GINGER SHORTBREADCOOKIES
Prep Time: 30 minutesChill Time: 2 hoursBake Time: 11 minutesYield: 3 dozen cookies
3 cups flour1 cup light brown sugar1/4 cup Argo Corn Starch
or Kingsford's Corn Starch1-1/2 Tbsp dried orange peel1 Tbsp ground ginger1 Tbsp pumpkin pie spice1 tsp. baking soda1/2 tsp. salt2 Tbsp. molasses1 Tbsp. water1 egg1 cup cold butter,
cut into 1-inch piecesIcings, sugars and sprinkles
MIX flour, sugar, cornstarch, or-ange peel, ginger, pumpkin piespice, baking soda and salt in a largemixing bowl. Whisk molasses, wa-ter and egg in small bowl; set aside.
POUR molasses mixture over flour;beat with mixer until dough formsa ball. Knead for 2 to 3 minutes
until smooth. Divide in half, wrapin plastic wrap. Chill a minimumof 2 hours.
CUT butter into flour mixture us-ing a pastry blender or 2 knivesuntil the mixture resembles coarsemeal.
ROLL dough on lightly floured sur-face to 1/4 inch thickness. Cut withcookie cutters. Place on bakingsheets.
BAKE for 11 to 13 minutes in apreheated 350º F oven. Cool onwire racks.
DECORATE as desired with ic-ings, sugars and sprinkles.

These Holiday Sugar Plums are made with ruby-red Maraschino cherries
(NAPSI)-The more the cherrier when it comes to holiday treats. And holiday sugarplums are no exception. These traditional treats are made with festive and fun Mara-schino cherries.
Whether you are hosting a party or giving gifts to neighbors, these sugar plums arefull of holiday cheer. And because they are so simple, the kids will have a ball helpingyou make them.
HOLIDAY SUGAR PLUMS
1 cup butter or margarine1/2 cup confectioners' sugar1-1/2 tsp vanilla2-1/4 cups all-purpose flour1/4 cup quick rolled oats (optional)1/4 tsp. salt1/2 cup finely chopped pecans48 Maraschino cherries
(about one 16-oz. jar)Confectioners' sugar for finishing
Drain Maraschino cherries thoroughly on papertowels and set aside. Put butter and 1/2 cup con-fectioners' sugar in a large mixing bowl. Beat withan electric mixer on medium speed three to four minutes, or until well mixed. Stir invanilla. Add flour, oats and salt; mix well. Stir in pecans.
Shape about 2 teaspoons dough around each cherry. Place on an ungreased cookiesheet about one inch apart. Bake in a preheated 350°F. oven for 12 to 15 minutes, oruntil set but not brown. Role in confectioners' sugar while still warm. Cool.
For a fun presentation, use cherries with stems. Remove stems, bake as directed andthen insert stems in cookies while they are still warm but after rolling in sugar. Makes4 dozen.

CREAMY RICE PUDDING BRULEEWITH GINGERED BERRIES
Surprisingly SimpleAnd Oh So Satisfying!
3 cups mixed berries (such as strawberries and blueberries)
1 (2-ounce) jar crystallized ginger, coarsely chopped2 cups heavy cream or half and half3 cups cooked medium or long-grain white rice2/3 cup packed light brown sugar, divided1 tablespoon butter3/4 teaspoon almond extract
Preheat broiler. Combine berries and 3 tablespoonschopped ginger in medium bowl; set aside. Bringheavy cream, rice, and 1/3 cup brown sugar just to aboil in large saucepan over medium-high heat. Re-duce heat to medium; cook 10 minutes, stirring fre-quently, or until thickened. Remove from heat, stirin remaining ginger, butter and extract. Spray 8 ov-enproof custard cups (or one 10-inch shallow oven-safe baking dish or quiche dish) with vegetable cook-ing spray and place on baking sheet. Spoon equalamounts of rice mixture into each cup. Sprinkle evenly with remaining sugar; broil 2 to 3minutes or until sugar completely melts and begins to bubble. Remove from broiler; let stand2 minutes. Serve with berry mixture.Makes 8 servings.

(NAPSI)-For many home bakers, preparing for the holidays includes clearing outtheir cabinets and stocking up with a fresh batch of essential ingredients, such asbaking powder, baking soda, spices and flour.
Baking soda and baking powder are leavening agents-ingredients used to cause abatter or dough to expand. They do this by creating a chemical reaction that producesa gas that causes cakes and other baked goods to rise.
However, they are not the same and cannot be interchanged. Baking soda requiresan acid ingredient in your recipe to work; baking powder, on the other hand, is a"complete" leavening system designed to work independently. Some recipes contain-ing high amounts of acid, such as chocolate cake, may require both baking powderand baking soda. Both can lose their effectiveness after about six months. Given theinvestment many holiday bakers make in ingredients, such as nuts and dried fruits,the experts at Clabber Girl suggest it's usually wise to invest in a fresh container of thebaking powerhouses-baking powder or soda-to ensure your holiday treats turn out asintended.
Here's a recipe to try once you've restocked your cabinet.
Start Fresh With The Ingredients For SuccessCHOCOLATE LAYER CAKE2 cups all-purpose flour2 cups granulated sugar3/4 cup Dutch-process cocoa2 tablespoons Clabber Girl Cornstarch2 teaspoons Clabber Girl Baking Powder1 teaspoon salt1/2 teaspoon baking soda4 large eggs3/4 cup vegetable oil2 teaspoons vanilla extract1-1/4 cups water
Preheat oven to 350°F. Grease and flour two 8-inch round cake pans. Stir togetherthe dry ingredients. Add the eggs, oil and vanilla. Beat on medium speed for 2minutes, scraping the bottom of the bowl occasionally. Add the water and stir. Pourthe batter into prepared pans and bake for 30 to 35 minutes, or until a skewerinserted into the center comes out clean. Cool cakes in the pans for 15 minutes, thenturn out and cool completely on a rack.
Use a knife to level any rounded domes off the top of each layer. Place one layeron cake plate or serving platter. Spread cake with 1/4-inch layer of frosting and topwith the second layer. Frost the top layer and sides with remaining frosting.
FROSTING1/2 cup butter2/3 cup cocoa3 cups powdered sugar1/3 cup milk1 teaspoon vanilla extract
Melt butter; stir in cocoa. Add powdered sugar and milk, alternating. Beat onmedium speed until smooth. Stir in vanilla.
Yield: 1 cake (12 servings)
