As a child, she and her father enjoyed making pierogies together, “but,” she explains, “we always struggled with the dough.” It wasn’t until studying Food Service Administration at Onondaga Community College that she finally understood their mistake: “You’re supposed to make a well, but me and my father, we were making more of a volcano to mix the dough!” A lifetime of experience has made Jennifer a pasta dough master. In fact, after 30 years in the restaurant industry, she and Michelle decided to open their own restaurant and focus their business model on fresh, homemade pastas. With a vision taking shape, this duo of sisters embarked on the long and complicated process of building a business. For help with her business plan, Jennifer reached out to the South Side Innovation Owners Michelle and Jennifer pose behind the counter at Pastificio, a fresh pasta factory, cafe, and catering company in Fayetteville. Their dining room is lined with local art and they’ve been busy catering lunch for offices and businesses in the area. Jennifer stresses, “We wouldn’t be here without that loan.” Pastificio, Italian for “pasta factory,” is located at 210 Brooklea Drive in Fayetteville. They are open for breakfast, lunch, and dinner and available for catering both small and large events. The kitchen team pays close attention to every detail, stuffing sausages, curing meat in-house, and making as many things from scratch as possible, including the desserts created by Michelle. Pastificio Brings Homemade Pasta to Fayetteville: A New Coop Fed Member Business

Para las hermanas Jennifer Polak y Michelle Rand, la búsqueda de una buena comida casera está en su sangre. “Mi familia le encanta la comida y le encanta cocinar,” explicó Jennifer.
