No one knows exactly where Bartender Billy came from, some say he was the personal bartender to Dan Aykroyd and
another theory was that he holds the record for the tallest cocktail stick recreation of the Wallace monument.
Either way, he is here and the rest is history.
Bartender Billy likes most things and even if he personally doesn’t like something, he will always give each drink the same care as the next. He is known in some circles as the
Patron of Smiles, a nickname he is not shy of. Some of his stories are so far fetched yet so detailed we can never be quite sure what is reality and what is not. At the end of the day we
salute Bartender Billy for his efforts, ideas and drink craft.

9THE SCISSOR
Like glassware is to a drink, the scissors are to a barber.The scissor can date back to Mesopotamia (4000 years ago),
which now is an area that primarily covers Iraq. It wasn’t until 1760 when William Whiteley & Sons in Sheffield started to manufacture exquisite scissors that they soon became a
desirable sign of class.
Quite soon after they started to produce fine and beautiful scissors a rivalry rose between them and Thomas Wilkinson & Sons. By 1875 the two companies merged together and kept the Whiteley name. The company is now in its 11th
generation and still produces scissors to this very day.
