BAGUETTES

1 Dans la cuve, versez la levure et l’eau, puis lancez le programme PAIN/BRIOCHE

(2 minutes/vitesse 3). Au bout de 1 minute le programme s’arrête : ajoutez la

farine et le sel puis relancez le programme en appuyant sur Auto. Placez la boule

de pâte obtenue dans un saladier fariné puis recouvrez d’un torchon humide et

laissez reposer pendant 1 heure.

2 Farinez vos mains puis chassez l’air de la pâte en la frappant délicatement du poing.

Sortez-la du saladier et posez-la sur un plan de travail fariné avant de la diviser en

deux portions égales. Roulez chaque portion avec les doigts pour façonner* deux

baguettes de la même longueur puis laissez lever encore 1 heure sur la grille du

four recouverte de papier sulfurisé.

3 Préchauffez le four à 220 °C (th. 7). Farinez légèrement les baguettes avant de les

entailler avec la lame mouillée d’un couteau très aiguisé. Enfournez-les avec un peu

d’eau dans la lèchefrite pour 15 à 20 minutes. Pour vérifier la cuisson, retournez les

baguettes et tapotez le dessous, elles doivent sonner creux. Laissez-les refroidir sur

une grille.

Ne mettez pas la levure en contact direct avec le sel.
