1 28-ounce can black beans rinsed and drained, divided
4 tablespoons cilantro chopped, divided
½ medium onion, diced
½ red pepper, diced
1 teaspoon garlic, minced
½ cup unseasoned bread crumbs
¼ teaspoon cayenne pepper
½ teaspoon salt to taste
2 eggs, beaten
2 ripe mangos, peeled, pitted and small diced
¼ cup red onion, small diced
2 tablespoons red pepper, small diced
1 teaspoon jalapeño pepper, minced
3 tablespoons orange juice
salt and pepper, to taste
butter, as needed
12 slices pepper jack cheese
2 avocados, pitted, sliced
½ teaspoon lemon juice
6 Maplehurst® Crunchy Toaster Buns, thawed
Place half of the black beans into a food processor. Process into paste.In a bowl combine the black bean paste and remaining black beans, 2 tablespoons cilantro, onion, red pepper, garlic, plain bread crumbs, cayenne, and salt. Mix well.
Whisk the eggs in a separate bowl. Add the eggs to the black bean mixture and mix well. Divide the mixture to form 6 portions and then flattenintopatties.Theyshouldbeabout½inchthick.Placetheburgerson a cookie sheet, cover and refrigerate for at least one hour. In a small bowl combine the small-diced mango pieces, red onion, red pepper, minced jalapeño peppers and orange juice. Mix well, season with salt and pepper, and set aside.
Coat a nonstick sauté pan or grill with butter on medium heat. At service time, place the burger in the pan or grill. Cook 5 minutes on each side. Top with 2 slices of pepper jack cheese until melted.Spread the buns with butter and toast in the pan or grill until golden brown. Place the cheeseburger inside the bun, then top with 2 tablespoons mango salsa, the ½ teaspoon of remaining chopped cilantro, the top bun and serve immediately.
