, that is 80 grams a day - an egg and a six-ounce piece of meat, fish, or poultry. Typically, most seniors eat too little protein, not too much, she says. There have been several large studies in older adults showing that higher protein intake, within the amounts typically consumed by older adults, is good for bone health.

A study by the American Society of Bone and Mineral Research showed that seniors who had high intakes of vitamin C, either through dietary intakes and/or supplements, reduced their risk of fractures by 50 percent. “It turns out vitamin C is not only important for maintaining bone mass but also for minimizing the risk of hip fracture," she says. Also critical to bone health is getting a sufficient amount of calcium and vitamin D in the diet. "The first line of defense when you have a bone fracture is to give calcium and vitamin D."

The recommended amounts are 1,200 mg of calcium and 400 IU of vitamin D per day. Vitamin D helps the body absorb enough of the calcium it needs to keep the bones healthy. Bone density testing is also a good idea, particularly for those with a family history of fractures. The test takes only a few minutes and examines density of the bones at the hips and spine.

Besides nutrition, exercise is also important for overall health and for healthy bones. The best type of exercise for bones is weight-bearing exercise, which forces you to work against gravity. "Physical activity, whether walking or very intense exercise, is quite important for bone health," Hannan says. "Just as your muscles respond to exercise, so does your skeleton. Weight-bearing exercise [walking, jogging, lifting weights, dancing, sports and others] causes bone to become stronger and often more dense. Dense, strong bone is less likely to fracture. Research shows that even individuals in their 90s can do resistance training with weights to improve physical function."

Hannan notes that people should check with their doctors before beginning a new exercise program, especially people with heart disease, diabetes, or high blood pressure. If an older person is at high risk of having a fracture, he or she can work with a physical therapist to develop a safe exercise program.

Muscle mass also may play a role in bone health, Hannan says. "There is a loss of muscle mass as we age," she says. "Just as nutrition influences bone it also influences muscle mass. We are looking at whether loss of muscle mass is a component that leads people to fall and fracture bones. It may be that their muscles can't support them."

CHARLES HAYNES

CHARLES SPENT HIS CAREER AS A CONDUCTOR ON THE SOUTHERN PACIFIC RAILROAD. YOU CAN IMAGINE THE STORIES HE HAS TO TELL ABOUT TRAINS. HE ALSO LIKES TO RECALL HIS SERVICE DAYS IN THE NAVY AND HE’S GOT PLENTY OF FELLOW CASA VETERANS TO SHARE WITH.

PAT KELLNERPAT IS THE PRESIDENT OF THE CASA RESIDENTS COUNCIL AND SHE TAKES PRIDE IN MAKING SURE HER FRIENDS ARE ENJOYING A HAPPY LIFESTYLE AND STAYING AS INVOLVED AS POSSIBLE. PAT IS ALSO A REGULAR IN THE CARD ROOM, ONE OF THE BEST PLAYERS AROUND.

RAY & LILLIAN

RAY AND LILLIAN ARE TWO RESIDENTS WHO ARE HEAVILY INVOLVED FROM MORNING TO NIGHT. THEY ARE FAITHFUL ATTENDEES AT THE MONDAY MORNING CATHOLIC COMMUNION AND FIND THEIR WAY TO CASA UNIVERSITY, HAPPY HOUR, K-CASA NEWS, AND EVERYTHING INBETWEEN.

In addition to our eyes and ears, our nose contributes to our memories. A very special memory from my childhood is walking into my grandmother’s kitchen. She was a great cook and I enjoyed the delicious aromas of spices, garlic, and red wine on the meat that was roasting in the oven. Have you been in a fruit orchard and enjoyed the wonderful smell of freshly ripened fruit? I like the smell of a baby just bathed and generously sprinkled with Johnson’s Baby Powder. Oh, so many years ago our kindergarten teacher, Miss Huff, walked around the classroom and left a delightful trail of perfume. We called her “Miss Huff, the Powder Puff.” I like the smell in the woods, other places of nature, and of course a pretty garden. As a young child, I lived near a cannery that made catsup. At times it got a bit much for many people but I enjoyed it and years later I longed to go to the area for old times sake. The smell of fish can be unpleasant but the big crab pots at Fisherman’s Wharf stir up my taste buds. New cars and other things have special fragrances that soon fade away. In the old days, I enjoyed the pleasant smell of clean laundry as the pieces were removed from the clothes line. I also remember the scent of my dad’s freshly polished shoes. My mom always said, “We eat with our eyes so food must look attractive.” But I’m here to remind you that we also eat with our nose. - Jean Rolf

Dearest Residents, Thank you for joining us as we sailed around the world enjoying the unique sights, sounds, music, culture, and tastes of various countries! We hope you enjoyed the tour!

But the fun isn’t over yet! We’re kicking off Oktoberfest, where we’ll be treated to more festive celebrations filled with music, food, fun, and beer! Then, at the end of October, you’ll be treated to a unique Halloween experience. Indeed, Casa is the “Cruise Ship that Never Leaves Hayward”. That line came from a lady I met at a Senior Fair. She asked what community I was representing and when I said “Casa Sandoval”, she yelled “Oh, Casa! The cruise ship that never leaves Hayward!” Activities truly differentiates us from other communities. Many visitors, including home health providers, say that our activities and events are unparalleled. There are many ways we keep you active, including daily exercises, K-CASA News, scenic drives, games, story-telling, book clubs, line dancing, poetry reading, arts & crafts, mind games, and a lot more. If you have any specific ideas that you wish to share, you can always come to me. I would like to take this opportunity to thank all the residents who joined us for our “Around the World” Fashion Show. Thank you for making the show extra special! I’d also like to welcome our new residents and wish this month’s celebrants a very Happy Birthday! God bless you all! I love you! Ann
