Wintertime is finally over, and we’re all getting ready for another season here at CCC. I hope that all of you have had a safe and healthy winter. I know that everyone has received the emails concerning the covid19 virus and
the affect that it is having on opening the club this season. We will be offering a limited menu for takeout lunch and dinners beginning May 1st. The menus will be sent out via email on a weekly basis. Please try to call in your orders as early as possible. This will make it much easier for us to have your dinners ready for you when you arrive at the club. If there is anything you would like to order
that is not on the menus, just give me a call at the club a couple of days ahead of time. We will do our very best to accommodate your requests. We will also be offering some uncooked proteins (steaks, chicken breasts, fresh fish, lamb racks, etc.). Again, our selections will be sent via email. Our goal is to have the club fully opened on May 22nd for Memorial Day Weekend. We will still be offering takeout lunch and dinners for you to pick up at the club. I am very happy to have Reyes and Nicolay both returning this year as my Sous Chefs. They have both done a great job in the past, and I expect no less from them this season. I hope to see all of you back at the club very soon. As always, if there is anything that we can do to make your summer on the plateau a better one, please don’t hesitate to ask.
This is Tim Shepardson, your new General Manager. Let me start off by telling you how thrilled I am to be a part of the Cedar Creek family. It is such an honor for me to be your Club Manager. As you know from Chip’s past email, I have managed several clubs around the Southeast. Some have been rather large clubs with athletic, fitness and social components, others have been smaller clubs with only a social component, but none have had the charm and tradition that Cedar Creek has. Right from the beginning the Board and Staff have made me feel so welcome. I’m sure they are a good representation of the entire Membership and I
am so excited to meet each of you.
Hospitality has been in my blood since my first job making pizza at Pizza Hut in high school in Ft. Lauderdale, FL. That experience propelled me to Florida State University where I graduated from the Hospitality school. Right after college I joined Club Corporation of America where I began my career in Club Management. I helped open and run two City Athletic Clubs, one in Atlanta and one in Orlando, as well as city clubs in Mobile and Montgomery, Alabama. I also opened and ran a club in downtown Charleston, SC so I have an appreciation for the history and traditions that go into a well-established club like Cedar Creek. I was honored to be named Club Corp.’s Club Manager of the Year while in Charleston as well. To round out my hospitality experience, I owned and operated two award winning seafood restaurants in Orlando for the last 10 years. From my first days here, it has become apparent that Cedar Creek is a special Club. I feel so fortunate to work alongside such a great staff. They are all hard working and experienced people with a genuine love for the club and all of you. They have worked tirelessly over the winter to make some great enhancements to the club and I can’t wait for you to experience them. I feel confident that together we will all navigate these tough times and get back to tennis, croquet, meeting with friends in the lounge, celebrating special days on the patio, and enjoying the awesome views from the clubhouse.
My wife Julie and I are both looking forward to life back in North Carolina and specifically the mountains. We spent 7 years in Raleigh while I was Regional Vice President for the clubs in the Southeast for Club Corporation of America. During this time, we regularly visited family and vacationed here in Cashiers. This area and all the memories that go along with it really hold a special place in our hearts. We are hopeful that we may eventually lure our three children to the mountains as well!
I really can’t address the Membership without addressing COVID-19. This virus is affecting people in all corners of the world and will be part of our lifestyle for a long time. It is an unprecedented pandemic that needs to be taken seriously and I assure you that I will. The Board, Staff, and I have outlined a plan that was delivered in Chip’s last email and again in this newsletter. The decisions that we make in the future will all be in accordance with our Governor’s Executive Order and will be in the best interest of your health and the health of our employees.
As we get closer to our May 1st opening date, there will be several changes due to the Governor’s Executive Orders. We cannot serve you in the club house, but Allison and Randall have an outstanding plan for takeout meals at lunch and dinner. Athletics will not be fully open, but Chris has a plan to help you get some fresh air and exercise. Hopefully, things will start getting back to normal by Memorial Day, but in the meantime, please come by for take out and say hello!
Have a safe trip back to the mountains!
A LETTER FROM OURGENERAL MANAGER
CHEF’S CORNER
THIS MONTH IN MEMBERSHIP
NEW MEMBERS
Tim Shepardson General Manager
What a strange time we are living in. I must say, we are all ready for things to get back to normal so we can have another exciting and successful season at Cedar Creek Club.2019 was a successful
year in Membership and since our October Newsletter, I am proud to say we have had 8 new families join, two of which are new this year! Please continue to welcome them and make them feel at home. We have such an outstanding Membership and I am certain that each and everyone of our new Members will fit in just perfect. With all the uncertainty, it is hard to say what the future holds with new Membership this year but from the words of Lyndon B. Johnson “Yesterday is not ours to recover, but tomorrow is ours to win or lose.” I encourage all of you to continue introducing me to your friends and prospects. I’ve said it before and I will say it again, Cedar Creek Club is undoubtedly the best club on the mountain and it’s mostly because of all of you.
Randall GoinsExecutive Chef
FOOD & BEVERAGEI hope everyone had a safe and relaxing winter! As everyone has already said, this will be the season of unexpected outcomes. This is a time to remember, and be so grateful, that as a private club we have the foundation of our membership as our backbone. We, as a leadership team, are standing tough for our membership, doing anything we can do to ease the uncertainty during this totally unprecedented, and unpredictable time. In addition to the takeout, and pantry services, I am also hoping everyone takes advantage of ordering wine.
Through the wine purveyors, I can find most of your favorite wines, and at a heavily discounted price. Just to name a few:
Pebble Lane Chardonnay, California $9/bottleKendall-Jackson Chardonnay, California $11/bottleThree Henry’s, Chardonnay, France $13/bottleNobilo, Sauvignon Blanc, New Zealand $12/bottleHayes Ranch Cabernet Sauvignon, California $10/bottleBonanza Cabernet Sauvignon, California $18/bottlePebble Lane Pinot Noir, California $9/bottlePenner-Ash Pinot Noir, Oregon $30/bottle
The virus will pass, and when it does, I can’t wait to greet everyone at the club with a hug, and a glass of wine! In the meantime, if there is anything I can do

THIS MONTH IN SPORTSHello to one and all! It is great to be back at Cedar Creek Club. This is going to be an exciting year with all the new pool fencing renovations and croquet lawn boards. The staff
and I want to thank all of the membership for allowing us the opportunity to serve the best members in the mountains. Please help us maintain “Social Distancing” with our limited athletic events this month. We have another exciting year of new activities and social events. Based on the COVID-19 and the Governor’s executive orders, the first potential Tennis, Croquet, and Pickleball events will be tentatively Memorial Day May 25th. As excited as we all are to get our club back into normal swing, we ask for our members patience and understanding as information and dates become available from the
Governor. Keeping that in mind, we here at the club will do our absolute best to keep you updated with that latest news and give you the dates and times we will be able to have our club events. We have a lot of Round Robins, Socials, Interclubs and play throughout this season, so remember to check your E-mail blasts. For the tentative future, the Pro Shop operation hours will be 8am – 5pm Monday through Saturday, Closed on Sunday. We will not be offering game arranging for Tennis at this time. Members will have to arrange their own matches, times, and courts in coordination with the Pro Shop. For the months of May and June, we at the Pro Shop will be requiring all athletic members to check in at the tables outside the Pro-Shop. We are doing this for the safety and wellbeing of all our members and staff. We will be asking for your name, date, time, sport, who you will
be playing with, and taking your temperature. Also, balls, accessories, and all Pro Shop services will be available. We hope to see you on the Tennis Courts and the Croquet Lawn!
