    FISHING !

  • By Carl KolchakFishing with your kids should be

a fun family experience, but it often can turn into a tedious chore. Tangled lines, a lack of action, and the sug-gestion of going fishing with your kids can turn from excited looks into bored faces in a hurry. Trying to keep up, especially if you have more than two children, can run a parent ragged, as he or she tries to make sure lines are in the water and everybody is hav-ing a good time. Here are some tips to make sure that fishing with your kids is a worthwhile and enjoyable adventure.

First and foremost, you need to catch fish. Nothing creates the poten-tial for boredom more than a fishing pole that just sits there with no fish biting! Pretty soon the children are wondering why they are there to begin with and fishing with your kids goes from a great idea to a very bad one in a matter of a few minutes. There are many things you can do to increase your odds of catching fish, giving the kids the excitement that will keep their interest.

Go fishing with the kids in the early morning or late afternoon; these are the peak times for most species of fish to bite. During the summer, after supper is the optimal time to gather the equipment and head to the local fishing spot. If the kids are too young to bait their own hooks and cast out, you need to forget about doing any fishing yourself and concentrate on their needs. Its no fun for a kid to stand around and watch you fish.

Proper equipment is crucial to suc-cess when fishing with your kids. Do not bother with those kiddie poles that cannot stand up to the rigors of actual fishing. An inexpensive spin-ning reel and rod will do the trick; you arent going after world records, you simply want to catch fish. A spinning reel is the easiest type for a youngster to learn to cast with. If they are old enough to cast, make sure you put them in a spot way from trees and brush that will snag your childs line and hook. Find an open area along the river bank or shore of the pond. Nothing is more frustrating while fish-ing than having to break your line, tie another hook on, rebait it and cast again, only to get caught up in the same branch or log!

If you are fishing with your kids at a small pond, there are two species of fish that you can usually target- bullheads and pumpkinseeds. All you need for bait are night crawlers, which

you can catch yourself on any damp spring or early summer evening. Get the children involved in this, by letting them go out and catch them for them-selves. All they need is a flashlight and a bit of coaching. Catching the worms will be almost as much fun as catching the fish. If you need to buy your bait, many convenience stores actually sell worms during the fishing season. Night crawlers can be kept in a container in your refrigerator for weeks; only be sure that everyone knows what is in that container to avoid unwanted surprises.

Once you are at the pond, space the kids out so they will have their own areas to fish and avoid tangling their lines. You do not need to use floats or bobs. Have a number four snelled hook tied to the line with a pair of split shots secured about eighteen inches up from the hook. A snelled hook is a hook that comes already attached to a short piece of monofilament with a loop tied at the end. You can tie it right to your line; the number of the hook, in this case a number four, is an indicator of the hooks size. The split shot will give you or your child added weight on the line, allowing the line to be cast further.

Hook the night crawler on and cast out. Place a forked stick into the ground and lean the pole against it. When the fish bite, your child will see the line start to move. It will either begin to go out as the fish runs with the bait or there will be a distinct jerking motion that your child can

easily detect as the end of the rod as it snaps back and forth. Now is when you have your child pick up the rod and try to set the hook. Teach them not to simply reel the line in, but to give the line a good, quick yank in an attempt to hook the fish. They will be able to tell in an instant if the fish is on by the tension and feel of the line. Have them reel in, but not too fast, always being sure not to let the line go slack. Pumpkinseeds, a com-mon pond dweller, are small in size, but their streamlined shape allows them to put up a great fight for their stature. They will zigzag to and fro in the water until your child can land them. They have sharp spines on their back fins that need to be avoided. It is important for your child to learn how to properly handle a fish once it has been caught, so as to be able to release it unharmed. Show your child how to hold the fish and remove the hook, teaching them not to be afraid of do-ing this. Until your child is old enough to handle this alone, you will be doing the removing, as well as putting on the worm and casting out.

Bullhead will bite one right after another on a good day, and they can keep you running from child to child as they land them or lose them. Let your child either catch the fish or be re-sponsible for it getting away, as this will help them learn what they did right or wrong. They will get a feel for when the fish are biting, when to set the hook, and how fast to reel in. Eventually, they will be able to hold the pole and

know when the fish are biting, without having to lean it against the stick. If you are going to be fishing with your kids at a river, add more split shots so you can cast out further. Rivers are more unpredictable in that there are many more species of fish that can be caught; trout, bass, white and yellow perch, suckers, pumpkinseed, and carp are commonly caught on night crawlers here in the Northeast. The potential is there for your kid to hook some decent sized fish; avoid the temptation to jump in and land the big one.

Fishing with your kids at a river can be made even more fun by assigning each species of fish a point value. The more desirable the fish, such as a bass or trout, the higher number it is assigned. Have your kids keep track of how many points they have accumu-lated, with some sort of reward or prize going to the winner. Teach them to be sure to leave the pond shore or river-bank the way they found it, litter and garbage free. If the fish are not biting, a pair of binoculars can come in handy as there is bound to be something of interest around the water, whether its a kingfisher, a mallard, or a muskrat.

Fishing with your kids can be great fun, enhanced by their learning to appreciate the outdoors and actually catching fish. Put yourself and your children in a situation where they have the best chance to succeed, and you and they will look forward to spending this time together long after they have grown up!

  • If you were to visit the park on Saturday, July 21st, you would know it was not a typical day. You might even wonder whether these families were even California residents. The pioneer bonnets, aprons, cowboy hats and handkerchiefs looked out of place, especially in the July heat.

The heat at Altisima Park in Rancho Santa Margarita didnt seem to keep 500 people from attending the free Pioneer Celebration sponsored by the Santa Margarita Stake from The Church of Jesus Christ of Latter-day Saints. The celebration schedule included pioneer type games, a simple dinner, a mini-trek with covered wagons, and even two messy pie eating contests.

If you were to follow the cheering you might see the three-legged race, the water balloon toss or jump the line in action. Pat Brokaw, Santa Margarita Stake Young Men General President, explained, It was hot but that didnt seem to faze the children at all. By the time we had the 500 water balloons ready the adults were so ready to join the games. I think when the water balloons broke it was a welcome relief from the heat.

After dinner and games, the mini-trek began. Margie Dayley, Santa Margarita Trek Chairman, was asked to plan and orchestrate the trek. Dayley explained, I wanted every child in the trek to have a bonnet or handkerchief, so I found ten teenagers and a handful of willing adults to help me sew 130 bonnets at the begin-ning of July. Every child walking did wear a bonnet or handkerchief while pulling homemade red covered wagons to walk the short distance to the playground.

The handcart trek was re-enacted to remind the children of the sacrifices that led up to the pioneers entering the Salt Lake Utah Valley on July 24, 1947. In 1947, after years of persecution, the Mormon pioneers would finally have a place of their own where they could live and practice their religion in peace. To this day, Pioneer Day is a Utah state holiday.

Pioneer Day Celebration is to commemorate the Mormon pioneers passage into Salt Lake Valley in 1847. Fleeing persecution, Mormons saw Utah as a haven where they could rear families and practice their religion. July 24th, Pioneer Day, is an official Utah state holiday. The first Pioneer Day celebration was held in 1857.

This years celebration was held on July 21st, 4-6pm in Altisima Park, Rancho Santa Margarita, California.

Construction crews will close the southbound connectors of the San Gabriel River Freeway (I-605) and San Diego Freeway (I-405) beginning at 10 p.m. next Monday, July 30 as part of the West County Connectors project.

The two-week closure is re-quired for crews to reconstruct the connector to accommodate the new I-405 / I-605 HOV con-nector and additional lanes on the I-405.

Work includes install ing new pavement, realigning the lanes and laying the groundwork for new overhead signage and lights.

Construction crews are plac-ing detour signs to help drivers during the closure. The project team recommends drivers take the following routes:

From the southbound I-605, exit Spring Street. Continue on Spring Street to Woodruff Avenue and proceed to the southbound I-405 on-ramp

From the southbound I-605, exit Spring Street. Continue on Spr ing S t ree t to S tudebaker Road and proceed so the east-bound SR-22 on - ramp. Take the eastbound SR-22 connector

Originally scheduled for late 2012, the project team moved up the work on its construction timeline to begin this construc-tion activity prior to the start of the Seal Beach Boulevard bridge reconstruction.

Also, beginning Wednesday, Ju ly 25, crews wi l l c lose the

southbound I-405 freeway from Valley View Street to Seal Beach Boulevard for two to three weeks. The closure will take place from 11 p.m. to 5 a.m. Sunday through Thursday nights.

The $277-million West County Connectors project will improve traffic flow by directly connecting carpool lanes on I-405, I-605 and SR-22. In addition, a second car-

pool lane will be constructed on I-405 between SR-22 and I-605.

12-year-old artist and Lade-ra Ranch resident, Madison Bolokowicz, will be the special guest at the Ladera Ranch Li-brarys storytime on Wednes-day, August 1 at 10:30 a.m. Madisons artwork was se-lected from a worldwide Kids Art Contest as one of thirteen illustrations featured in a new childrens book, Guess What is on Grandpas Farm? by southern California author, Nancy ONeill. Written in clev-er rhyming clues, each book in the series provides a fun guessing game and learning experience for young children. The second book, Guess What is at the North Pole? is scheduled for release in October. The Kids Art Contest for that book is open for submissions now and is a great opportunity for kids ages 5-17 who are aspiring artists or who just love to be creative.

I simply LOVE art! Madison has been taking art classes since she was in preschool. She has been working on an art portfolio with her current art teacher and aspires to go to an art high school! One day she

hopes to have a career utilizing her talent and love of the arts.

She also enjoys playing tennis, playing the violin, volunteering for many organizations and recently started doing karate.

This is a fun community event which is not only inspiring for kids of all ages but also highlights a very talented, young, local artist. We hope that the paper is able to send someone to cover the event and/or schedule an interview with the artist and author.

  • On August 4th, over 60 golfers will tee off at the 10th Annual Swing for a Cure Golf Tournament. This year the tournament will be held at the scenic Tijeras Creek Golf Club in Rancho San Margarita. But this story will tell you, this is more than a summer golf tournament; it is an opportunity for giving back.

Swing for a Cure is run under the direction of founder and chair James Johnson, Jr. He started the tourna-ment 10 years ago as purely a social event, getting friends together for a day of golf and a great time. Then following his personal experience with cancer, Johnson decided to turn the focus of the tournament into fundrais-ing event with all proceeds benefit-ting The Leukemia and Lymphoma Society (LLS).

As a 3-time cancer survivor, I fully appreciate the importance of rais-ing awareness and the tremendous need for funding cancer research, education and assistance for all blood cancer patients, explained Johnson. In 2002, Johnsons battle began when he was first diagnosed with Stage-2 non-Hodgkins Lymphoma, known as Mycosis Fungoides. Then in 2004, one week after the birth of his first child, he was diagnosed with Stage-3 Hodgkins Lymphoma and

shockingly, later that same year with Pancreatic Cancer. Following the successful treatment of all 3 cancers, unfortunately the Hodgkins Lymphoma had returned. After a successful stem cell transplant in 2006, James is among the thousands of can-cer survivors living a healthy life today.

Today, Swing for a Cure has evolved into a highly-anticipated charity event. The day includes 18 holes of challenging golf, followed by a fun-filled evening including a cocktail reception, dinner, raffle, silent auction and awards ceremony.

Two years ago, Johnson established the Healing Through Sports Foundation (HTSF) as a non-profit organi-zation with a mission to bring people together to engage in a variety of activities while supporting cancer research, patient services and prevention programs.

HTSF has chosen to partner with the Leukemia Lymphoma Society (LLS) as the benefactor of all its events. LLS is a national voluntary health agency dedicated to curing

Leukemia, Lymphoma, Hodgkins disease and Myeloma and improv-ing the quality of life of patients and their families. In fact, over 75% of all funds raised go directly into research, education and patient services; one of the best ratios of all charitable organizations!

Please visit the website at www.healingthroughsports.org to learn more about the Healing Through Sports Foundation or register in ad-vance for the golf outing. Even if you cannot participate in the golf tourna-ment, your donations would be very much appreciated.

From church choir to touring head-liner, saxophonist Jackiem Joyner has been delighting listeners with smooth notes and cool beats since he was a boy. On the heels of his third and self-titled album release, Joyner will be the third jazz star to appear at the Festival of Arts 2012 Jazz on the Green series when he takes center stage at 1pm on July 28th.

At the release of his first album in Babysoul 2007, Joyner was named Debut Artist of the Year by Smooth Jazz News. Two singles (Im Waiting For You and Take Me There) from Joyners sophomore album Lil Man Soul went to the top of the charts. His single Im Waiting For You was the longest-running #1 single in 2009, topping the smooth jazz radio charts for an incredible 12 weeks.

Jackiem noted, Im learning that the most important element of build-ing and sustaining a career in this business is developing that unique sound over time and being consis-tent. A big key is having songs that can stay on the radio and reach the people for a long period of time. I want to give them the best material and performances I can! I love work-

ing with the best artists in the genre, but theres nothing more liberating and fun than taking center stage myself and looking out there and knowing the audience is connecting with my own music.

Were thrilled to welcome Jack-iem Joyner back to the Festival of Arts back, said Susan Davis, Direc-tor of Special Events for the Festival of Arts. Hes an incredible talent that continues to rise, and were confi-dent that his fresh face and rhythms will become iconic at the Festival of Arts Jazz on the Green series!

Jackiem Joyner will perform July 28th from 1pm-3pm on stage at the Festival green. There is no extra cost beyond admission to the Fes-tival of Arts for guests to enjoy his performance.

The Festival of Arts and Pageant of the Masters are sponsored in part by Acura, Cox Communications, Fidelity Investments, KOST Radio 103.5, the Ritz-Carlton Laguna Niguel, and The Orange County Register. The Festival of Arts is a non-profit organization that produces The Festival of Arts Californias Premier Fine Art Show and the Pageant of the Masters. For gen-

eral information, call (949) 494-1145 or visit the website at www.LagunaFesti-valofArts.org. The event is located at 650 Laguna Can-yon Road, Laguna Beach, California. Proceeds support the arts and art edu-cation in and about Laguna Beach.

The Fest ival of Arts is open daily from July 1 August 31, 2012, from 10am to 11:30pm (August 25, 10am to 3:30pm). General Admission: Weekdays $7, Week-ends $10; Students & Seniors: Weekdays $4, Weekends $6; Free Admission for Children 12 and under, Military, and Laguna Beach Residents.

  • Wednesdays July 25, 2012 meeting of the Ran-cho Santa Margarita City council may have begun slowly but rapidly moved to a major project called Chiquita Ridge. The 92 acre site is situated in a prime development area near the intersections of Antonio parkway and Oso.

After a brief and polite discussion, the council quickly moved to approve a professional services agreement with Developers Research Inc., a project anagement consulting services company to prepare a comprehensive market and development feasi-bility report for the massive land project. The City Council quickly and unanimously authorized the mayor to execute the agreement .

Both the mayor and the city council left no doubt that this is an extremely important piece of land for possible development. If it is developed, this huge amount of property would be ideal for at least one substantial project never before seen in Rancho Santa Margarita .While none of these projects were specifically discussed at the council meeting, Chiquita Ridge easily has room for one or more of these possible developments:MAJOR NFL STYLE FOOTBALL OR SPORTS STADIUM COMPLEX

If the National Football League is reluctant to move a new franchise to either Los Angeles or San Diego, Rancho Santa Margarita now has plenty of room to drop one right here .it definitely has the

size to sustain the largest sports complex in South Orange County. Easy freeway access is another drawing card for any of these possibilities. The 241 Toll road and he 5 Freeway are extremely close at hand. Whats that old saying Realtors have about location?MOTHER OF ALL COURTHOUSE FACILITIES

The County of Orange has long been seeking a venue large enough to accommodate one additional giant courthouse complex equally as large as or larger than the one in Santa Ana. Because the Chiq-uita Ridge area is surrounded by open space, there would be no objections from the neighbors since there are none .There are reportedly boatloads of federal, state, and county money available to fund this kind of project .The income to the city of Rancho Santa Margarita would be assured for many years.PROMINENT POWER STATION PROJECT

Other cities have long envied the city of Los An-geles which has its own power station to provide lower-cost power to its residents. Rancho might now be a contender for a bigger, cleaner canyon power plant now that San Onofre is considering a phase- out of nuclear power. Rancho Santa Margarita would likely have many contenders for a high income lease by the high energy providers like SDG& E and Southern California Edison for starters.

The Rancho Santa Margarita City council gave the consulting service company a tall order to de-termine which, If any development projects might be worthwhile investments for the city. Just twelve years ago cattle grazed lazily along this ridge and the city is not in a desperate rush to chop down he chaparral. But the possibilities are positively amazing.

Fashion show promotes heart health with

guard a heartThe Clubhouse at The Strand in Dana Point which sits overlooking the beautiful

Pacific Ocean was the perfect setting for Guard A Hearts 1st Annual Fashion Show, raising more than $25,000 for the non-profits support of Know Your Risk, Save a Life campaign. The evening was filled with beautiful fashions, delicious food and awards were given to those in the community who have embraced their cause.

With a crescent shaped moon hovering over drifting clouds, the mild weather made way for a tropical mood. The evening started off with guests arriving by limousines they were shuttled to the event from the beach parking area. Arriving to the clubhouse they were greeted by a red carpet affair complete with a step and repeat wall and throngs of paparazzi waiting to take their photos. Entering the 4 level architectural masterpiece, guests were surrounded with tropical foliage and colorful floral sprays.

Around 150 guests enjoyed the evenings festivities which included live music by Hope and Hawaiian Artist Brian Piikea Vasquez. Tasty drinks were donated by Tommy Bahama, Blue Ice Vodka, and Vegan Wine and mouthwatering appetizers donated by Kya, Vintage Steakhouse, Stillwater Grill, Gemmells and Socially Sweet.

The program started with USMC Color Guards Timothy Black, Angelo Sarni, Andrew Grothem and Cress Forester escorting Ms. America 2012 Nicole Rash who sang a lovely rendition of the National Anthem. The fashion show then started and featured the latest designs by Tommy Bahama Fashions, Marisa Kenson and Dr. Bahar Couture. Along with the group of models, Nicole Rash, Willie Gault and Vida Samadzai, actress and former Ms. Afghanistan strutted around the pool area in sophisticated panache modeling the fashion designs. The fashion show was under the direction by highly regarded fashion show producer Julie French.

Several VIPs were awarded the Guardian of Hearts award for their philanthropic efforts on heart disease awareness and prevention. Dr. Bahar Sederati, lead internist with Bahar Medical Group; Dr. Douglas Harrington, CEO of Aviir Diagnostics; Susan Jeske, CEO of the Ms. America Pageant; Willie Gault, Founder of Athletes for Life, former America football wide receiver and Olympic athlete; and Lora Thomas, of Kyani were included in those honored. Members of the Guard A Heart Board of Directors including Hayward Sawyer, Jerry Nostadt, Tom Scuccimarra and Najib Khoury were in attendance and presented the evenings awards.

Other guests who attended included: Annie Nelson, founder of OC American Sol-diers Network; Michele Berk, producer of Baywatch, creator, Soul Surfer, K-11; Debbie Durkin, Los Angeles Sustainable Producer; Janeane Bernstein Event MC and Radio Talk Show Host; and Damian Collins, entrepreneur.

One hundred percent of proceeds from the event will go towards Guard a Hearts Know Your Risk, Save a Life campaign, which uses donated funds to offer free cardiac testing for those who cannot otherwise afford it. Its mission to save lives is only made possible by countless volunteers within the community raising awareness of this highly preventable disease.

Guard A Heart is a non-profit foundation dedicated to raising awareness of heart disease prevention by spreading the word to guard your heart and save your life. Cardiovascular disease is the leading cause of death in the United States. If individuals know their risk and take the necessary steps, the good news is that most cardiovascular disease is preventable. Although heart disease is typically diagnosed in adulthood, its roots are often found in childhood. Compelling research has shown that plaque buildup in the arterial walls begins very early in life and progresses through increasing degrees of atherosclerosis. Intervention strategies and healthy lifestyle changes to reduce heart disease risk should begin in childhood when reversal of the process is easier, not later in life when the disease is more fully developed. Guard a Heart Foundation provides funding for individuals who are unable to pay for cardiac risk assessments. Please visit www.guardaheart.org for more information

Lisa Curcio, Surgical Oncologist of Mission Viejo has been chosen as honoree for the inaugural Illumination of Hope event to be held at The Strand at Headlands Private Beach Club on Saturday August 11. Dr. Curcio is south Orange Countys only female surgical oncologist who has devoted her lifes work to the education, prevention and treatment of breast cancer.

Once a person has cancer, they are motivated to make life changes said Curcio. It takes a village for cancer care, we need those of us work-ing in the trenches and organizations like American Cancer Society to continue to raise awareness, education, and the philanthropic support of our community to provide the means for these advancements, she added.

The funds raised at this years event will benefit the American Cancer Society Orange County Region. Tickets are $125 per person and can be purchased at gala.acsevents.org/illumination. For more information about the event, contact Michelle Rodriguez at [email protected] or call 949.567.0612.

The American Cancer Society combines an unyielding passion with nearly a century of experience to save lives and end suffering from cancer. As a global grassroots force of more than three million volunteers, we fight for every birthday threatened by every cancer in every community. We save lives by helping people stay well by preventing cancer or detecting it early; by helping people get well by being there for them during and after a cancer diagnosis; by finding cures through investment in groundbreak-ing discovery; and by fighting back by rallying lawmakers to pass laws to defeat cancer and by rallying communities worldwide to join the fight. As the nations largest non-governmental investor in cancer research, contributing about $3.4 billion, we turn what we know about cancer into what we do. As a result, more than 11 million people in America who have had cancer and countless more who have avoided it will be celebrating birthdays this year. To learn more about us or to get help, call us anytime, day or night, at 1-800-227-2345.

Local Dentist Michael TessierReveals Affordable Ways of

Paying for Dental CareI think we all grew up thinking that medical or dental in-surance was there for our benefi t, like they were taking care of us. However, insurance is a product to make

stockholders money. Although theres nothing wrong with people wanting to make money in the market, thats the main focus of that industry, not taking care of us (the insured). Even before the current attempt by the federal government to force us into govern-ment-run socialized medicine (run by the same people who operate Medicare, social security, and the post-offi ce), all of us had become aware of the truth about insurance, as covered benefi ts decreased and co-pays increased. So, it is a real pleasant surprise for me to be able to report that Delta Dental of Illinois has announced their Enhanced Benefi ts Program offering enhanced benefi ts for those with high-risk medical conditions. Systemic diseases like diabetes, preg-nancy, cardio-vascular conditions, renal disorders, cancer-related chemo- or radiation therapy, or suppressed immune systems have correlations with oral conditions. Delta/Illinois is now taking these conditions into account, and paying more liberally for dental care than they used to.Pat and Donna at my front desk have between them fi fty-plus years in the dental fi eld, and will be able to answer any questions you might have. Please dont hesitate to call them. When you call, please be sure to ask them about Care Credit, a credit card offering up to twelve months of interest-free credit on dental work. I like this because there are no premiums involved that have to be paid on a monthly basis, whether any dental work is required or not.Dr. Michael Tessier is located in Los Flores Plaza at 28562 Oso Parkway. By David WhiteIf you ask a sommelier to name her

favorite grape, theres a good chance shell say Riesling.

If youre surprised, then its prob-ably because you associate Riesling with the sweet, simple German wines of yesteryear, like Blue Nun, Liebfrau-milch, and Piesporter. These wines were -- and still are -- affordable and approachable. And theyll always have fans. But they do a disservice to true Riesling.

Fortunately, that could soon change. New York City sommelier and restaurateur Paul Grieco is on a mission to make sure that Americans give Riesling the respect it deserves.

Griecos crusade began in 2008, when he announced a plan to focus on Riesling all summer long at Terroir Wine Bar in New York Citys East Village.

In a single-minded attempt to get guests to at least try this noble grape, Grieco offered only Riesling as his by-the-glass white wine offering. As he tells it, the staff was incredulous and the guests suspect, but with 30 different glass pours... we set upon a massive inspirational and educa-tional scheme that was challenging and fun.

His campaign quickly took off.In 2010, 14 wine bars in New York

joined together to create a Riesling Pub Crawl; several well-known Ries-ling producers visited the city; and Grieco organized a concert where only Riesling was served. Last year, about 200 bars and restaurants across the country took part by host-ing events, offering specials, and agreeing to spread the gospel of Riesling.

This summer, the Summer of Ries-ling attracted nearly 500 participants. (To see if anyone is participating in your community, head to www.Sum-merOfRiesling.com.)

Misconceptions still abound, but consumers are starting to recognize that Riesling is a serious grape. Over the past several years, Riesling sales have steadily risen. And sommeliers are finding that consumers are ex-tremely receptive to the grape.

Rieslings greatest strength is its versatility.

    First, theres its geographical di-versity.

While its ancestral home is Ger-many, where Riesling has been grown in the Rhine and Mosel Valleys since the 14th century, its also the most planted grape in the Alsace region of France. The grape is also expe-riencing a resurgence in the United States, especially in New Yorks Finger Lakes. And there are sizeable

plantings of Riesling in Austria, New Zealand, and Australia.

    Theres also its sweet-ness.

Some Rieslings are syrupy and lusciously sweet -- and work as dessert. Others are bone dry, pairing best with raw fish, subtle cheeses, and other light dishes. Most fall somewhere in between, and are the perfect match for spicy Asian cuisine, like Thai and Indian. All are marked by high acidity, which is why its such an adaptable food wine. And all are extremely fragrant. Its no wonder why so many sommeliers love Riesling.

Dont ever let Rieslings sweetness trick you into thinking its not a seri-ous wine.

Sommeliers also evangelize about Riesling because its so good at capturing terroir, or a wines sense of place. In part, this is because most Riesling is fermented in stainless steel, so it isnt manipulated through oak aging or other winemaking techniques. The grape is remarkably transparent -- German researchers have found a link between soil type and flavor in Riesling. Riesling grapes sourced from slate vineyards tend to produce wines with citrus aromas,

while grapes sourced from limestone vineyards typically result in more tropical fruit aromas.

As Robert Parker, the worlds most famous wine critic, recently explained, If you want to talk about terroir, talk about German Rieslings or Alsace Rieslings, where the wines are naked -- theres no makeup.

Even though Riesling sales have been rising, Grieco and other Riesling proselytizers still have their work cut out -- Riesling accounts for just 5 percent U.S. wine sales. But its not by accident that Riesling has long been known as the noblest of the noble grapes. So dont be surprised if the next time you dine out, your waiter steers you towards a glass of Riesling.
