Process into paste. In a bowl combine the black bean paste and remaining black beans, 2 tablespoons cilantro, onion, red pepper, garlic, plain bread crumbs, cayenne, and salt. Mix well. Whisk the eggs in a separate bowl. Add the eggs to the black bean mixture and mix well. Divide the mixture to form 6 portions and then flatten into patties. They should be about ½ inch thick. Place the burgers on a cookie sheet, cover and refrigerate for at least one hour. In a small bowl combine the small-diced mango pieces, red onion, red pepper, minced jalapeño peppers and orange juice. Mix well, season with salt and pepper, and set aside. Coat a nonstick sauté pan or grill with butter on medium heat. At service time, place the burger in the pan or grill. Cook 5 minutes on each side. Top with 2 slices of pepper jack cheese until melted. Spread the buns with butter and toast in the pan or grill until golden brown. Place the cheeseburger inside the bun, then top with 2 tablespoons mango salsa, the ½ teaspoon of remaining chopped cilantro, the top bun and serve immediately.
