DEAR WINE CLUB MEMBERS,Spring is officially here in Napa Valley, signaled as always by bud break in our vineyards. We’ve had the opposite of
a drought year in California, and the growing season has started with plenty of ground water in the soils and healthy
new growth on the vines. It’s a fantastic way to begin the vintage.
The 2017 Carneros Chardonnay in your shipment is evolving beautifully. With a little bottle age we find that the rich,
creamy palate is accentuated even further, and though the fruit is still in the forefront, other characteristics of vanilla,
crème brûlée and baking spices have become more noticeable. It’s fascinating to watch how this Chardonnay
changes over time, a reminder that wine truly is a ‘living’ beverage. The 2017 Proprietor Selection Chardonnay is only
the tenth vintage of this wine in 38 years, as it’s one we only produce in exceptional vintages. When we do make it,
the wine is selected from our finest barrels of Chardonnay, so it actually represents the “best of the best.” Again, this
wine has a little more age on it now, and we think it is drinking exceptionally well.
We hope you’ve heard about our new tasting room in Amador County, and more importantly, we hope you’ll visit
us soon! We’re excited to have an additional foothold in this beautiful wine growing region, known in particular for

2017 CARNEROS CHARDONNAYEnticing aromas of vanilla, peach and mango are layered with apricots, crème brûlée, butter and a slight minerality. Those scents are echoed as flavors on the creamy, rich palate, along with peach, pie crust and baking spices. The long, smooth finish is marked by mouthwatering acidity.

Pale straw yellow, with a golden hue, this wine’s color will deepen with age. Aromas of banana, Bartlett pears, Meyer lemon and vanilla mingle with jasmine on the nose. The palate is lush with a creamy texture and flavors of pears, key lime, white peach, vanilla and toast. The finish is long and bright.

A PERFECT PAIRINGCARNEROS CHARDONNAY PAIRING
Barley Risotto with Mushrooms6–8 first-course or 4 main-course servings
This is not a real risotto because it is not made with rice, but it is prepared the same way.
Heat in a large deep skillet over medium heat until the foam subsides:
¼ cup (1/2 stick) butter
Add and cook, stirring, until tender but not brown, about 7 minutes:
1 1/3 cups finely chopped onion
Stir in and cook until softened:
8 ounces shiitake mushrooms, stems removed, caps diced
Add and stir until glazed with butter:
1 cup pearl barley
Add and cook, stirring, until the liquid is absorbed, about 3 minutes:
2/3 cup dry white wine
1 tablespoon mashed or finely minced garlic
½ teaspoon salt
½ teaspoon black pepper
Meanwhile, bring to a boil, then reduce the heat to a gentle simmer:
8 cups chicken broth

Stir 2 cups if the broth into the barley. Cook at a moderate to brisk simmer, stirring occasionally, until the broth is almost absorbed, 8 to 9 minutes. Add the remaining stock, ½ cup at a time, allowing each addition to be absorbed before adding the next and stirring often; it will take 4-5 minutes of each addition to be absorbed and a total of 45-55 minutes for the barley to become tender. If you run out of stock before the barley is done, finish cooking with hot water. Stir in, if serving as a main course:
½ to 1 cup grated Parmesan cheese
Garnish with:
2-3 tablespoons chopped parsley or 1 to 2 teaspoons chopped thyme
This can be made up to 4 days ahead. Let cool completely, then cover and refrigerate. Reheat in a skillet over low heat, adding a little water and stirring frequently.
