Chivas Master Competition

§  When was the last time you created a classic? The Chivas Masters Competition challenges you to create four original cocktails from four eras:

§  The Classic Age (1880-1920) §  The Post-War Boom (1945-1960) §  The Disco Years (1975-1990) §  The Age of Revivalism (Present)

§  THE DISCO YEARS (1975 - 1990) 3

The Classic Age (1880 – 1920) The era that saw the birth of Chivas Regal is now considered the Classic Age of cocktails. The first Martini, Manhattan, and Daiquiri were recorded along with many others.

Leading the way was celebrity bartender Harry “The Dean” Johnson, author of the world’s first bar operations manual, and one of the first to publish a recipe for a Martini.

In the 1888 edition of Harry Johnson’s bartender manual he included the following Scotch whisky cocktail:

§  60 ml Chivas 12 §  1 egg white §  2 tsp superfine bar sugar §  2 dashes fresh lemon juice §  2 dashes fresh lime juice §  3 dashes Absinthe §  Shake all ingredients over ice §  Strain into a coupe glass §  Fill to the brim with sparkling water or soda

The Post-War Boom (1945 – 1960)

The Post-War Boom brought back some of the luxuries in life, including the arrival of Chivas 12, the perfect luxury for a new era of optimism.

“Trader Vic” (Bergeron) was the world’s most famous bartender, introducing the Tiki movement with a range of iconic cocktails such as the Mai Tai.

While “Trader Vic” built his reputation on rum, he was equally creative with Scotch whisky, introducing the “Starboard Light” in his 1946 ‘Book Of Food And Drink’.

§  60 ml Chivas 12 §  30 ml fresh lemon juice §  2 tsp honey §  15 ml passion fruit nectar §  1 egg white §  1 scoop ice §  Mix all ingredients in a blender §  Serve into a Tiki Mug or Marine Tumbler §  Decorate with fresh mint and a fruit stick

The Disco Years (1975 – 1990)

Sometimes referred to as ‘The Dark Age’ of cocktails, this was the era when cocktails became popular with the masses, but lost sight of some of the craftsmanship of the previous 100 years.

Cocktails mirrored the fashion of the age, and the bright colors were often laced with sugar, masking the noble character of the spirits.

While cocktail craftsmanship took a back seat, Chivas stood tall with iconic advertising and timeless quality. The classic whisky cocktail of the age was the Rob Roy (also known as a ‘Scotch Manhattan’). Recorded in ‘The Savoy Cocktail Book’ in 1930 by Harry Craddock, the Rob Roy is thought to date back to 1894, when Reginald De Koven premiered his operetta Rob Roy on Broadway.

The Age of Revivalism - Present Today we are entering a new era of craftsmanship – the ‘Age of Revivalism’.

A wave of creativity is sweeping through cocktail culture as the past inspires the future. Bartenders are reaching back through cocktail heritage and recreating the classic cocktails.

The Chivas Masters will place Chivas at the heart of the revivalism in cocktails - as relevant as it ever has been – an icon of Timeless Luxury.

The Yuzu Sour was created in 2013 by Agostino (Ago) Perrone, currently Head Bartender at the Connaught Hotel. With its fusion of timeless and modern, this is a classic Scotch whisky cocktail in the making.

YUZU SOUR

§  50 ml Chivas 12 §  20ml yuzu mix §  (2/3 lemon juice; 1/3 yuzu juice) §  15ml sugar syrup §  A tiny amount of macha tea powder §  10ml egg white §  Shake and serve on the rocks with a spray of angostura bitter on top

Chivas Master Cocktail Recipe Rules Entry

§  One entry per person. §  Four entries per person, 1 per era are mandatory §  Entries must be in the form of a long or short drink, not a shot and be a minimum of 120ml (4oz) liquid volume. §  Entries should be submitted through the form provided below

Ingredients §  Drinks must not contain more than seven ingredients, including fruit juices, syrups, drops or dashes. Solid garnishes

are not considered ingredients. It is acceptable to additionally spray a citrus fruit zest over the drink if specified as a garnish. With a few exceptions it is the simple drinks that have gone on to become ‘classics’, and due to this the judges will be instructed to favour simple drinks with fewer ingredients.

§  Hot ingredients, premixes of any kind or home preparations are forbidden without advance written authority of the competition organisers. Competitors wishing to use these should submit their request at least 10 days before the day of competition but are advised to seek permission as soon as possible.

§  Recipes which can be easily replicated are preferred so unless judges give advanced written authority (rule 5 above) ingredients must be readily/widely available proprietary products, fruit and commonly found bar products.

§  Recipes must contain a minimum of 30ml (1oz) of the Chivas Regal where applicable and the total combined alcoholic ingredients must be equivalent to no more than 100ml (3.5oz) at 40%abv.

§  Ingredients may be measured using a jigger or similar measure or freely poured. §  Recipes entered must be the original creation of the competitor and if a competitor is thought to have plagiarised a

known, existing cocktail they will be disqualified. §  Recipes entered must be expressed in ‘shots’, ounces (US) or millimetres with the

use of ‘dashes’ and/or ‘drops’ limited to bitters, hot pepper sauce and the like. Fruit juice quantities must also be stipulated, e.g. “squeeze of lime” is unacceptable.

Chivas Master Cocktail Recipe Rules Garnishes

§  Garnishes must be edible but may be mounted on sticks, skewers, straws, forks or other such common bar accessories. Use of edible fruits, herbs, leaves and spices may include sprigs, peels, barks, fruit shells etc.

§  Any flowers and petals used must be of an edible variety. §  Fruit for garnishes may be peeled in advance, sliced, wedged or pre-cut in any other way. Garnishes must be assembled within the

§  By entering this competition, competitors agree to assign copyright of their recipe and drink name to the competition organisers. §  Competitors and drinks presented during the competition may be photographed (still or motion picture) by the organisers and

copyright of these images for any use, including advertising, will be retained by the competition organisers. Drink Names

§  Drink names including rude, lurid, sexual words, or words associated with narcotics or motor vehicles are prohibited. Adjudication

§  The competition organisers reserve the right to have the final decision on any matter relating to the judging of the competition. §  The competition organisers will appoint the panel of judges and reserve the right to replace or appoint new judges before or during

the competition. §  The judges must remain impartial and declare any vested interest they may have in the competition or competitors. They must judge

each competitor on their competition presentation and drink alone. Liability

§  While every reasonable effort will be made, the competition organisers cannot guarantee the safe return of glassware, equipment or any product supplied by a competitor. Therefore competitors are advised to house their tools and product in bags/boxes which enable them to efficiently gather and hold their equipment and ingredients immediately after competing.

Responsibility §  Competitors considered by the organiser to be practicing or promoting any form of irresponsible drinking,

including ‘shots’ will be disqualified and may be asked to leave the venue. §  Competitors must conduct themselves in a safe manner and any action considered by the organisers to

endanger fellow competitors, judges or spectators will result in instant disqualification and possible ejection from the venue.

Tales of the Cocktail 2015

§  Directly from the New York Global Final, Chivas will fly the global finalists to ‘Tales of the Cocktail’ in New Orleans.
