For us, it’s very transparent. We are a 4 Star Certified Green Restaurant with the Green Restaurant Association, the highest rating a food service company can receive. We have taken a detailed look at the way we do business, and have made significant changes to continue to be more sustainable.
• We have 50 raised cedar beds in our
urban farm where we’re organically
growing more than 110 varieties of
vegetables, herbs and edible flowers.
• We have two beehives.
• During Chicago’s frozen winters we
continue growing a variety of herbs
and microgreens indoors, as well
as in our hoop house which has
eight raised beds.
• We compost all food scraps which are
picked up by a local service or put back
into the garden.
• We work with a biodiesel service thatpicks up used cooking oil.
• We donate to a local shelter that picksup our leftovers twice a week.

BDP’s COVID-19 RESPONSE
Since the day we opened in 1994, BDP has been known for our outstanding food and warm hospitality. Behind the scenes, one of our top priorities has always been the health and safety of our employees and clients. We have followed food safety,
sanitation and personal hygiene guidelines required by the local, state and federal government since day one. The majority of our employees are certified to safely handle food and trained to follow proper sanitation practices. As part of our response to COVID-19, we understand the need to expand upon our already established business practices in order to minimize exposure
risk to employees and clients. We’re transitioning into a new way of working in our facility, when making deliveries, and when working events. We’d like to share with you the safeguards we’re taking.
Health & Safety Precautions at BDP
1. Food Safety Manager: As usual, we always have a certified food safety manager on site when food preparation is occurring.Additionally, senior management who were not previously certified will be.
2. Mandatory Temperature Checks: Though not mandated by the CDC, temperature checks will be required for employees each dayuntil further notice. CDC guidance states the minimum temperature that indicates a fever is 100.4°F. Per FDA Food Code, employeeswho are sick will be prohibited from the workplace. If an employee presents signs of any illness, we will identify the signs, and followpolicies on when the ill employee is allowed to return to work. At a minimum, however, we will follow CDC guidelines and tell theemployee to self-isolate for seven days from the onset of symptoms and be symptom-free for three days without medication.
3. COVID-19 Testing: We don’t have immediate plans to test employees before they return to work, unless it is mandated by the Illinoisand Chicago government. We are continuing to monitor availability and developments of testing.
4. Employee Hygiene: Our already strict handwashing policy will be emphasized and further monitored. Our certified food safetymanager will call a halt to work every hour for everyone to stop and sanitize their stations, then wash their hands. Employees will beinstructed to avoid touching hands to face. Hand sanitizer will be available.
5. Gloves: As a caterer, we’re already used to frequently wearing gloves while handling ready-to-eat foods. As added precaution, we’llbe wearing them as mandated by the Illinois and Chicago government, and frequently changing them in between tasks and deliveries.
6. Face Coverings: When mandated by the Illinois and Chicago government, face masks will be available for all employees whileprepping food, making deliveries and working around customers, clients and guests.
7. Cleaning and Sanitizing our Facility: While we’ve been temporarily closed, our building has been thoroughly detailed. We’ll continueto expand and enhance our normal cleaning practices, especially disinfecting any high-touch surfaces, such as door handles,countertops and restrooms. Our certified food safety manager will call a halt to work every hour for everyone to stop what they’redoing, clean and sanitize their stations, and then wash their hands before resuming work.
8. Food Safety: Our new motto is “Grab & Go is the Way to Go!” Individually packaged meals and plated meals are safer alternatives tobuffets and family-style meals. We recommend that any corporate/film clients who choose buffet meals plate up the food foremployees to prevent people from handling the serving utensils (unless everyone wore fresh gloves). A barrier or sneeze guard inplace to protect the food or person serving the food is also recommended.
9. Social Distancing: BDP is currently staffed with only 15% of our team, and will gradually phase employees in as our workloadincreases. We have a very spacious building and kitchen area, with chefs already working at their own 6’ or 8’ worktable. We haveplans to update our floor plan and workflow when we have more people in the building to prevent any bottleneck areas and tofacilitate more distancing. Barriers and increased signage will be implemented to remind people of high traffic areas.
10. Receiving Deliveries to our Building: All deliveries made to BDP are contactless. We will immediately remove the product frompackaging and dispose of cardboard into our recycling bin. Anything that should remain in the container will be sanitized.
11. Managing Catering Deliveries: We encourage contactless deliveries to our corporate buildings, but understand that is not alwayspossible. Clients who require a delivery or set-up inside their building will need to sign a waiver that they’ve invited us in, and thatthey will please respect the space of our delivery driver as they enter the receiving area or set-up. Our drivers will wear a mask andgloves until further notice. Disposable containers are recommended to prevent the number of hands that touch our dishes.
