2010 “Chef of the Year” at the Great Wolf Lodge
2011 “Taste of Grapevine - Chili Cook Off” Winner
Chef Rodney Dabon started his career in 1988. A New
Orleans native, he worked at some of the top hotels and restaurants
including the Sheraton Hotel New Orleans, La Papillon New Orleans
(2 years), Bourbon Orleans (2 years), Hotel Intercontinental New
Orleans (4 years), and Hilton Riverside New Orleans (18 years). Chef
eventually moved to Dallas and started at the Great Wolf Lodge where
he worked his way up in 5 years to become the Executive Chef.
Chef Dabon is now our Executive Chef at the Historic Hilton
and Ashton Hotel Fort Worth. He sees himself as a mentor, always
trying to find ways of motivating the people around him to push
themselves harder to achieve self-satisfaction in knowing they did their
best today and every day that they are at work. He loves to share his
culinary talents with each of his team members in the hope that they
will someday become the Executive Chef of their dreams.
In his spare time, Chef enjoys the outdoors, fishing, hiking and
boating. He is a super New Orleans Saints Fan! Watching football
with family and friends gives him a chance to share his culinary skill
with his loved ones. He also tries to spend as much time as possible at
Church volunteering but there is always more that he want to do.
“I often sit around with my culinary team and brain storm on
new menus that will be a fresh look for our guest. I have a special love
for Cajun food being that I was born and raised In New Orleans better
known as the Big Easy.” Come visit Chef at our hotel and taste his
culinary creations for yourself.
